Our Labor Series continues with "The Restaurant Coach" who further validates that the restaurant industry is NOT suffering from a labor crisis, but rather a leadership, culture, and self-care crisis! We explore these themes with our guest, Donald Burns, who discusses how self-care and empathetic leadership are so pivotal to improving restaurant cultures and teams -- one employee at a time. Donald is an author, speaker, and trusted restaurant expert who has helped countless brands and owners turn around their operations for the better. He has over 40 years of experience in the restaurant industry as a restaurant owner, consultant, and was even an executive chef for Wolfgang Puck! Moments To Listen For:• Outdated management styles no longer work. The stick & carrot mindset that many restaurant operators use to lead their team is from the 50s & 60s. It's basic (lazy) and outdated. Now is the time to think outside the box and lead with empathy rather than with punishments & incentives. Donald provides great examples of how to do this.• People are not commodities.Just increasing pay is not the solution for your employee woes. Owners and operators need to make the restaurant industry an attractive & viable option for people with positive working environments, flexibility for employees, and livable wages. Take care of your people, and they will take care of you!• Mental health must be discussed more frequently. As leaders, it is a key consideration to keep in mind for your team. It is extremely important to discuss mental health with your team and  provide resources for them as well.• Fixing culture is NOT a quick-fix, it takes time and the right attitude.Improving culture isn't a one-day or even one-month project. It's a sustained effort that is implemented by you and fellow leaders in the organization that trickles down to your team.   Now go forth and be awesome! The Tech Chef, Restaurant, Hospitality and Hotel Technology Business Podcast

It has been a little while since we last had the opportunity to talk so I would like to start off by saying Thank you…. Thank you for continuing to support this show and tuning in today. For those of you joining us for the first time, go ahead and click subscribe or follow in your podcasting software so you don't miss a single episode of the Tech Chef. Today's theme is about “out with the old, in with the new.” Today's show will be a very abbreviated show and we won't have a guest on like we normally do. The show is all about what I have been up to and what is coming up! First and foremost, I am announcing here, for the first time, that I have spent my last days at 4R Restaurant Group and have moved on to a new company. I will always cherish my time at 4Rivers and all of the amazing team members that I had the opportunity to work with and the accomplishments we have fulfilled. I would also like to thank John Rivers for his leadership during the time I was working at his company. He is truly a lighthouse in our community. In regards to where I have landed, well, that is the big news I promised you today. Attract new customers with delivery-only menus using food delivery services. The magic of Robert Earl, who also owns Earl Enterprises, is that he has joined up with well-known celebrities and brands that will bring instant virtual kitchen success to your business. Brands such as NASCAR, Mr. Beast Burger, Bar Stool Bites, Guy Fieri's Flavortown are just a small portion of the brands that are offered and there are so many more in the pipeline. If you are interested and would like more information on becoming a partner, please visit https://www.virtualdiningconcepts.com/ (https://www.virtualdiningconcepts.com). So on the heals of that news, hopefully you are all getting ready for the MURTEC Executive Summit which will be from Wednesday through Friday, October 13-15th.  Once again, out with the old, in with the new…… FINALLY we are meeting in person after…..how long? I will be speaking on Friday in a session called: Research Super Session Panel: HT's 2021 Customer Engagement Technology Study featuring: – Daniel Connolly, Professor, Drake University – Marybeth Pearce, Executive Director, Comcast Business – Mike Maxwell, Chief Technology Officer, Hathway – Your's truly Hotel & restaurant guests have ranked the tech-driven experiences that influence their willingness to spend — including mobility, off-prem solutions, and preferences around ordering and payments. Restaurant digital menu's have recently relied on QR code enable digital menus consisting of an ugly webpage with the dreaded downloadable PDF link. While that basic user interface was necessary to ramp up quickly during the restaurant closures, the lazy design experience won't cut it any longer. A great alternative to native apps are hybrid apps (also known as Progressive Web Apps) which have all the functionality of an app but built using common web technologies including HTML, CSS and JavaScript. The Restaurant Coach Donald Burns wants to be a little voice in the back of your brain to remind you: "you can do it" — if you try. Donald Burns (@therealrestaurantcoach) wants to help your restaurant not suck. The restaurant industry veteran, speaker, author, and coach, was a guest on our Digital Hospitality podcast where he discussed business coaching, mentorship, creating a good work culture, and more. The Restaurant Coach Online | https://www.therestaurantcoach.com/ More Digital Hospitality Episodes | https://calibbq.media/podcast-episodes/ As author of "Your Restaurant Sucks!" and the follow-up "Your Restaurant Still Sucks", Donald Burns has helped inspire many restaurant owners in the art of not sucking at owning a business. His third book "Your Restaurant Culture Sucks" is next. Those attention-grabbing titles almost didn't happen. Originally Donald dreamed up the less-exciting name for his book series: Restaurant Unleashed. His expert editor wisely guided Donald toward a better title for his first book, Your Restaurant Sucks. The non-sucky name came to him while recalling a conversation he'd had with restaurant owner who went on a rant about how: "My cooks suck. My dishwasher sucks. my bartenders suck. My hostess sucks. My managers suck. My location sucks. My guests suck." Donald Burns let him vent and finally sat back and responded, "You know, if your restaurant sucks, it's because you suck running it." Mic drop. "And he was a big guy. I mean, I'm 6'3'' and he was bigger than me. Probably outweighed me by 50 pounds. He got all intense. He was getting up to get ready to come over to the table. I'm like, this is it. Just tighten up my jaw; he's going to punch me right here." Then something important happened. Growth. "He sat back in his chair, and I'll never forget, he let out a deep breath. He goes, "you know, you're right. This is all my fault." And I said, "Alright, let's get to work." Guess what happened next? Donald said that exact same man who complained about everything sucking around him, did a year of coaching and now he has the highest profits he's ever made in his life. People will send Donald Burns messages complaining about the titles of his books, but his response is the same as it was to the restaurant owner we mentioned before. "Listen, if you're upset about the title of a book, your restaurant might suck." That's just what some business owners need to hear in order to grow and not suck. Schedule a Call with The Restaurant Coach at: https://www.therestaurantcoach.com/schedule-your-call   The Restaurant Coach™ While there are many people who are restaurants coaches, there's only one official "The Restaurant Coach." Donald Burns trademarked the name 2008 after he saw the registered TM was wide-open to register. Even The Restaurant Coach himself has long had a business coach. Just like a therapist needs a therapist, even a coach needs a coach. Donald Burns' mission is to help motivated independent restaurant owners find success in the hospitality industry without having to give up their life to the business. "The foundation of any coaching program to me is culture," Donald Burns said on the Digital Hospitality podcast. "What separates the good restaurants from the great?" he asked. "To me, it is culture. And culture is created by the leader. "Culture flows down, it doesn't flow up and culture is created by you, the owner." But creating a thriving restaurant culture that doesn't suck (and actually succeeds, too) takes effort and introspection. "The ones who are most successful have actually taken this whole thing about taking culture seriously and they've taken an active role in creating their culture," Donald said about restaurant owners improving their business' culture. https://twitter.com/donaldburns/status/1002173528408551424?s=20 "I say your biggest job as an owner is to be a preacher,

Student Research & Activities

Anne Reese has lived in South End Newark since 1966 in a beautiful home that is in front of what was “the old chicken hatchery.” Anne is proud of her three children. She was very involved in their schools and activities while they were growing up. She enjoys making other people happy and is a nurturer, not allowing anyone to go without care. Anne is very humble, happy, full of smiles, and loves getting to know other people. Donald Burns, the father of Anne Reese, has lived in the South End for 45 years. He and his wife worked extremely hard to raise four children in their home. He joined the Air Force in 1945 and went to control tower school. Don has been stationed in a variety of countries and states around the world after growing up in Sandusky, Ohio. Don enjoys being retired and spending his time with his daughter and granddaughter in the South End (Bartoshuk, Blake, Cook, Gunn, Schratz and Stark, 2013). --- The South End of Newark, Ohio is an area that is literally and figuratively made up of side streets. The South End is comprised of three district areas that border the south side of the main square of town. It is home to a variety of people, churches, and community organizations that have deep emotional ties in the area. Several families have lived in the South End for generations. Newark itself is a town not unlike many towns that are struggling financially across the United States. It has a rich history, was once bustling with commerce and community involvement, and has been significantly impacted by outsourcing, downsizing and suburban sprawl. The South End has been directly impacted by the closing of schools, stores and industries such as the railroad and the Heisey Glass Company. Where once it was a thriving community and as one participant noted, “complete,” the South End now experiences: high unemployment, low levels of academic achievement beyond high school with dropout rates of around 27%, a population of around 44% renters, and an average income of 35,000.00 for a family of four (Gunn 2103). These podcasts were produced by students enrolled in Professor Anne Crowley's “Technology & Learning” course in collaboration with students in Dr. Amanda M. Gunn’s “Communication and Culture” senior seminar. Many thanks to the South Newark community members who shared their recollections, hopes and dreams: Skip Shoemaker, Norma Francis, Desiree Blake, Mattie Blake, Mattie Blake, Bryan Anderson, Barbara Ford, Earl Harris, Shirley & Wayne Campbell, Betty Meyer, Paula Hatfield, Judy Sayre, Dee Hall, Anne Reese, Judy Davis, Mary & Ginny Grady, Rodney Cook, Amanda Vozzella, Renee Chalfont, Glenn Hopkins, James Durant, Thelma McFarlane, Anna Lou Jones, Sharon Oliver, Deb Crane and the Hupp family. Bibliographies written by project coordinators (Bartoshuk, Blake, Cook, Gunn, Schratz and Stark, 2013).
