Hospitality can be a nebulous thing, and while you know it when you feel it, what are some of its concrete elements and how do you create it and maintain it in a restaurant? To explore that question, I turned to two of the most hospitable people I know, Jerry and Krista Slater. Based in Athens, GA, they currently own two restaurants: The Expat and Slater's Steakhouse, one wine shop and bar named The Lark, and are in process to open another restaurant and a cocktail bar very soon. So they think about hospitality a lot. They've made a career of it, with Jerry working at Charlie Trotter's in Chicago, Seelbach Hotel in Louisville, and being one of the consulting creators for One Flew South in Hartsfield International Airport in Atlanta. Krista, a painter and certified sommelier, worked for years in the wine and restaurant industry in the Bay Area before relocating to Georgia. You might even recognize their names from a beverage column in the Atlanta-Journal Constitution, so to say busy is an understatement. But despite that, they are always intentional in creating their spaces and guest experiences, and they do it all with a dash of humor and goodwill for the larger community.

Both she and Chef Pete aren't afraid to talk about the culinary world's seldom discussed secret of burnout and mental health concerns, and Sears even shares what she went through in 2020 when she exited bartending in order to take time for self-care and self-assessment. Tiffanie Barriere is the epitome of southern hospitality—warm, kind, and welcoming. She’s just the person you’d want as your drinking coach, which is fitting: The Drinking Coach is a moniker given to her by a friend, and it eventually became the name of the Instagram account where she shares stories of uncelebrated Black people throughout history, with a cocktail alongside. Tiffanie is more than an incredible bartender—she’s a teacher, a mentor, and a historian, using her platform to shed light on long-forgotten stories. Tiffanie started her journey at One Flew South, the first upscale restaurant in Hartsfield-Jackson Atlanta International Airport. She worked as the beverage director at the restaurant for seven years, during the time when it was recognized as the “Best Airport Bar in the World” at Tales of the Cocktail. Now, as an independent bartender, Tiffanie is getting her own recognition for her contributions to the bartending and service world. Earlier this year, she was featured on the cover of Imbibe Magazine’s 75 People to Watch issue, and most recently announced her involvement in the Jubilee project, a venture by award-winning food and nutrition journalist Toni Tipton-Martin. In our conversation, Tiffanie and I talk about what sparked her interested in service and how it grew into a passion. She shares the difficulties of striking out on her own as an independent bartender, and also talks about inspiration, and why she is her ancestors' wildest dreams come true.

Fundraising for a restaurant project is no walk in the park. One can prepare to be met with under delivered expectations from most of your list of potential investors, often times including friends and family. Ghosted calls, delays and loan denials are a natural part of the territory that comes with getting checks in hand. It is only a dedicated and impassioned person that can weather the challenge. For most, we hope the journey is fruitful in taking you to the next step. That was the story 6 months ago. Today, you can go ahead and pile on top of that: the COVID-19 pandemic and a march for racial equality and police reform. The first of which has meant closures and massive restrictions on business operations as well as a volatile market for both banks and your investors. Chef Todd Richards is a busy man. He’s the culinary director of Jackmont Hospitality (overseeing One Flew South and Chicken+Beer at Hartsfield-Jackson Atlanta International Airport), he’s the owner of Richards’ Southern Fried, and an author that’s been on tour with one of the hottest cookbooks in the country, SOUL. But I’m not interviewing him just because of that. It’s more personal. I love his cooking, his decision to consciously think about food and what it means, and his cookbook has a special place on my home cookbook shelf, which is more important to me than the fact that it also won Amazon’s 2018 Cookbook of the Year. This two-time James Beard Best Chef: Southeast semifinalist is one of the chefs pushing culinary boundaries, while at the same time honoring his own heritage and cooking delicious food that brings us together.

Under Tiffanie’s creative direction, One Flew South was named "Best Airport Bar in the World" by Tales of the Cocktail and hailed as one of the best by numerous press outlets. Dubbed “The Drinking Coach” due to her passion for and knowledge of spirits and her ability to “coach and coax” her customers into trying new drinks, the Louisiana native discovered her love for the cocktail culture while working behind the bar in college. She credits her success to her mentor who encouraged her to try something new behind the bar every day. While working in corporate training for Longhorn Steakhouse, Tiffanie stumbled into an interview that landed her in front of One Flew South's award-winning Chef Duane Nutter and the rest is history. Since the restaurant’s opening in 2008, Tiffanie has overseen and operated the award-winning beverage program at One Flew South in the world’s busiest airport. After that, he moved into fine dining at the now defunct Farm 255, where he developed the first craft cocktail program in Athens (after staging with Miles Mc. At Leon's Full Service). He moved to Atlanta after taking a job with National Distributing Company as their in house mixologist and craft spirit specialist. He spent almost 2 years with the distributor before taking over as lead bar at Holeman and Finch Public House, spending 2 years running that program. That program, in 2007, was the birthplace of Atlanta's craft scene. Since November, he has been an Account Consultant for Enthuse Marketing Company, representing the Diageo Reserve Portfolio in Atlanta. Miles Macquarrie As a baby, Miles Macquarrie opted for a Japanese Style 2:1 jigger over a pacifier. Known to many as “Miss Libation,” Toki’s resume includes time crafting c ocktails at the world famous Holeman and Finch, as head mixologist at Southern Art and Bourbon Bar in the Intercontinental Hotel in Buckhead, as well as the renowned One Flew South in Atlanta’s Hartsfield-Jackson International Airport. During her time alongside Executive Chef Duanne Nutter at One Flew South, the restaurant was named #1 airport bar in the world by Tales of the Cocktail, a spirits and bartender convention held in New Orleans every year. One of the top personalities in the bartending and beverage industry today, Toki’s philosophy of perfecting the art and craft of mixology is using fresh ingredients and quality spirits so that cocktails mirror the cuisine coming out of the kitchen. On this episode of “Hot off the Press,” Chef Pete invites restaurateur Reggie Washington to Sunset Pointe just ahead of the debut of Reggie’s newest venture, Southern National, set to open next year. A native of Mobile, AL, Reggie moved to California after high school and worked as a barista at Starbucks in Beverly Hills (the first one to open outside of Seattle). After losing nearly everything in the Northridge earthquake that hit in 1994, Reggie returned to Alabama to attend culinary school in Montgomery. His career includes two and a half years as executive chef for Alabama Gov. Fob James, as well as stints with Marriott and Hyatt. Reggie met his business partner Chef Duane Nutter while both working at the acclaimed One Flew South restaurant in Atlanta’s Hartsfield-Jackson International Airport. Twice nominated for the James Beard Award for Outstanding Service, One Flew South serves cuisine inspired by world travels and prepared largely with high quality, fresh, local ingredients. Born in Morgan City, LA and raised in Seattle, Chef Nutter began his culinary career in 1994, studying under Chef Daryl Evans at the Four Seasons Hotel in Atlanta. He went on to work at the Ritz Carlton in Palm Beach, FL and Seelbach Hilton’s Oakroom in Louisville, KY. In 2006, he was invited to compete on the Food Network’s “Iron Chef America” and then cooked at the prestigious James Beard House in New York City the following year. With a shared belief that a great food scene is the key to a thriving downtown, and with help from the Downtown Business Alliance of Mobile, Reggie and Duane selected a prime location in the Mobile Arts District for their new restaurant. Southern National will be located in the Mobile Arts District, just across from the Cathedral Basilica of the Immaculate Conception and will serve “southern food with a national influence.” The restaurant will be housed in a mid-nineteenth century building located at 360 Dauphin Street. Also joining the Southern National team will be beverage director and mixologist extraordinaire Tiffanie Barriere. Southern National is slated to open in January 2017.
