Our featured interview tonight is with Nathan Davis of Greywoodie Fame. Nathan has been known as one of the biggest fans of Kaywoodie, and now he owns the company. Nathan started as a collector of Kaywoodie, then became a dealer and launched his Greywoodie site. Kaywoodie is a 173 year old company owned by the same family for four generations until now. He goes by CrashTheGrey in the Pipes Magazine forums, and is also the organizer of the Capitaland Pipe Show, and has his own podcast. This is where you will hear the story of Nathan, a friend I met after high school while we were at Hume Lake Christian Camp up in Sequoia National Park together. Hear how even though Nate was born into a broken home to struggling parents, God had a purpose for his life. Nathan persevered through his up and down teen years and getting kicked out of college. Eventually he was called into the ministry. During that time, Nate witnessed God's provision in numerous aspects of his life including the rise and fall of a church and minister that Nate had respected as a surrogate father. Today we are joined by Nathan Davis. Nathan studied Preaching Ministry at Lincoln Christian University, and moved to New England where he served on staff at two churches. Meanwhile he also started attending the New York Film Academy in Boston, where he discovered his passion for filmmaking and storytelling. In 2005, he packed up his car and moved to Los Angeles to pursue a career in film and entertainment, and ended up getting a job at Disney, where he worked for 16 years, most recently as an executive in Cinema Partnerships, leading in-theater marketing campaigns for Marvel, Star Wars, Pixar, and Disney films. Then, in January of this year, he joined The Chosen as their Head of Marketing Strategy and Operations. He has an MBA and also holds an MA in Mythological Studies, and is currently working on his dissertation on humanity's narrative sense and how stories shape our understanding of the world. Recently I was introduced to the wines of Copper Cane and Joesph J. Wagner. After visiting their warehouse, I have done features with Valette Healdsburg with these great California wines. In this feature we will open two of these wines and look at the websites to give you insight into the world class wines we have here. We have featured Valette Healdsburg, many times recently and feel this is a great match of world class wines and cuisine. first let's look at the tasting notes from the winemaker and then introduce our great friends at Valette. Our first wine is The Napa Valley Chardonnay from QuiltWines. Aromas of ripe pears, roasted almonds, buttered toast, honey, lychee, jasmine blossoms, freshly washed river gravel, lemon zest. Flavors of baked apple with vanilla drizzle, pineapple-mango cream, buttered toast, salty popcorn and lemon curd with notes of nectarine and cantaloupe. Joesph has his own approach to these wines. As you taste through our portfolio of wines, you will notice there is a common thread of character that each wine holds, while also showcasing the region and variety. When Joseph makes the decision to harvest, he looks at measures such as Brix, acidity and pH, but also takes in the physiology of the vines themselves. So though our wines exhibit differences due to growing region and grape variety, they all possess a shared character based on our method for determining the perfect moment to bring in the crop. This wine was a great pairing and we actaully got two dishes to go with this wine. BELLE GLOS 2020 LAS ALTURAS PINOT NOIR Ruby red in color with fragrant aromas of blueberry pie, dried fig, kola nut and hints of coffee grounds. Dark berry fruit on the palate with flavors of blackberry pie, black cherry, creamy milk chocolate and subtle notes of nutmeg. While each vineyard location lies near the Pacific Ocean, the climate differences are significant, varying with the amount of fog, wind, sunlight, and soil type at each site. we have two great wines today and have decided to drive down to Valette Healdsburg.Harry Bryan has joined us and we will enjoy a couple amazing pairings with the wines of Rodney Strong Vineyards. First we will check out the tasting notes on the wines and then please joinus by clicking on the links at the bottom of this feature. You will then join us for two great audio features! The 2017 ROWEN red blend is a lush and elegant wine consisting of wonderful high elevation, mountain fruit. Early winter showers were followed by a warm, dry beginning to the new growing season, setting the stage for an early bud break. Alternating overcast days and heat waves continued through spring and summer, with a particularly hot period in late June, and an unseasonal rain in July. We harvested the grapes at peak ripeness from September 28 through October 7 under ideal conditions. Bordeaux varietals thrive on steep terrain and volcanic soil and, our Cooley Ranch is precisely the kind of landscape they love, with elevations ranging from 500 to 2,040 feet. Cooley Ranch is blessed with a bright red, volcanic-based soil that is sought after for its high-quality grape-growing potential. Also, due to being above the fog line, Cooley warms up during harvest to allow for hotter growing temperatures and extra tannin development. All of this provides beautifully ripened fruit and balanced acidity. This wine is extremely special and the blend is one of the best I have recently tasted. Symmetry 2017 Red Blend The 2017 vintage will not be soon forgotten. The all-time precipitation record was set by mid-April as rain swept like waves over the North Coast, filling all the lakes, ponds and reservoirs. As the rain clouds subsided and the sun appeared, the vineyards in Sonoma County endured six different heat waves at or above 100F including a memorable 110F on Labor Day. We harvested the fruit from September 16th - October 13th to make this beautiful red wine. Symmetry is, at its heart, an artfully blended wine. It is also a wine from a specific region, the Alexander Valley, and part of our goal when making Symmetry is to capture the essence of this AVA. The precise blend will vary each vintage, but with over 40 years of experience growing classic French grape varieties in Alexander Valley, only the best is selected for the final blend. The name "Symmetry" means balance, and our winemakers' ultimate goal is to craft a blend that is harmonious, intensely flavored and elegant. Recently Greg Joined me at Valette Healdsburg for many different courses and wines. We opened the great wines of Rodney Strong Vineyards and Davis Bynum. We have two great features...AGAIN,as the dishes just kept coming...,and quite frankly...Disappearing ! Harry Bryan joined the party as we closed the restaurant a couple nights in a row! First I will tell you about a couple of the wines and a few words of the great restaurant known as Valette Healdsburg. We have told you of the amazing Sav Blancs from rodney Strong and Davis bynum,and we now will discover the rose from Davis Bynum. Winemaking is light handed, with timely and deliberate choices made to craft a wine that genuinely reflects the vineyard and vintage. This rose has bright aromas and flavors, fresh acidity and a clean finish which is due to selecting exceptional blocks of fruit and picking early in the season when the acidity is naturally high and the sugars are low. The clone 113 block of Pinot Noir provided 92% of the finished blend, which was given 2 hours of skin contact to deepen the fruit and color before being pressed. The other 8% came from the clone 115 block, which also received 2 hours of skin contact. The resulting blend was chosen for its berry fruit, herbal and citrus notes and balanced finish. We also paired the beautiful Pinot Noir from Davis Bynum. Davis Bynum Pinot Noir showcases terroir: differences in flavor from distinct sites in the Russian River Valley. Our Russian River Valley Pinot Noir blends the characters of three distinct Russian River Valley neighborhoods and select blocks from the Petaluma Gap to create a wine with richness, balance and complexity. The darker fruit tones, richer mouthfeel and velvety tannins come from fruit grown in the warmer climate of the Santa Rosa Plains with its clay-rich soils underlain by volcanic ash. The fruit grown on the sandy soil of the warm Middle Reach neighborhood on Westside Road add to the spice, floral and red cherry fruit tones. The fruit from vineyards in the much cooler Green Valley neighborhood add fresh blueberry and vibrant acidity from the lauded Goldridge sandy loam soils. And a select piece from our hillside vineyard in the Petaluma Gap, within view of San Pablo Bay, adds racy acidity and briary fruit to the blend. Harry and I opened the Malbec and Reserve Cabernet from Rodney Strong. Our 2019 Reserve Malbec is rich with aromas of briary berry fruit, boysenberry and light oral undertones. On the palate, black cherry and currants give way to dried herbs and fine tannins for a lingering finish. Enjoy this wine with honey glazed pork chops, oven roasted winter vegetables or a petit filet with a spicy peppercorn sauce. Our Reserve wines are the result of a careful blend of individual lots from meticulously farmed sections of some of the very best vineyards in Sonoma County. Created in our small lot Artisan Cellar, Winemaker Justin Seidenfeld employs techniques such as cluster pre-sorting and extended maceration. Pianist Jacob Greenberg today releases his first solo disc, Bright Codes, on TUNDRA via New Focus Recordings. The album features exciting commissions for piano and harmonium written for Greenberg between 2013 and 2021 that premiered at venues such as Lincoln Center for the Performing Arts and Miller Theatre. So much attention in business news is tech, and I don't just mean Big Tech. The word “innovation” is thrown around a lot when really what we're talking about are gadgets...not ideas. But innovation in business is often about what you do, not what you use. Processes, procedures, protocols and work culture — these can all be major innovations in a successful business model, and none of them require a degree in computer science or a garage in Palo Alto to develop. Entrepreneurs have been making money trying to optimize other businesses long before there were CRMs. It's a big part of helping companies grow and become more profitable. What's not to love about a doughnut? They're fried, fatty, crispy, doughy and sweet. You can dip them in chocolate, stuff them with Bavarian cream and roll them in sprinkles. They come vegan, gluten free or covered with bacon crumbles. You can slice them half and use them as a hamburger bun. Anything that good has to be sold by the dozen. And it should be easy to do, right? Not so much.The doughnut business is cutthroat. It's a crowded market out there and one dominated by customer loyalty. Plus, the hours are terrible. Why get into the business? Drake Pothier says because it makes people really happy. The chance to make someone's day better is a great reason to get up at 3 o'clock in the morning. Drake owns Village Deaux in Maurice. He and his wife bought the shop in 2019, looking to diversify their income and find something new to sink their teeth into. They navigated the pandemic shut down and came out the other side with a doughnut shop that folks are driving to from all over Lafayette Parish. Which is saying a lot with all the good doughnut spots here. Before running Village Deaux, Drake worked in communications and ran a successful insurance agency, which he sold in 2021. So everyone loves a doughnut, but not everyone likes politics. And that's what Marie Centanni sells: ideas. Marie is a political consultant, running her shop Centanni Communications since 2009. Marie is a vet of the political scene. And her specialty is communicating public policy. That means taking a wonkish piece of legislation, dipping it in chocolate, stuffing it with bavarian cream and selling it to voters. Cynics may not like it so much, but it's how the policy gets made. And I'm sure Marie has to get up plenty early in the morning to do it. During the 2021 Legislative session, Marie played a big role in communicating the push for tax reform, a process which took steering several pieces of legislation through a toxic political climate. Marie is a former broadcast journalist, worked as a staffer on Capitol Hill and served as press secretary to former Gov. Kathleen Blanco. She's advised over 250 candidates through the Candidate Training Bootcamp at the Louisiana Free Enterprise Institute, the nonprofit arm of her top client the Louisiana Association of Business and Industry. We are joined again by poet and professor Laura Mullen to share a curated look at some of her work, as well as the work of a few other poets she's been reading and admires. Laura Mullen is the author of eight books and the McElveen Professor of English at LSU. Recognitions for her poetry include Ironwood's Stanford Prize, a National Endowment for the Arts Fellowship and a Rona Jaffe Award. Her work has been widely anthologized, and she is the librettist for Nathan Davis' a Sound Uttered, a Silence crossed (for choir and percussion) which was commissioned by the La Jolla Symphony and Chorus. Recent poems have appeared in The Nation, Jubilat, 1111, and Lana Turner. She was the 2017-2018 Arons poet at Tulane and also affiliate faculty at Stetson University's MFA of the Americas for 2018.
