Pray for us o holy Mother of God, that we may be made worthy of the promises of Christ. ***** RECIPES FROM RITA: OVERNIGHT COFFEE CAKE Ingredients Cake 6 tablespoons butter, softened ½ cup granulated sugar ¼ cup packed brown sugar 1 egg 1 cup all-purpose flour ½ teaspoon baking powder ¼ teaspoon baking soda ½ teaspoon cinnamon ½ cup buttermilk Streusel ¼ cup packed brown sugar ¼ cup finely chopped walnuts or favorite nuts (opt) 1/2 teaspoon cinnamon Instructions Cake Spray or butter an 8 inch square/round baking pan. Beat butter and both sugars until well mixed. Blend in egg. Separately, combine flour, baking powder, baking soda, and 1/2 teaspoon cinnamon. Stir the flour mixture into the creamed mixture alternately with buttermilk. Spread into baking pan. Streusel Mix brown sugar, walnuts, and cinnamon. Sprinkle over batter. Cover, and refrigerate overnight. Preheat oven to 350. Bake 35 to 45 minutes or until a toothpick inserted in the center comes out clean. Don’t overbake. Start checking at 35 minutes. TIP: HOMEMADE BUTTERMILKStir in 1-1/2 teaspoons clear vinegar or lemon juice into 1/2 cup milk. Let sit a few minutes and when it curdles slightly, it’s good to go. Ingredients and Instructions meatloavesMix together very gently:1-1/2 pounds ground chuck1/2 cup of toasted bread crumbs1/4 cup lemon juice1/4 to 1/3 cup onion, minced1 large egg, beaten2 teaspoons salt Ingredients and instructions Barbecue SauceWhisk together:2 cups catsup1 cup brown sugar, packed2 teaspoons dry mustard1/2 teaspoon allspice1/2 teaspoon ground cloves 6 thin slices lemon to put on top of loaves (optional but nice) Instructions for RoastingPreheat oven to 350.Shape meatloaf mixture into 6 loaves, like mini footballs. Place on sprayed baking sheet.Bake 15 minutes, then remove from oven.Lay lemon slices on top of each loaf if using, then cover each generously.You’ll use about half the sauce.Put back in oven and continue to bake until done – thermometer will register 155-160. Amen. ***** RECIPES FROM RITA: PANZANELLA From Ina Garten, adapted only slightly… Ingredients: For the bread3 tablespoons good olive oil1 small French bread or boule, cut into 1-inch cubes (6 cups)1 teaspoon salt For the salad 2 large, ripe tomatoes, cut into 1-inch cubes 1 cucumber, unpeeled, seeded if necessary and sliced 1/2-inch thick1 red bell pepper, seeded and cut into 1-inch cubes1 yellow bell pepper, seeded and cut into 1- inch cubes1/2 red onion, cut in 1/2 and thinly slicedLots of fresh basil leaves, coarsely chopped – a good handful of2-3 tablespoons capers, drained For the vinaigrette: Go to taste on the vinegar 1 clove finely minced garlic1/2 teaspoon Dijon mustard3 tablespoons Champagne, white wine or regular white vinegar1/2 cup good olive oilSalt and pepper to taste Instructions Heat the oil in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed. For the vinaigrette, whisk all the ingredients together. In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Make layers of Swiss cheese, shredded pork, thinly sliced ham, thinly sliced red onion and dill pickle slices. Eat it as is or make a panini type sandwich on a stovetop grill or skillet. Ingredients 2 tablespoons or so olive oil2 teaspoons salt2-1/4 teaspoons ground cumin2 teaspoons dried oregano1/4 teaspoon dried thyme1 teaspoon freshly ground black pepper1/4 teaspoon crushed red pepper flakes1 generous tablespoon garlic, minced (4 nice cloves)1/4 cup lime juice or to taste1/4 cup orange juice or to taste2-1/2 pounds or so fresh boneless pork shoulder – don’t trim away all the fat Instructions Stir together the oil, salt, cumin, oregano, thyme, black pepper, red pepper, garlic, lime and orange juice. Make slits in the pork and rub the spice mixture all over and into the slits as best you can. Place pork in sprayed slow cooker and add any remaining spice mixture. Cover and cook on low until tender, turning pork once halfway through if you can, about 4 hours or so. Apricots, flax, cinnamon and honey all make an appearance in this recipe, and all have ancient Biblical roots. Ingredients 3 cups old-fashioned rolled oats 1-1/2 cups nuts: we use a combo of raw almonds roughly chopped and pistachios, chopped ½ cup dried fruit (diced apricots are a favorite) 1 generous cup seeds – sunflower, pumpkin, flax – a combo or your favorite ½ cup unsweetened coconut (optional) 1½ teaspoons cinnamon Coating ½ cup almond or peanut butter ½ cup honey or maple syrup ½ cup olive oil OR coconut, grape seed, avocado oil 1-1/2 teaspoons vanilla Instructions Preheat oven to 300. Stir together oats, nuts, seeds, dried fruit, coconut if using and cinnamon. In a small saucepan over low heat, whisk together the nut butter, honey, oil and vanilla until it simmers. Pour nut butter mixture over dry ingredients and stir. Spread evenly onto parchment lined or sprayed baking sheets and bake for 30 minutes, rotating baking sheets halfway through, until golden brown.Remove from oven and let cool completely (the granola will harden as it cools) before breaking up. SMALL BATCH NUT FREE GRANOLA Ingredients 1-½ cups old fashioned oats 1 generous tablespoon olive oil Or your favorite oil 2 tablespoons maple syrup or bit more if you like 1 tablespoon vanilla 1/2 cup favorite dried fruit or mini chocolate chips – optional – add after cooling Instructions Preheat oven to 375. Mix everything together well. It may be a bit clumpy and that’s OK. Pour onto parchment lined or sprayed baking sheet. Bake for 12-15 minutes. Let cool completely, then stir it up a bit to mix well. Ingredients 15 Oreo cookies 6 tablespoons butter, salted (if using unsalted, add 1/4 teaspoon salt when melting butter) plus extra for greasing pan 15 oz mini marshmallows, divided, 7- 8 cups, divided into 5 and 2-1/2 to 3 cups 1-1/2 teaspoons vanilla 6 cups crisped rice cereal Instructions Grease a 9×13 pan lightly with butter. Place your Oreo cookies in a large ziplock and use a rolling pin to break into pieces (don’t pulverize them completely to crumbs. If desired, transfer to a fine mesh strainer to sift out any small crumbs (this will keep your rice krispie treats from turning gray). Melt butter in large pot over medium-low heat. DON’T BE TEMPTED TO DO HIGHER HEAT AS THIS WILL AFFECT HOW MARSHMALLOWS MELT. Stir in 5 cups of your mini marshmallows and cook, stirring frequently, until just melted. Stir in vanilla then add cereal and stir until combined. Add remaining marshmallows and broken Oreos and stir briefly until just-combined. Immediately pour into prepared baking pan and smooth with a spatula (do not firmly press the cereal into the pan or it will make the treats tough). Allow to cool completely before cutting and serving. Storing Store in an airtight container at room temperature (do not refrigerate otherwise they will turn hard) for up to 3 days. Youth and young adults are beacons of hope and signs of hope in our world, according to Pope Leo XIV in his video message to young people gathered at Rate Field, Chicago. Listen to Fr. The Vatican estimates over 1 million youth and young adults will make the pilgrimage to Rome to partake in special Jubilee events and Mass. Pope Leo XIV said of young people in his address at Rate Field:“To, once again, the young people who are gathered here, I'd like to say that you are the promise of hope for so many of us. The world looks to you as you look around yourselves and say: we need you, we want you to come together to share with us in this common mission, as Church and in society, of announcing a message of true hope and of promoting peace, promoting harmony, among all peoplesWe have to look beyond our own - if you will - egotistical ways. We have to look for ways of coming together and promoting a message of hope. Saint Augustine says to us that if we want the world to be a better place, we have to begin with ourselves, we have to begin with our own lives, our own hearts (cfr Speech 311; Comment on St John's Gospel, Homily 77).And so, in this sense, as you gather together as a faith community, as you celebrate in the Archdiocese of Chicago, as you offer your own experience of joy and of hope, you can find out, you can discover that you, too, are indeed beacons of hope. The Our Lady of Mt. Carmel procession through the streets of Hammonton, New Jersey, celebrates the 150th anniversary with a Canonical Coronation from the Pope will be bestowed upon the statue a Our Lady of Mt. Carmel. Carmel in Hammonton, New Jersey, is the longest continuous Italian festival in the United States. The image of Our Lady of Mt. Carmel there will have a canonical coronation on the feast day, July 16th. A Mass celebrates the special event as well as the annual procession of saints through the streets. The Pallottines served the parish that was called St. Joseph from 1901-2004. The diocese merged three parishes into one and renamed the parish, St. Mary of Mt. Carmel. The other image of Our Lady of Mt. Carmel that has a canonical crown is at Our Lady of Mt. Carmel in New York (1904) which is the first church of the Pallottines in the United States. The Pallottines still serve there there.A canonical coronation is a formal act by the Pope, expressed through a papal bull, to crown a venerated image of Christ, the Blessed Virgin Mary, or St. Joseph. This act acknowledges the image's local and universal significance within the Catholic Church. This is a rare honor for the church and our diocese.In the United States, only four Marian images have received this honor: Our Lady of Prompt Succor: Crowned on November 10, 1895, in New Orleans, Louisiana.Our Lady of Mount Carmel: Crowned on July 10, 1904, in New York City, New York. Our Lady of the Immaculate Conception: Crowned on August 22, 2013, in Lake Charles, Louisiana. Our Lady of La Leche: Crowned on October 10, 2021, at the Cathedral Basilica of St. Augustine in Florida.The Feast of Our Lady of Mt. Carmel celebrates the tradition that a Carmelite friar, St. Simon Stock, received a vision of the Blessed Mother presenting him with the Brown Scapular. Today, the scapular forms a part of the habit of Carmelite friars and sisters.
