Author Bio: Toni Tipton-Martin is an award-winning food and nutrition journalist who is busy building a healthier community through her books, foundation and in her role as Editor in Chief of Cook's Country Magazine and its television show. She is the recipient of the Julia Child Foundation Award, which is given to an individual (or team) who has made a profound and significant difference in the way America cooks, eats and drinks; is a three-time James Beard Book Award winner; and she has earned the International Association of Culinary Professionals (IACP) Trailblazer Award, its Book of the Year Award, and Member of the Year Award. She appeared as a guest judge on Bravo's Top Chef, was featured on CBS Sunday Morning's annual Food Show and in the anthology, Best Food Writing of 2016. She received Notable Mention in The Best American Essays of 2015 and is profiled in Aetna's 35th Annual African American History Calendar. Former First Lady Michelle Obama invited Toni to the White House twice for her outreach to help families live healthier lives. In 2014 she earned the Southern Foodways Alliance John Egerton Prize for this work, which she used to host Soul Summit: A Conversation About Race, Identity, Power and Food, an unprecedented 3-day celebration of African American Foodways. Toni has been a guest instructor at Whole Foods Culinary Center, and has appeared on the Cooking Channel's Foodography and the PBS feature Juneteenth Jamboree. She has been a featured speaker at the Library of Congress, Duke University, the University of North Carolina – Chapel Hill and Charlotte; Austin History Center; the Longone Center for American Culinary Research, William L. Clements Library, University of Michigan; Roger Smith Cookbook Conference; Foodways Texas; Culinary Historians of Southern California; International Association of Culinary Professionals; Les Dames D'Escoffier; Webster College; Prairie View A&M University; Women Chefs and Restaurateurs; the College of Charleston; Mississippi University for Women; and Austin Foodways. This podcast is a little different from our previous episodes.  In this episode, we host two culinary greats to discuss their passion for food and feeding the hungry.  Toni Tipton-Martin is a culinary journalist, author and a pioneering advocate for the preservation and education of cultural heritage as it relates to cooking, food, and community.  Also joining us is Chris Williams, a classically trained chef, restaurateur, and most recently, founder of the nonprofit organization, Lucile's 1913 in Houston, whose mission is to feed those in need while addressing food insecurity and food waste. Both are headlining VNA's upcoming signature fundraising events: Chris, at the Cocktails in the Kitchen event and Toni at our Celebrity Chef event in March 2022. Throughout her career, Toni Tipton-Martin has used cultural heritage and cooking to build community.  She is Editor in Chief of Cook's Country by America's Test Kitchen, a PBS television show host, a two-time James Beard Award winner for her books on African American cooking, and she recently was awarded the prestigious Julia Child Award, which is given to an individual (or team) who has made a profound and significant difference in the way America cooks, eats, and drinks. Toni's latest book, Jubilee: Recipes From Two Centuries of African American Cooking, brings to life 125 dishes from the African American cookbooks in her rare collection. Jubilee is a James Beard Award winner, earned the IACP (International Association of Culinary Professionals) Book of the Year Award, and was named one of the “Cookbooks You Need for 2020” by the New York Times. In 2008, Toni founded the SANDE Youth Project, a 501c3 organization, whose mission was to increase wellness by celebrating cultural heritage, community role models and ancestral recipes. In 2021, the organization was re-named the Toni Tipton-Martin Foundation and its mission was re-engineered in an effort to help the next generation of aspiring women gain knowledge and skills in the areas of food and cultural heritage writing. Chef Chris Williams is the Founder and Owner of Lucille's Hospitality Group in Houston, Texas. Classically trained in French, Mediterranean, West Indian and East African cuisine, Chef Williams has made a name for himself serving up well-refined Southern food with international infusions at his restaurant Lucille's—opened as a tribute to his great grandmother and culinary pioneer Lucille B. Smith. Chef Williams has served as the lone culinary cultural ambassador for the USA for three years, advancing food diplomacy in destinations like Croatia, Slovenia, and Ukraine. He is also a member of the Southern Food Ways Alliance, an organization that documents, studies, and explores the diverse food cultures of the changing American South.Williams' most recent endeavor, Lucille's 1913, is a nonprofit he founded. The organization mimics the ethos of his restaurant group and its namesake: functioning as a conscious community collective that is building a vertically integrated ecosystem to combat food insecurity and waste; creating training and employment opportunities in traditionally under-resourced neighborhoods; and empowering communities to discover a self-sustainable livelihood through food.  To date, Chef Chris and the Lucille's 1913 team have provided more than 350,000 meals to Houstonians in need since the start of the COVID-19 pandemic. Williams is part of Restaurant Hospitality's coveted 2021 Rising Star class and most recently was named to Bon Appetit's inaugural “Heads of the Table” Awards List, which honors the trailblazing, community-building, future-making leaders changing the restaurant industry.

Go ahead and grab the ingredients below (Arati starts listing them at 1:25) before starting the episode.Toni Tipton-Martin's Salmon CroquettesServes 4 to 8Ingredients 1 (14.75-ounce) can pink salmon, or 1 pound cooked salmon1/4 cup finely minced celery1/2 cup finely minced onion1 teaspoon fresh lemon juice1 teaspoon salt, or to taste1/2 teaspoon black pepper1/4 teaspoon cayenne pepper (optional)1 1/2 cups fine dried bread crumbs (preferably homemade) or cracker crumbsFlour, for your handsOil, for pan-fryingTartar or Rémoulade sauce, for servingIn a medium bowl, break up the salmon. If using canned, mix with a fork until the bones and skin are well blended. Stir in the celery, onion, lemon juice, salt, black pepper, cayenne (if using), the eggs, and crumbs.With a 1/4-cup measure and lightly floured hands, scoop the salmon mixture, then shape into 8 flat discs. (Or, for bite-size hors d'oeuvres, scoop 2 tablespoons of the mixture and shape into 16 discs.)Pour 1/2 inch oil into a large skillet and heat to 350°F over medium-high heat. (Use a thermometer, or flick in a few bread crumbs; if they sizzle almost immediately but don't burn, the oil is ready.) Adjust the heat to maintain this temperature.Working in batches (do not crowd the pan), fry the croquettes until golden brown, turning over once, about 3 minutes per side (less if making them small). Using a fork and spatula will help make turning easier and prevent croquettes from breaking. Drain on paper towels. Tiffanie Barriere is the epitome of southern hospitality—warm, kind, and welcoming. She’s just the person you’d want as your drinking coach, which is fitting: The Drinking Coach is a moniker given to her by a friend, and it eventually became the name of the Instagram account where she shares stories of uncelebrated Black people throughout history, with a cocktail alongside. Tiffanie is more than an incredible bartender—she’s a teacher, a mentor, and a historian, using her platform to shed light on long-forgotten stories. Tiffanie started her journey at One Flew South, the first upscale restaurant in Hartsfield-Jackson Atlanta International Airport. She worked as the beverage director at the restaurant for seven years, during the time when it was recognized as the “Best Airport Bar in the World” at Tales of the Cocktail. Now, as an independent bartender, Tiffanie is getting her own recognition for her contributions to the bartending and service world. Earlier this year, she was featured on the cover of Imbibe Magazine’s 75 People to Watch issue, and most recently announced her involvement in the Jubilee project, a venture by award-winning food and nutrition journalist Toni Tipton-Martin. In our conversation, Tiffanie and I talk about what sparked her interested in service and how it grew into a passion. She shares the difficulties of striking out on her own as an independent bartender, and also talks about inspiration, and why she is her ancestors' wildest dreams come true.

Food writer Corby Kummer took Boston Public Radio behind the scenes of his end-of-year list of the best cookbooks on Tuesday. The list appears in The Atlantic and is a diverse collection of food literature. "I tried for cultural variety, I tried for something that's educational, and I tried for something we don't know, I don't know, in addition to the cook book literature," he said. "The ones I picked were stuff I didn't know about, and was so excited to learn." Kummer described one of his selections, "Jubilee: Recipes From Two Centuries of African American Cooking" by Toni Tipton-Martin, as more than a cookbook, but a piece of "deep scholarship." "She decided to do a beautiful out and out picture book," he said. "The whole book was delayed two years because of her insistence that the food stylists and photographers be African American. It's been so hard for them to break into the publishing biz and food styling biz. It took a long time, the publisher was willing to wait, they did it, and it's a gorgeous book." Corby Kummer is executive director of the Food and Society policy program at the Aspen Institute, a senior editor at The Atlantic and a senior lecturer at the Tufts Friedman School of Nutrition Science and Policy

Welcome to Sounds of the Summit, a compilation of stories, music, oral histories, and regional food studies collected during the 2016 Appalachian Food Summit in Berea, Kentucky. Back in 2013 or thereabouts, an interesting discussion developed on Facebook. Did cornbread have sugar in it? Or not? There were enthusiastic supporters on both sides, so much so a few enterprising folks decided to create a Facebook group dedicated to Appalachian Foodways. Then someone, maybe food writer Ronni Lundy, suggested we meet and discuss this important issue. Maybe over food. And fellowship. And bourbon. And more food. With those words the first Appalachian Food Summit was born. That first year at Hindman Settlement School we had a church potluck, talked about heirloom seed saving, recorded oral histories, and listened to incredible bluegrass music. The following year saw us in Abingdon, Virginia at beautiful Heartwood, where Chef Travis Milton created a gourmet cafeteria-style meal he deemed "The Fancy Ass Picadilly" and Nancy Bruns of JQ Dickinson Salt-Works taught us all about the origins of salt mining in West Virginia. Just to name a few. Because Appalachian lessons? Stories? There were a lot. It must have been quite something because the Southern Foodways Alliance awarded AFS its John Egerton Prize in 2015. This year found the summit in Berea, Kentucky where the college has given us a home base in which to explore themes around regional identity, myths, and the culture of extraction for the next few years. The theme was "Routes and Roadways" and over two days dozens of authors, scholars, and foodways enthusiasts presented their findings. Appalachia is a traveled region, whether you're headed up the hill, through the holler, or just a traveler passing through. It's been that way for hundreds of years. What has changed? What hasn't? The 2016 summit attempted to find out. And find out it did. In this episode I present seven summit speakers intertwined with my own thoughts after attending. It's a unique episode and one I had great joy creating. As they say in the movies I laughed. I cried. And in the end it reminded me why the Appalachian Food Summit remains the food cause closest to my heart. Writing Work. Are West Virginia pepperoni rolls "just" bread and pepperoni? Or is it something more? Food as symbol of Appalachian identity, culture, and pride. Meet Courtney Balestier who used the word "just" as the starting point and focus of her talk at this year's Appalachian Food Summit in Berea, Kentucky where this conversation was recorded. Where most people see just a few ingredients, a simple food easy to dismiss, Courtney sees something ingenious and quite meaningful. Courtney is a James Beard-nominated fantastic new voice in food writing and her thoughts on the devoted followers of the pepperoni roll is a big reason why. Not only did it originate in West Virginia, it's the state food. But unless you grew up there you may not have heard of it. Once you've tasted one? Expect regular cravings. Like other regional favorites there are heated discussions as to what constitutes the proper roll. Cheese or no cheese? Sticks or medallions? No matter your preference, everyone agrees the bread must come from a handful of small bakeries in West Virginia and nowhere else. What happened when Sheetz tried to source outside the region? Why was the roll created in the first place? We talk about that as well as the interesting source behind Courtney's piece, published in Vice Munchies last year. Hear her presentation in its entirety during next week's BONUS episode, "Sounds of the Summit" to benefit the 2017 Appalachian Food Summit. Courtney discovered food writing kind of by accident. After getting her Master's degree in Magazine Journalism from NYU she worked for Everyday with Rachel Ray, freelanced for magazines both in food and music, then came to a crossroads. Music or food? Which one drove her passions? Ultimately food because so many issues can be addressed using it as a starting point. Including Appalachian identity, a focus close to her heart. "You don't know your identity until you leave a place." - Toni Tipton Martin, author of The Jemima Code Courtney didn't care about Appalachian cuisine until she graduated from WVU. Although not born in West Virginia, she went to school there and feels an affinity with the region. What is her Appalachian identity? Where does she fit in? One way is through food. Everybody eats after all. I can relate. As a woman from Richmond, with relatives in the Shenandoah Valley and Appalachia, I'm not from there either. But I am. My roots are shallow but my connection to this region is as deep as the gorges I drove through on the way to the summit. But am I allowed at the table? Or do folks with deep roots have more say in what happens in this region? Are enthusiastic transplants equally welcome? For a long time Appalachia has been a region of extraction, where folks take resources for use somewhere else. With this being the norm for so long, can folks with deep roots welcome newcomers who want to help? We talk about the advantages and disadvantages of this as well as the ramifications behind Appalachia becoming the culinary world's newest darling. What happens when folks attempt to interpret Appalachian cuisine in new ways through books like Ronni Lundy's, Victuals? Are these recipes historical artifacts to be preserved or jumping off points for new creations? Courtney has been published in all the giants: Oxford American, The New Yorker, Lucky Peach, Punch, just to name a few. Her piece "Let Us Now Retire the Whiskey Woman" was nominated for a James Beard award last year and acts as a jumping off point for a terrific discussion on the "Cool Girl" gender stereotype in the world of food. Meet the "Whiskey Woman," a stereotype that came into its own with Gillian Flynn's novel, Gone Girl. The spirits industry followed soon after with commercials starring Mila Kunis and Christina Hendricks embodying a superficial carefree-no-worries-but-can-drink-you-under-the-table woman popping up all over. Why is this bullshit? What's the difference between a Whiskey Woman and a woman who just prefers bourbon? We'll "woman-splain" in this episode. ;) We also delve a bit into gender studies related to the world of food writing. Is it more celebrated now because more men are tackling it? Women have always excelled in this genre, but more often men win the awards. Why is that? And why isn't food writing more popular? What has been her food writing journey and what tips does she have for new writers? That's here too. The Appalachian Food Summit is a perfect forum to present these kinds of stories. Stories that preserve history. Stories that teach and dispel long-held myths around regions of our country and its beloved foods. Toni Tipton Martin was just starting out as a reporter back in the 1980's, when she noticed something that struck her as odd about the cookbook section of the newspaper she was working for. There were no cookbooks by black people. “That just didn't jive with my experience,” she says, having grown up in an African American household of skilled cooks. “It didn't make sense that African Americans didn't make any contribution at all.” Little did Toni know that that observation would set her on a multi-decade journey of research and discovery.
