Ever wondered what makes a great chef different from a good one? In this soul-stirring conversation, host Simon Zatyrka sits down with culinary leader Adam Lamb to uncover the human side of professional kitchens. From dishwashing beginnings to leadership wisdom, they dive into the beautiful chaos of kitchen life, revealing how presence, patience, and humanity create not just outstanding food but extraordinary teams. As Adam powerfully states, "What makes a great chef? I think really what separates the Good from the Great is this idea of being completely present in the moment, whether they're with their team or whether they're building a dish or where they're out with the guests. Nothing else exists except for that moment."This episode takes you on a journey through professional kitchens – from the "island of misfit toys" culture that welcomes dedicated workers regardless of background, to the heightened sensory awareness chefs develop that allows them to "hear" when food is perfectly cooked. Simon and Adam share candid stories about their formative culinary experiences, including Simon's trial-by-fire on a wood-fired grill and Adam's moment of revelation watching two line cooks move in perfect synchronization. You'll discover practical leadership techniques like the "reset button" – a simple 30-second pause with water that can restore humanity during kitchen chaos – and why creating a culture of calm leadership ultimately produces better food than fear-based motivation. As Adam wisely notes, "This industry is hard, and that's okay. It just doesn't have to be harsh."Whether you're a seasoned chef, an aspiring culinary professional, or simply someone who appreciates what happens behind restaurant doors, this episode delivers hard-earned insights about facing fear, finding calm in chaos, and remembering why we fell in love with food in the first place.Listen now to experience this conversation between two veteran chefs who've mastered not just cooking techniques, but the art of culinary leadership.Connect with Adampodcast website: https://www.chefliferadio.com/LinkedIn: https://www.linkedin.com/in/chefadammlamb/Instagram: https://www.instagram.com/chefadammlamb/ Connect with SimonEmail: simon@culinarymechanic.comBook a Call: https://calendly.com/culinarymechanic/connectWebsite: https://www.simonsez.me/If you're interested in Starfish: https://www.usestarfish.com/

I am the founder of The Elliott Group with my wife Jacqueline Elliott who is our CEO. Today, we have a 150 million dollar business, and we're on our way to a billion. If you don't believe you are qualified to have a big life...here is my story. At 18, I got into automotive sales and made a $1,700 commission on my first day. 19 years old, I made 225k in one year. 20 years old, I made my first 500k. The most I ever made before being promoted to a General Manager was 716k selling cars as a W-2 employee. As a GM, the most I made was 2.5 million in one year. In 2019 after 20+ years in the car business, my wife Jacqueline told me she learned to live without me and I decided I was built for more, was tired of settling and being "better than most" in all areas of life. God. Family. Physical. Mental. Business. I went PSYCHO in self development and totally re-created EVERYTHING in my life. Today, I live by example in everything that I do and my number one goal is to build the world's greatest leaders on planet Earth, and teach everyone how to sell, influence, and persuade, because NO money is ever made without sales. I see people everyday that have no idea what true potential is…well I do…And it's UNLIMITED! I am living proof of that! Imagine what your life would look like if you never had to worry about money again and your family was in a such a good place that if something ever happened to you they were taken care of because of the success you achieved and the person you became. If you want to make history and become a legend coaching with me, will make that happen guaranteed! I got your back for life, Andy Elliott

When the restauranteur Deidra McGuiness-Ciolko opens her business with just $7 left, she must find a way to turn things around quickly or risk losing everything. "I just figured, we're going to make it, it's going to be fine. We had to close for five months and that was tough. The laws here in the Dominican Republic for the curfews are very strict, and you don't mess around. We shut down" This is Diedra McGuiness-Ciolko's story... Deidra McGuiness-Ciolko is a restauranteur and professor who moved to Costa Rica and started her own restaurant, Gordito's FreshMex. She talks about her journey from Boston to the Caribbean and her experience during the pandemic. She advises people who are thinking about starting their own businesses to be careful what they wish for and to treat their business as if it were someone else's. In this episode, you will learn the following: 1. How Deidra McGuiness-Ciolko ended up in the Caribbean 2. The three Rs of business (reduce, reinvent, relax) 3. The importance of being careful about what you wish for when starting your own business Resources: https://www.gorditosfreshmex.com/ (Gordito's on the web) Chapter Summaries: 00:00:04 - The day the restaurant opened, it had $7 left. It was a tough year for the business. As people are aging, they are turning to meditation, prayer, and getting rid of their bad habits. There is a lot of space to learn one of the three Rs. 00:00:55 - Deidra Mcguiness-Ciolko is a restauranteur professor, taco maker, and dear friend. She's going to talk about her journey from Boston to Costa Rica. Adam Lamb is a chef and hospitality professional. Adam has coached and mentored thousands of culinarians over his 30 years career. 00:02:05 - Deidra McGinnis is from Boston and she is now a taco maker in the Caribbean. She worked in Santa Domingo for nine years as the director of operations for the liquor end of a casino. After her son was born, she moved back to Florida and became a stay-at-home mom. After five years, she decided to move to Cabernette and started Gordika's FreshMex Restaurant. 00:05:38 - “resilient“ is one of his favorite words. She grew up in Boston for Irish Italian; she's had several acts and she's not afraid of doing anything anymore because she did this ” I don't often have nice things to say about me, but I'm getting there. “ 00:06:36 - There was a pandemic in the Dominican Republic. The business had to be closed for five months. The owners liquidated all their employees and bought out their partner. It was the first time in 60 years that she had any time off in the business. They were responsible for 700 people. Someone quit his job and sold his shares in a hotel company, and started his own restaurant. Deidra's advice to people who want to start their own business is to be careful what they wish and don't become their business. Deidra also advises not to treat the business as if it was someone else's business. There is a Facebook group called “asshole line cook, “ where a member wrote a harsh post about restaurants not being able to get employees because they don't pay enough. The next day the member of the group apologized for his post. Deidra is grateful to her clients for choosing to spend their dollars with her. Deidra and Joe had a midlife crisis last year and they were separated for a year and a half. Deidra has been smoking and working and drinking like a maniac since she was 20 years old. She had to learn to calm down and learn to be a duck and let things slide at her restaurant. Diedra has been using a coach for a year. Deidra has never done the hard work before. So she wasn't down with the whole coaching thing. She's been doing it now for a full year and it's helped her turn her life around. She has reconnected with Joe. https://chefliferadiocrew.com (Support this Podcast) Starfleet Leadership Academy Podcast https://realchefliferadio.captivate.fm/sla (SLA) Helt Studio Chef Uniforms...

Our Self-Care Summer continues with exercise. Exercise can be a triggering word for some and it is often misunderstood. In this episode, we clearly define exercise and discuss all of the benefits that come from it, both mentally and physically. We also discuss the easy ways you can get started and give some examples of what not to do, including making sure you are entering into it with the right intention. Guests include a therapist, a nurse, and a personal trainer and former body builder. So turn on your video games and hop on the treadmill (that will make sense later) and let's continue on our self-care journey together. This episode is sponsored by BetterHelp. Adam often speaks on managing the daily challenges of an entrepreneur, family man and also keeping himself in peak physical condition. If you asked him to “sum up” his lifestyle in one word, it would be discipline. During our discussion, you'll discover: -The effects of a night of poor sleep or more alcohol consumption than normal...7:04 Lower testosterone as one might expect Other activities (watching a fight, viewing porn, etc.) will elevate testosterone levels -How to gain a birds eye view of a person's overall hormone quality...10:34 Understand the story of your life: environment, history, genetics, etc. Phase 1: CBC, metabolic, lipid, DHEA, total testosterone, TSH, IGF-1, FSH, LH, PSA, SHBG, estradiol CBC is for overall health DHEA can be used to regulate circadian rhythm, overall health, rather than testosterone Free testosterone IGF-1 levels reveal sleep, stress, recovery; potential red flag for pituitary dysfunction High PSA levels may be indicative of prostate problems SHBG (sex hormone binding globulin) levels rise on high fat, low carb diet Thyroid medication is one of the most overused medications Testosterone therapy is not intended to be a permanent solution Lack of sleep, stress, etc. affect the brain's communication w/ the body regarding testosterone production Many variables can affect estrogen levels, which makes it an unreliable indicator of hormone health There are no absolutes; everyone's body absorbs, responds differently -Why Adam only uses blood tests to quantify his patient's hormone quality...34:10 Trust factor: tried and true Other tests such as the DUTCH test are sourced out when necessary Every 6 months is the gold standard for the max time between tests Longtime patients are self-experts Potential to identify other health concerns when blood is tested regularly -What variables are tested differently for women vs. men...41:20 Pregnalone, progesterone; everything else is fairly similar Women typically don't take enough testosterone 30 day cleanse w/ low-dose testosterone cream yields favorable results Women have a wreck of hormones after having a baby Testosterone elevated to optimal levels helps everything else fall into place Low dose = 2.5-4 mg -Adam's preferred form of delivery for testosterone replacement...45:56 For men: 80% use testosterone cream (healthiest and safest means, no needles or gels) Doses can be adjusted based on where they feel the best Injections: split dose throughout the week It's one or the other (injection vs. cream) most of the time Consistent application of small doses is far preferable to infrequent larger doses -Why the vagina or scrotum isn't the best place to apply the cream...51:23 The best place to apply the cream is the back of the knee, forearms, or shoulders It's where the highest concentration of testosterone is already located Patients have reported imbalanced numbers after applying scrotally or vaginally -Whether increased testosterone levels can deleteriously affect one's overall health...54:08 Understand the tool before using it (similar to driving a car or owning a gun) Be healthy first before testosterone therapy Testosterone should not be used as a band-aid when you're not addressing foundational principles of health 90% of testosterone therapy is done improperly The ideal client is someone who's aware of their health, living a conscientious life, and just need a push in the right direction Hormone therapy will not compensate for an unhealthy lifestyle -About the peptide stacks recommended by RenewLifeRX...1:00:19 The These are written by RenewLife to educate their customers, both present and future -Why Adam wrote his book on controlling alcohol consumption Chronic biohacker (keto diet, intermittent fasting, etc.) Alcohol was always part of Adam's life; had an alcoholic father Went on an alcohol fast for 30 days, then 60, then 90, decided to never drink again There are benefits to microdosing on alcohol, provided it's not a "fall back" -And much more... Getting children engaged in languages can be tough, especially if they lack confidence in their abilities. Low-stakes testing can be a great way to tackle this, though, by boosting confidence and showing them how much they know.It can also be a useful way to embed vocabulary, grammar and syntax rules to complement existing lessons plans. However, deriving these benefits requires thought from teachers on how best to structure a quiz, the content that needs particularly focus and picking up on any issues that may arise. We spoke with Dr Heather Martin, a former language teacher and academic, and KS4 MFL teacher Adam Lamb, to get their insights on what makes for a good MFL quiz and how to ensure it best suits the needs of the pupils you are teaching. This sponsored podcast was produced in association with Quizlet. From not optimizing ourselves, to drinking alcohol and not being devotional, there are so many things blocking our consciousness as a society. How does drinking block our own self-awareness and personal development? What is causing so many people to be disenchanted, depressed and anxious? On this episode, I’m joined by my good friend, author of the Better Than The Binge, and founder of Renew Health RX, Adam Lamb, who talks about his journey of quitting alcohol, growing as a person and getting optimized. If you drink to intoxication often, you have a drinking problem. -Adam Lamb   Three Takeaways When we’re younger, all we want is to be older and we tend to attach ourselves to the tangible signs of being older, and drinking is one of them. Unfortunately this has led to major issues with alcohol in our society. The pretty pictures you see on Instagram of perfect lives are just the results or even a lie about their lives. They aren’t the hard work, the uncomfortable moments and all the challenges. Proper medicine isn’t treating sick people, it’s keeping healthy people healthy mentally, physically and emotionally and that’s what optimization is.   At the start of the show, Adam shared on his story and his journey, the recent surgery he went through and what caused it. We talked about why so many people in America aren’t devotional, and the importance of having faith and believing in something. We also discussed how social drinking is one of the biggest issues we have in modern society. Towards the end, we talked about hormone optimization, the importance of client follow up and how pharma and insurance have meddled and messed things up.   We also discussed; The crisis in young men and the lack of physicality and masculine bonding What Adam has learned about life through his marriage How being parents changed us The importance of health forward therapy   A lot of people in this world have so much anxiety, disenchantment, despair and self-destruction because they have misunderstanding of life and how it works. The good things in our lives; the success, the happiness and the health takes hard work, it doesn’t happen instantly. And when we rely on things like alcohol, unhealthy habits and being in denial about our need to delve into the devotional, we just delay our own progress and success. When we fix these things, that’s when we truly become free, and get the best results in our lives.   Guest Bio- Adam is the founder of Renew Life Rx, and the author of Better Than the Binge: Eliminate Alcohol From Your Life. I had the pleasure of having a conversation with Adam Lamb. The idea was to talk about how various types of masculinity impact the workplace. (Side Note: I am trying not to use the term “toxic masculinity” anymore because I realized I fundamentally disagree with it. It is too easy to use that to mean men are toxic or to dismiss outright certain expressions of masculinity that may not be as “cool” or “woke.” The men we most want to reach probably aren't going to listen if that's the term we're using. I'm still working on a new term that better fits. Maybe, traumatized masculinity but I am not sure. I digress.) And we did talk about that. And much more including the role that conscious men - or harmonized men, as Adam talks about it - can take in the ongoing #metoo conversation. It was a cool conversation even if we didn't quite talk about what I had intended. Practical Tactical Men need to find a place where they can own all of who they are in neutrality. He has three siblings as well as three grown children, and one grandson who all wish to remain nameless lest they get connected, socially, to Adam's infirmity and self indulgence. He is a sought after speaker on the issues of purpose, leading a thriving life and enjoying successful relationships. Adam’s vision reads as follows: I stand for a world where men can incorporate all the best attributes of masculinity and femininity in harmony in order to discover the best version of themselves. How did you get started doing the work you do? Adam has been a chef for a long time and in the past allowed drugs and alcohol to get the best of him because of the high stress and lifestyle of being in that industry. After being in the industry for upwards of 35 years, he’s watched young people come up through the industry and struggle with the same problems. These young individuals would have loads of talent and really excel at their positions, but struggled with using drugs and alcohol. Segment 1 We always have a tendency to judge and when we are in situations we tend to resist or wish they were over, and this makes the situations worse. If we saw the gift in those difficult situations or stop judging those situations instead of resisting we don't miss out on the richness that helps us grow and improve. We are the creators of our life, if there are things we desire in our life that are not showing up the most productive question we can ask is “where am I out of vibrational alignment with what I want?” The masculine has been so abusive of its power for so long and we don't want to deny it, so how to we embrace it, move forward and not continue to utilize this abusive power over those who don't have power. Segment 2 This shift from thinking that you are a great leader to trying to be a great leader, and then trying to help people to choose to lead a more fulfilling life. You can think that you have faced these demons and moved passed them, but that is not always the case, everyone has something they can work on or need to face. As we practice more self-care we learn that sometimes it is okay to just play and not always work because the play gives us the strength to do the work. Part of Adam's practice is expressing love for himself and letting go of the judgments that he has made about himself or that other people have made about him. Instead of enjoying where he was he was always looking over the fence at where he could be, instead of leaning into the experience. Segment 3 “An Initiated Man Finally” by Adam Lamb, the issue with the old forms of masculinity is being encouraged to soldier away and struggle by yourself, in a new harmonized form of manhood ask for help when you need it and then receive it. The inspiration for this book is growing up in this mixed culture family and being exposed to these forms of masculinity and the strong women in his family, and exploring these lessons and how they were complete bullshit. A broadening of this idea Adam's masculinity as it relates to his wife and the lessons he carried with him from growing up. Growing up Adam got the idea that confrontation is a bad thing and as a result let the person he was in a relationship with think whatever they wanted in order to keep the peace and holding them responsible for his happiness, which prompted a need for change within him. Segment 4 Harmonized masculinity and the need to become truly masculine without being ego centered, self-centered, or domineering. The feminine is rising up and standing up for themselves, but there is a danger in that things can go too far the other way as well, we need to be both balanced in the feminine and masculine and emasculating a man isn't gonna get you what you want. Adam created a men's circle so that men can come together in a supportive environment and be heard and ask for what they want even though the answer may be no. With all the different problems in the world the divine feminine and masculine need to be ascended at the same time to solve the problems. If men can't find a group to do the work they have to create it, and not to be afraid to find or create a space to do the work that needs to get done and take on oneself.
