What Is King Cake?到底什么是国王蛋糕?在法国,January means one thing——la galette des rois,也就是我们要提到的King Cake(国王蛋糕)。每年一月,这款蛋糕takes over (占领) every bakery (烘焙店) in the country。King Cake和一个法国非常传统的节日——Epiphany(主显节)有关。在一月六日主显节这天,法国人一整个月(whole month)都在吃这款蛋糕。��不过为什么要叫King Cake? 又和国王有什么关系?这款蛋糕不是普通甜点,而是用来choose the king or queen(选出国王或女王)。And that king or queen gets the good luck (好运) and fortune (幸运) for the coming year (来年).��这个国王或女王要怎么通过蛋糕选出来?这在于King Cake最关键的部分,就是藏在里面的fève. Fève is a tiny figurine (小雕像) hidden inside the cake.吃到小雕像的人就能成为国王或者女王。从蛋糕中吃出“好运象征”的习俗,和中国颇为相似——就像我们会在饺子或元宵里包硬币,虽文化有别,核心都是“吃出好运”的祈愿。最经典的King Cake是一种圆形酥皮蛋糕(round puff pastry cake),里面有甜杏仁奶油(sweet almond cream)。虽然吃起来让人感觉很幸福,但也可能有会人因为热量过高觉得有些“小小的罪恶感”。圆形酥皮的King Cake is crunchy (酥脆),所以它在法国还有一个称呼:feuilleté。意味着它full of layers (充满了层次)。02. What's the History and Present of Fève? 小雕像的历史和现状是什么?吃King Cake这个传统可以追溯到Roman Times (罗马时期)。以前的fève不是现在的小雕像,而是一颗真正的“豆子”。当时人们用a real bean来选“king for the day (当日国王)”。后来在19 世纪,豆子变成了porcelain figurines (瓷制小雕像),所以现在很多fèves都是collectible (可收藏的)。��更有趣的是:You won't even know what it looks like until you find it in your piece.在你吃到King Cake之前,根本不知道里边的fève是什么样子。这或许也算是一种法国版的blind box(盲盒)文化。有的fèves还是limited edition(限定款)。人们还会像交换数码宝贝卡一样去trade (交换) the limited edition fèves。03. How to Eat This Cake这款蛋糕应该怎么吃?��当蛋糕被切开时:The youngest person in the room must hide under the table.房间里年纪最小的人要躲到桌子下面。��为什么要躲在桌子下面呢?因为这个小朋友负责随机喊出屋子里的人的名字(call out randomly),被叫到的人就可以来拿一块King Cake。大人们都会紧张兮兮地等着“代表命运”的一块蛋糕。这样做的目的只有一个:to make it fair (保证公平)。这个传统在法语里叫:Tirer les rois (抽签选国王),也就是“draw the king”。法国主播Maelle以前还会在这个环节cheat (犯规)。有一次她要了multiple slices (好几块蛋糕) to increase her chances (增加中奖几率). 可见这个fève非常受大家欢迎。而且现在的fèves,早就不只是小瓷偶了。它还有不一样的主题:1) Disney characters (迪士尼人物)2) Harry Potter figurines (哈利波特)3) Mini croissants & baguettes (迷你羊角面包和法棍)4) Luxury brand collaborations (奢侈品牌联名)有些稀有款(rare edition),they're sold online for hundreds of euros (欧元)。04. A lot of business success stories contain familiar scenarios. They include a previous spectacular failure; everybody telling an entrepreneur they’re crazy; and an entrepreneur explaining that what might look like an overnight success was anything but. And then there are entrepreneurs like Peter's lunch guests on this edition of Out to Lunch who both had ideas for very different businesses, went ahead and opened their doors without any drama, and were instantly successful. Troy Bergeron spent 30 years in the music transportation business, driving tour buses for rock musicians like the late Ozzy Osbourne and transporting equipment across the country. When he quit all that and came back home to New Orleans, he was wondering what he was going to do with himself when he overheard a woman complaining there was no doggie transportation option here. And that’s when Doggie Bus was born. Doggie Bus is Uber for dogs.You book your dog’s ride on the Doggie Bus app; Troy shows up in his specially converted passenger van; on the app you track where your dog is, when he gets where he’s going, and when he’s on the way home. Troy launched Doggie Bus in New Orleans in January 2024 and he’s already franchising the business to other cities. Samantha Weiss had never lived in New Orleans. In New York City she’d put her MBA and job in financial services on hold and started pursuing a career in food. Then the Covid pandemic derailed those plans. Samantha and her friend Kelly Jacques came up with an idea - open a bakery, in New Orleans. 30-seconds of online research will tell you, New Orleans already has 40 bakeries - twice as many per capita as your average city in the US. Nonetheless, Samantha and Kelly moved to New Orleans and in 2022 took over a space that used to be Santa Fe restaurant in the Marigny, and they opened Ayu Bakehouse. If you live in New Orleans, you may know the rest of the story. Ayu Bakehouse was an instant success. Since opening they’ve been featured in numerous national publications - including Vogue, The New York Post, USA Today, and Bon Appetit - which named Ayu one of the most exciting bakeries in the country - and you’ve probably either tried or heard about their King Cake which has been voted Best in New Orleans in the Times Picayune readers’ poll. You’d have to be living under a rock these days not to be impacted by a seemingly endless onslaught of stressful developments - from international conflicts to national politics to local scandals, and even the daily war between your car and potholes. But, no matter what else is going on around us, there are at least two things that are universally bright spots in all of our lives. Puppies. And pastries. Besides running successful businesses, Troy and Samantha are making the world a brighter and better place for humans, dogs, and Kevin the cat. Today's guest is Kelly Jacques, the baker and co-owner of Ayu Bakehouse in New Orleans. The bakery has become known for their King Cake, a ring-shaped pastry that's somewhere between a Danish and a cinnamon bun. The Louisiana city is notorious for this baked good, which is eaten from Epiphany in January up until Mardi Gras. January 4, 1830 Louisiana State government moved to Donaldsonville from New Orleans This week in New Orleans history. When the city of New Orleans was struck by Hurricane Katrina in August 2005, the bakery's ventilation system, an exterior wall, and the roof were damaged. Production of Hubig's pies was halted and did not start again until more than four months later, January 4, 2006, after the neighborhood had clean water, reliable electricity, and sufficient gas pressure. Hubig's pies increased slightly in cost since the storm, and the variety of flavors offered has changed. About 30,000 hand-sized pies are made a day to be delivered on the next day.
