On this week's edition of the Flavors of Northwest Arkansas podcast, we're at Butterscotch in the Bentonville Square- you know the place- part bakery, part bar. We get into that, but first! FOOD NEWS! Applications are open for the Arkansas Food Hall of Fame... The original location of Slim Chickens is closed until summer, we think. We took video yesterday and, well, the original building is gone. Cobblestone Farms in Fayetteville is now reserving 2025 Spring/Summer CSA shares.... The 2nd annual NWA's shortest St. Patrick's Day parade has been announced. We have the particulars. Fayetteville's Spoon Fusion Korea Oh-K Dog on Dickson Street will temporarily close starting today and will re-open the 24th, according to their social media post. (*) Some sad news to report. Popular Fayetteville Food Truck Swag Banh Mi announced yesterday that they'll be closing down in 3 months. We'll hear why from a co-owner. Sam Gibson is the Director of Operations and Bar Manager of Butterscotch Bakery and Bar in the Bentonville Square. He's been there since he helped concept it with longtime friends and owners Sam and Larissa KcKenzie. He'll tell us why it's a bakery and bar, of course, a unique pairing.. Also, how did they wrangle prime real estate on the Bentonville square?!?! We'll hear that story as well. We'll talk about the bakery and what Sam wants to see on store shelves nation-wide from there, and he makes us some EXCEPTIONAL Butterscotch Old Fashions, I can say that it's the best Old Fashion that I've ever had... Sidenote- a bit of explicit language in this one, so plan accordingly. Thanks for listening- listen wherever you get your podcasts, and watch now on YouTube!

Prosecutors allege Cox, 69, struck Pugh in a marked crosswalk after leaving a holiday party. Cox refused sobriety tests, admitting to drinking “three beers” and taking medication. Police noted signs of impairment but no slurred speech. Evidence presented included bar receipts showing multiple beers ordered by Cox's group earlier and testimony about the catastrophic brain injuries that led to Pugh's death. Defense attorneys questioned the receipt's accuracy, highlighted poor visibility at the crash scene, and argued Cox's demeanor did not indicate intoxication. The trial, criticized for its slow pace, continues amid debates over evidence admissibility and witness questioning. STORY 2:     Church Street Park Opens in Marietta Church Street Park has opened in downtown Marietta, transforming a former parking lot along the Mountain to River Trail into a vibrant community greenspace. Developed by Bridger Properties, the park features landscaping, seating, swings, bike racks, and a turfed area usable by nearby restaurants. The space complements the Church Street development, hosting businesses like Contrast Artisan Ales, Bom, and 7 Tequilas, with Gianni & Mac's Ristorante and Jeni's Splendid Ice Creams set to open soon. The developers aim to connect Marietta's Square and Market while creating an inviting area for families and patrons. The park will also be an open container zone, enhancing its appeal as a social hub. Based in Marietta, the organization offers essential services like emergency shelter, legal advocacy, and counseling for domestic violence and sexual assault survivors. Each year, 15 women leaders are recognized for their exceptional contributions to their professions, volunteer work, and the community. The 2025 honorees were chosen through a competitive process and will join the prestigious Academy of Women Leaders. The awards gala will take place on March 21 at the Atlanta Marriott Northwest, featuring a reception, dinner, auctions, and more, with one honoree being named Woman of the Year. This event underscores the profound impact of these leaders while supporting LiveSafe's mission to empower survivors.     We have opportunities for sponsors to get great engagement on these shows. Park ranger Amanda Corman led an insightful talk on the role of artillery in the Civil War, focusing on the Battle of Kennesaw Mountain. She highlighted differences between smoothbore and rifled cannons and their impact during the Atlanta Campaign. Visitors learned about the Confederate Army's high-ground advantage and viewed artifacts from the battle. History buffs and families, including those visiting from Estonia, praised the educational experience, emphasizing the importance of understanding history to shape the future. STORY 5:  First Stretch of 100-Mile Trail Project Opens in South Cobb The first segment of the Chattahoochee RiverLands trail, a 0.7-mile stretch at Discovery Park at Riverline in Mableton, was unveiled and hailed as the start of a 100-mile greenway connecting 19 cities along the river. This ambitious project, born from a $1 million investment by Cobb County, aims to improve river access and foster economic development, community connection, and environmental preservation. Over $43 million has been secured for the RiverLands in Cobb, including $25 million in public funding. Future plans include extending the trail to Mableton Parkway by 2026 as part of a decades-long effort to complete the entire network, transforming the region with expanded green space and recreational opportunities.   We'll be back in a moment    Break: Ingles Markets 9 STORY 6:  47-Home Midway Road Subdivision Proposed The Cobb Planning Commission will review Poston Properties' proposal for a 47-home subdivision on Midway Road near Lost Mountain Park. The plan features traditional and craftsman-style homes with at least 2,200 square feet and two-car garages. The developer seeks open space community zoning, which would preserve 50% of the 48.67-acre property as permanently protected open space, including walking trails and park areas. A mandatory HOA and a 100-foot buffer from the neighboring Broadlands subdivision are also proposed. Previously delayed in October, the plan aims to balance development with conservation while enhancing the community. STORY 7:  UPDATE: Man Killed in Smyrna Hit-and-Run Cobb County Police are investigating a hit-and-run incident in Smyrna that killed 30-year-old Jose Ortega-Dominguez early Saturday morning. Around 4:30 a.m., Ortega-Dominguez was struck by a westbound vehicle while walking outside a marked crosswalk on Pat Mell Road, near Green Acres Elementary School. The driver fled the scene without stopping. Ortega-Dominguez was pronounced dead at the scene, and his family has been notified. What role can bars and mixologists play in protecting Earth's fragile environment? It's a question that Juan Torres Master Distillers, the maker of Torres Brandy, has attempted to answer via an innovative competition. A highly regarded spirits brand based in the Penedès region of Spain, Torres Brandy is the creator of Zero Challenge, an annual international competition whose aim is to promote, identify and reward environmentally friendly solutions in the management of bars and crafting of cocktails. The 2024 Zero Challenge finals were held last month in Barcelona and featured 10 bartenders based in countries from around the world, including Finland, Estonia, Spain, Mexico, Italy, Canada, the United States and the United Arab Emirates. Each presented a project intended to improve sustainability and reduce environmental impact within their bars and included solutions often specific to the impact that climate change is having in their respective regions. They were also challenged to develop a cocktail using Torres Brandy, one that reflected their commitment to a sustainable future. The event spanned the course of three days and included educational tours of the Torres Brandy solera and Familia Torres winery, the latter of which has for decades emphasized the importance of addressing climate change through the use of innovative growing methods and production processes. It culminated in the crowning of Beto del Toro of Mexico's Rufina Mezcalería as the winner of the Zero Challenge competition, a title that came with a grand prize of €30,000. This episode features interviews with four of the key participants in the competition, including Beto Del Toro along with Christian Visalli, the Global Spirits Director for Juan Torres Master Distillers; Loni Lewis, a finalist representing Okan, a restaurant in South Carolina; and Giacomo Giannotti, the owner of the World's 50 Best number one bar Paradiso, and the winner of the inaugural edition of Zero Challenge. Show notes: 2:56: Interview: Christian Visalli, Global Spirits Director, Juan Torres Master Distillers – Surrounded by Familia Torres' vineyards, Christian speaks with Taste Radio editor Ray Latif about a traditional food prepared for the event's guests before explaining the origins, aim and importance of the Zero Challenge competition. He also shares details about the project that won the inaugural edition of the contest, the potential to provide funding for more than one person in future contests and how Familia Torres' ancestral grape varietals project, which was launched 45 years ago, is key to its sustainability goals and benefited the company's innovation and product strategy. 16:22: Interview: Loni Lewis, Bar Manager, Okan – Loni shares details about Okan, a West African and Caribbean-inspired restaurant based in Bluffton, South Carolina and how her concept for a “secret bar” and new food plantings, including moringa and okra, on the premises benefits its sustainability goals. She also explains her approach to preparing for the competition, presenting in a way that gets judges and audience members interested and excited about her idea and why she believes that “waste is a lack of imagination.” 27:04: Interview: Giacomo Gianniotti, Owner, Paradiso – Giacomo and Ray chat about the latter's first visit to Paradiso and the bar's copper still themed speakeasy, why it has become a global destination and how he, an Italian, came to Barcelona by way of London. He also discusses the development of Paradiso's Zero Waste Lab, the project that won Torres Brandy's first Zero Challenge competition; how it has supported the bar's sustainability initiatives along with those of the local community; and his role in judging the cocktail component of the 2024 contest. 39:07: Interview: Beto del Toro, Owner, Rufina Mezcalería – An elated Beto explains why winning the competition is the “crown” for Rufina, which he opened nine years ago. He also shares details about his project, which transforms discarded glass bottles into a variety of useful items for the bar, including glasses and barware, which reduces the need for traditional recycling, and how he communicates the importance of sustainability to his patrons. Recently I was introduced to the wines of Copper Cane and Joesph J. Wagner. After visiting their warehouse, I have done features with Valette Healdsburg with these great California wines. In this feature we will open two of these wines and look at the websites to give you insight into the world class wines we have here. We have featured Valette Healdsburg, many times recently and feel this is a great match of world class wines and cuisine. first let's look at the tasting notes from the winemaker and then introduce our great friends at Valette. Our first wine is The Napa Valley Chardonnay from QuiltWines. Aromas of ripe pears, roasted almonds, buttered toast, honey, lychee, jasmine blossoms, freshly washed river gravel, lemon zest. Flavors of baked apple with vanilla drizzle, pineapple-mango cream, buttered toast, salty popcorn and lemon curd with notes of nectarine and cantaloupe. Joesph has his own approach to these wines. As you taste through our portfolio of wines, you will notice there is a common thread of character that each wine holds, while also showcasing the region and variety. When Joseph makes the decision to harvest, he looks at measures such as Brix, acidity and pH, but also takes in the physiology of the vines themselves. So though our wines exhibit differences due to growing region and grape variety, they all possess a shared character based on our method for determining the perfect moment to bring in the crop. This wine was a great pairing and we actaully got two dishes to go with this wine. We will have audio features and a link so that you can join us as we paired enjoyed the best of the best. today we will also feature a great Pinot Noir. BELLE GLOS 2020 LAS ALTURAS PINOT NOIR Ruby red in color with fragrant aromas of blueberry pie, dried fig, kola nut and hints of coffee grounds. Dark berry fruit on the palate with flavors of blackberry pie, black cherry, creamy milk chocolate and subtle notes of nutmeg. Rich and structured, this wine has beautiful acidity that lingers through to a long, mouthwatering finish. the bottle is waxed and a beautiful package that would impress anyone on your holiday lists ! While each vineyard location lies near the Pacific Ocean, the climate differences are significant, varying with the amount of fog, wind, sunlight, and soil type at each site. Each Vineyard Designate is crafted to distill the purest essence of the locale into elegant expressions of California Pinot Noir. Owner/winemaker, Joe Wagner chose the name Belle Glos (pronounced “BELL GLOSS”) to honor his grandmother, Lorna Belle Glos Wagner. Lorna was a co-founder of Caymus Vineyards, an inspirational figure to Joseph and an avid lover of Pinot Noir. As a fifth-generation Napa Valley winemaker, Joe learned his way around a vineyard long before he was able to drink wine. By the time he was 19 he knew that he would continue his family's winemaking legacy, working alongside his father at Caymus Vineyards. In 2001, he created Belle Glos, with a focus on vineyard-designated Pinot Noirs from throughout California's best coastal regions. More recently, he has launched a number of new brands under Copper Cane Wines & Provisions. Joe has a keen interest in contributing to the evolution of the wine industry, by discovering new wine growing locations and through experimentation in the cellar. Joe lives in Napa Valley, has six children, and maintains a healthy balance between his family life and a passionate dedication to his business. We have sat down with a great friend GENERAL MANAGER / HARRY BRYAN. Having an incredible passion for memorable food and beverage experiences, Harry Bryan is the perfect addition to work alongside executive chef, Nathan Davis and owners Aaron Garzini and Dustin Valette. Harry re-joins the Valette team as General Manager with over 20 years of professional experience in the hospitality industry. Harry comes to the property from award winning Timber Cove Resort on the Sonoma Coast where he was the Food & Beverage Director. His management experience also includes positions as Bar Manager with Heartland Brewery in New York City, Bar Manager and Floor Captain of the Versace House in Miami Beach, and General Manager of Mateo's Cocina Latina in Healdsburg. Valette was born from two brothers' lifelong dream of creating a unique dining experience in our hometown of Healdsburg. Our goal is to provide a canvas for local farmers, winemakers and artisans to showcase their crafts. We will have two audio links at the bottom of this feature. Click on the link and join us as we pair these great wines with many dishes from this great restaurant. Cheers! Click here and join us as we enjoy great food and wine .
