On Keepin It Real this week, Cam Marston makes some observations on this odd stretch of the calendar between Christmas and New Years. ----- This is a strange time of year every year. Kinda a liminal space between two big holidays. My instinct says I need to be working but the buzz of my email – a reflection of how busy my work world is – is so quiet. It's hard to get anyone to make decisions right now. Beginning around December 18th, we enter the “let's circle back on this next year” stretch of the calendar. We go from opening small talk with “So, are you ready for Christmas?” to ending it with “Let's circle back next year.” I'm as guilty of it as the next guy. My father turns eighty-eight today. He's turned his pickle-ball crowd onto these commentaries. So, to those of you playing pickleball today at the Via Health Center on Dauphin Street in Mobile, wish my father a Happy Birthday. He will probably try to waive you off, but I know he'll be flattered to hear from you. One of the most remarkable things in my world today is the activity of my eight-eight-year-old father. He plays pickleball at least four days a week. He's made a whole new friend group there. Last year they convinced him to get a bike, and when they don't play pickleball, they'll often gather downtown and ride together for a few hours, staying away from the hills, and stopping some place for lunch or a beer. Many of them are twenty years younger than my father. They like him. They call to check in on him. They invite him to join them when they schedule things. It's wonderful for him and it's wonderful for my brothers and me to know that since my mother's passing a few years ago, my father has found an outlet. I saw recently that one of the primary ways to determine how long you'll live is your measure of activity. Said another way, you don't get old and stop moving, you get old when you stop moving. Dad's still moving. He can still split firewood with an axe, still keep up with the youngsters on his bike, and still play pickleball several times a week. My daughter calls him to play when she's home from college and they make a morning of it together at the Via Health Center. Right around the corner on the calendar is Twelfth Night, known more commonly as the Feast of the Epiphany. The traditional date is January 6th and it's the official start of Mardi Gras down here on the coast. King Cakes begin appearing in bakeries, beads start showing up. Notable and respectable people forgive each other and are forgiven for acting like fools with the culmination being Mardi Gras day which, this year, is March 4th, and, as luck has it, is also my birthday. In years past when my birthday coincides with Mardi Gras Day, I've created quite a spectacle of myself. Those days are over though I will enjoy Mardi Gras day a little more this year because it's my birthday and I will enjoy my birthday a little bit more because it's Mardi Gras.. Enjoy this odd liminal time on the calendar. Soon enough the grind will start again, and these commentaries will return – hopefully – to meaningful and thoughtful content. I'm Cam Marston just Trying to Keep it Real.
Prof. Lesley Gregoricka joins Chris and Eric to explain her work in the field of bioarchaeology. Topics include everything from strontium isotope analysis to the ethics of legacy collections of human remains. Stick around for a diversion to King Cakes and Mardis Gras. The article discussed on this episode can be found via this citation: Gregoricka, L. A. (2023). The ethics of excavating: bioarchaeology and the case for rehabilitating legacy human skeletal collections in the Near East. Levant, 55(3), 294-303. ------------------------------------------------------------- Bioarchaeologist Dr. Lesley A. Gregoricka is a Professor of Anthropology in the Department of Sociology, Anthropology, & Social Work at the University of South Alabama. She also serves as Director of the USA Forensic Science Program. She received her B.A. from the University of Notre Dame and her M.A. and Ph.D. from The Ohio State University. Dr. Gregoricka uses biogeochemical techniques to examine changing patterns of human mobility, mortuary practices, paleo diet, and social complexity in the Near East, Arabia, and beyond. Her primary research program investigates prehistoric mortuary landscapes across the United Arab Emirates and Oman, seeking to evaluate how shifting mortuary traditions in southeastern Arabia reflect corresponding changes in sociopolitical complexity and subsistence strategies. From this, she explores how local identity was reinforced and negotiated through the construction of monumental tombs and treatment of the dead. Dr. Gregoricka's interest in embodied social identity has also taken her to Poland, where she worked with skeletons buried at the post-medieval cemetery at Drawsko as part of the Slavia Project. The Drawsko cemetery is well-known for its deviant burials, and her research focuses on the radiogenic and stable isotope analysis of the skeletal tissues of those interred as “vampires” to better discern why certain individuals were selected for apotropaic burial rites when others were not. Today, Dr. Gregoricka co-directs the NSF-REU Site: Bioarchaeology of Bronze Age Social Systems, which brings undergraduate students from across the country to USA each summer to learn to conduct bioarchaeological research. She is also currently involved with research on the movements of pastoralist groups in ancient Nubia. ------------------------------------------------------------- Contact the Sausage of Science Podcast and Human Biology Association: Facebook: www.facebook.com/groups/humanbiologyassociation Website: humbio.org/, Twitter: @HumBioAssoc Chris Lynn, HBA Public Relations Committee Chair Website: cdlynn.people.ua.edu/, E-mail: cdlynn at ua.edu, Twitter:@Chris_Ly Eric Griffith, HBA Junior Fellow, SoS producer E-mail: eric.griffith at duke.edu

Dogs Are Smarter Than People: Writing Life, Marriage and Motivation
There's this really great book for writers by Angela Ackerman and Becca Puglisi called The Emotional Wound Thesaurus. It came out way back in 2017. As they write in their prologue, “Life is painful, and not all the lessons we learn are positive ones. As with you and me, the characters in our stories have suffered emotional trauma that cannot easily be dispelled or forgotten. We call this type of trauma an emotional wound: a negative experience (or set of experiences) that causes pain on a deep psychological level. It is a lasting hurt that often involves someone close: A family member, loved one (etc.)… or results from a physical limitation, condition, or challenge.” So, the key here is to not just write a quick character study and be like, “My character Hammy the Hamster has resentment because his dad never thought he did a good enough job as exemplified by when he came in second place for the Hammy Olympic Wheel Roll.” The key is to make sure that this emotional wound impacts: The lie that festers inside of there (this is a false logic. Hammy believes he will never be good enough); The fear that gets bigger and bigger and bigger as time goes on, the fear that's because of this wound; Their view of themself (Hammy thinks he's a loser); How their personality shifts when things happen because of the wound or the lie. And there's even a website, that we've linked in the podcast notes where you can look up emotional wounds. That's called onestopforwriters. You have to pay to access the full features of that website. But it writes, pretty simply, “Emotional wounds from the past have the power to greatly impact our characters' personalities and choices in the future. Get to know your characters intimately by choosing the right emotional wound; understanding its effects will enable you to write realistic, fully-formed characters that resonate with readers and make sense for your story.” Angela and Becca even have a ton of resources (they call it the motherlode) here. And one of those things is a pdf for a backstory wound profile. It's all pretty amazing, honestly. DOG TIP FOR LIFE Pogie has a lot of emotional wounds and she says, "Don't let your wounds rule you; don't be afraid of them. You've got this." WRITING EXERCISE When was a time your character actually felt at peace? Describe it. Do they want to get back there again? Does your character do anything for self-care? What is it? Why or why don't they do it? How would your character be different if those traumatic events of their childhood never happened? In this episode I'm deep diving in to the world of King Cakes, philosophising about the downsides of food purism and talking about two King Cakes I made. One is an orange blossom water brioche King Cake with mascarpone cream and caramelised pecans. The other is a slightly lighter enriched dough but it's stuffed to the max with spiced caramel and walnuts! DAYUM! In the last few years New Orleans has seen an explosion in the variety of King Cakes one can buy. From Dong Phuong's Vietnamese style of the desert, to Norma's Sweets Bakery's Cuban approach with a guava filling, King Cakes are increasingly taking on new cultural identities. Last weekend, Louisiana Considered's Alana Schreiber visited The Museum of the Southern Jewish Experience and spoke with New Orleanian and baker Serena Deutch, to learn about a new kind of King Cake with a Jewish spin. And while we're on the subject of King Cakes, just recently New Orleans author Matt Haines released a new book, The Little Book of King Cake. Back in 2021 he published the Big Book of King Cake, a coffee table book detailing the origin story behind this carnival dessert. He joins us for more on how his original book led to his new one for children. But first, it's been a busy week in politics, and that means it's time to catch up with The Times-Picayune | The Advocate's editorial director and columnist, Stephanie Grace. Today we discuss potential candidates for the Louisiana 2023 governor's race. Today's episode of Louisiana Considered was hosted by Patrick Madden. Our managing producer is Alana Schreiber and our digital editor is Katelyn Umholtz. Our engineers are Garrett Pittman and Aubry Procell. You can listen to Louisiana Considered Monday through Friday at 12:00 and 7:30 pm. It's available on Spotify, Google Play, and wherever you get your podcasts. Did you find the plastic baby in the King Cake this year?King Cakes, parades, parties and celebrations. People love to talk about Mardi Gras, but when it comes to Ash Wednesday and Lent, the conversation tends to die down. Penitence can be kind of a downer. Sacrifice is hard. But neither have to be.In this episode of "Coffee With Jesus," our host has a slightly different take on Lent, than most people. The Bible tells us:"To do what is right and just is more acceptable to the LORD than sacrifice." ~Proverbs 21:3Join us as our host shares the true purpose behind Lent, and explains his own slightly less orthodox approach to using this time to grow closer to our Father in Heaven. In "Give it Up!" you'll hear both the successes and failures of our hosts personal journey. While our current Lenten season may be close to over, or while Easter may have already passed, the lessons learned are valuable throughout the year. Listen and be encouraged. Then, develop your own strategy for growing in your walk.Brought to you by Coffee With Jesus Ministries.
In the world of cocktails, it's usually the spirits and the liqueurs that tend to get all the love. But as anyone who has made drinks knows, it's the syrups and mixes that are often the true stars of the show. But taking the flavour profile of your drinks up to the next level with a flavoured syrup is often more difficult than that sounds. Going through the rigamarole of having to find the ingredients and ensure consistency means that it's simply easier to turn to a pre-made syrup. One business that is sweetening the experience is Cocktails & Sons. Started by award-winning bartenders, and husband and wife duo, Max Messier, and Lauren Myerscough, the brand aims to bring simplicity to your bar. To find out more, we talked to Lauren about flavours, simplifying syrups, and of course the drinks that you can make with them.

Kory has all the reasons in the world to own the shirt he's wearing. Kendall is too picky about buying fan merch, which is a big and tall order if you are looking for something in his sizes. Probably the most we have ever talked about clothing in an episode, and you can listen while sipping on Smirnoff products with a clear conscience. It's made in Illinoise. Enjoy! It's officially carnival season in Louisiana, and if there's one delicacy synonymous with Mardi Gras, it's King Cakes. But how exactly did this dessert become such a staple of Mardi Gras? And how has the traditional king cake taken on new styles and flavors over the years? To learn more about the history of king cakes and where these desserts are headed, WWNO's Patrick Madden was joined by three guests. Mardi Gras historian, Errol Laborde, restaurants and food culture reporter for Nola.com Ian McNulty, and author of The Big Book of King Cake, Matthew Haines. Sometimes it can be frightening to take a risk or to start something new. Sometimes, it can pay off. Today, Sarah and Preston Lowder join us to share their own experience in starting their own business and leaving careers behind. Sarah and Preston started Lowder Baking Company officially in 2019. Before their official start, they were selling King Cakes during Mardi Gras as a side business. Sarah was a realtor, and Preston was an ICU nurse when they decided to get serious. They started with simple but necessary steps: making a business plan, approaching investors, securing a location, and streamlining their focus. On their journey, some people thought they were crazy. People wondered what business a realtor and nurse had jumping lanes into baking fresh goods in Shreveport, LA? Rather than listen to those who doubted their endeavor, they focused on what they uniquely possessed from their previous careers to set them apart. Preston used his understanding of micro measurements to influence how they bake, by weighing out their ingredients to ensure quality and consistency. Sarah put her social media skills acquired in real estate to work. Even with the pandemic, they were not discouraged. They found ways to pivot and meet the needs of their customers and expand their offerings. Now, two years after starting their business, they have won multiple awards, including the best King Cake in Lousianna in 2020. If you have a dream that you are concerned about taking on, Sarah and Preston have some advice for you. Once you have a plan, commit to going for it. Accept in your mind that you are going all in. Have faith in yourself. You don't have to have it all figured out, just plan as much as you can. If you treat people right and take your past experiences with you, you will find ways to improve your new endeavor. If one of your new endeavors happens to be planning a vacation, make sure you reach out to Magical Vacation Planners at 407-442-2694. They lean into what makes them unique, and they plan amazing vacations because of it, at no extra cost to you.

An attempt to make "mug cookies" leaves Dana with a case of the giggles and the realization that she is not meant to be a baker. A dessert with many names, baked and shared around the world, the King Cake is most recognized in the U.S. for its relationship with Mardi Gras. This week on a bonus episode of Meat and Three, we learn more about its origins, and treat ourselves to the decadent King Cake, not once, but twice. The HRN team overnights one directly from Randazzo in New Orleans and then learns how to make our own with Jake Cohen in The FeedFeed Test Kitchen. Lastly we hear from Chef John Caluda who has been making King Cakes since the '90s.
King cake can be a symbol of home. Just ask anyone who grew up with the Carnival treat as a natural part of their own New Orleans culture. Or maybe, ask someone making a home here, blending different cultures along the way.

Which ball do you go to and do you have your outfit planned weeks in advance or just the day before. The Zulu Ball is one of the most popular, and even though it is a ball with a formal dress code, if attended you will see that a gown nor a tux will stop anyone's good time. Donut Work. Or is it doughnut? When they're this great, who cares? Meet Matt Rohdie of Carpe Donut. How does a former social worker end up in the donut business? Is Matt Rohdie a Shokunin of donuts? I believe so. When starting Carpe Donut, Matt set out to make one food, using the best ingredients, and to make it really well. He wanted to create a comfort food, not necessarily uber-healthy but one every person enjoys. A treat! It came down to fries or donuts. Aren't we thankful he chose the latter because to me, Carpe Donut is head and shoulders above the rest. In this episode we learn Matt's story of how he got his first machine, how he developed his recipe, how long it took, and what sets his donuts apart from others. An important consideration for an increasingly competitive market. Did you know most donut shops use commercial batters with stabilizers? I didn't. Carpe Donuts are 85% organic, natural, additive-free. A warm, apple cider Carpe Donut covered in cinnamon sugar alongside a hot coffee is a great thing indeed. I'm about to devour one in the picture! I met Matt at the Tom Tom Food Business Summit and what he had to say about running a small business was so important I knew I must have him on the podcast so he could share his knowledge. One piece of advice: having only a brick and mortar store is passé. In a market where everybody and their mother is considering a food business you've got to get creative. Figure out other revenue streams. Streams like selling wholesale and doing corporate events and weddings. Carpe Donut's 700-square-foot store is great, but it's his food truck and his wholesale business that keep him solvent, helping him expand. You can find frozen Carpe Donuts at about 100 grocery stores and distributors including Local Food Hub and Whole Foods. Just rewarm and you get 90% of what you experience in his shop. Another avenue stream that's increasingly important to food businesses are weddings, corporate events, and graduations. Big gatherings where folks eat. An entire industry has exploded in the Charlottesville area because of our wealth of wineries, bucolic vistas, and places to stay. People want to gather and eat. What does it mean for us in the future? What can we expect? In the meantime, Matt's mobile donut truck can bring the goodness to you wherever your event takes place. Its built-in machine creates 300 donuts an hour if you run it at full speed so he can serve 3000 people in a few hours. Or just me when I'm edacious. Another important aspect is providing the customer with requested items. Matt now offers lemonade, hibiscus ginger iced tea, Vietnamese coffee, churros, and King Cakes all because customers requested them for their special event. Playing around with different ideas, trying things out, and providing the best possible experience for your customer is not only fun, but keeps you successful. What's the difference between yeast and cake donuts? I thought Carpe was a cake, but it is in fact, a hybrid. Apple cider is mixed into the batter and acts like applesauce in cake batter. The crumb is light and open, very springy, not dense like a typical cake donut. What food movie influenced him the most? What children's book series continually reminds him of the many rewards of running a family-owned business? You might be surprised. It's one I consider the finest example of food writing. What is his approach to training new employees, and why is it important for him to employ artists and musicians? What food trick does he use to keep his donut batter at the right consistency? Listen to find out. I learned so much about the ever-changing food landscape in this area, why percolated coffee is supreme to drip, the ambiguities of gluten-free sensitivity, the importance of zero food waste, and the horrors of Roundup on our wheat. Great talk from a great guy. Enjoy! Then go get yourself a donut! SHOW NOTES – Links to resources talked about during the podcast: The Charlottesville 29 Restaurant Auctions - Every dollar you bid goes toward four meals for our area's hungry. TODAY IS THE LAST DAY TO BID for the chance to win a once-in-a-lifetime culinary experience! Rice, Noodle, Fish - Deep Travels Through Japan's Food Culture - Matt Goulding travels the country and explores chefs who dedicate their lives to Shokunin or the practice of doing one food and doing it to perfection. My vote for the best food writing of 2015 and a finalist in the 2016 IACP Awards. Incredible piece of work. THE DOUGHNUTS (from the Chicago Public Library Collection), 1963, Weston Woods - Remember this classic? I swear I saw this film every summer as a kid. Homer Price is left to run the local doughnut machine. Hilarity ensues. This episode is sponsored by In A Flash Laser Engraving.
