When we talk about Wheat, it’s easy to get as far as Gluten and stop the conversation. With all the talk about the one factor, we forget it’s not just a matter of gluten. As we’ll discuss today with our guest Bob Quinn from Big Sandy Organics in Big Sandy Montana, there’s more than gluten to the issue. Together, we’ll discuss how Bob became a pioneer in Organics, what Kamut ancient grain is, value subtracted food, reviving rural jobs, and much more. Show Notes After Bob finished his PhD in Bio-Chemistry, he decided to move back to the family farm. Bob’s been an Organic farmer since before the National Organic Standards were written, originally following the California Organic Standards since that was the state he had been selling to at the time. With his background in science, Bob hasn’t taken reports at face value and has turned his farm into his laboratory experimenting with various methods in the Organic System. The Kamut (Kam-oot) is a trademark brand of an ancient grain which Bob has developed a market. Because this grain has had less modification and hybridization over the centuries, raised Organically it may be easier to consume for people with wheat sensitivities. Because of the way Wheat is conventionally ground and baked, we find less nutrition, higher gluten, and a product which is over-all less healthy for the consumer. It’s suggested that sourdough fermentation can significantly reduce the gluten content of a bread. Show Notes Cliff’s on-farm store is a place where he’s provided the ingredients for entire meals Without a traditional farming background, Cliff started in the insurance business working in downtown Chicago. The gateway to farming was Food Inc. and Joel Salatin’s writings. Since Cliff had 8 acres on his property, he decided to try raising some of his own food. It’s a great talk about local food, be sure to enjoy this interview with John Des Rosiers. Shownotes Tasting wine for the menu is more than drinking, it is a matter of finding wine which incorporates with the philosophy and flavor of the food served. The process of turning a live animal into dinner can be uncomfortable for many people, and not all methods of achieving it are equal. There are different ways and attitudes of going about forming your favorite cut of beef. Our guest today is going to talk about his approach. Brandon Sheard from Farmstead Meatsmith is joining us to discuss the attitude of harvesting an animal, how he choice butchering over academia, the myths of on-farm slaughter and much more. Today we don’t just dive into the technicalities of deconstructing an animal, we’re going to talk about the attitude and worldview behind the process. Show Notes Brandon is an English major, started in academia, but found himself wanting to do something different. They operate their custom processing business in Washington State. To-date Brandon hasn’t found the bottom of what it means to slaughter an animal, the depth of what that means and how to verbalize it. Brandon learns first through the actions, then processes into how to describe and teach it. It’s only after acting, using your words, being wrong in how you describe it, and refining it that you can actually have a theory or principle. We are joined today by Jill Winger, from the Prairie Homestead. She and her family pursue a lifestyle of modern homesteading on the wide-open prairies of Wyoming. She blogs at The Prairie Homestead where she encourages others to return to their roots, no matter where they live. Recently, Jill has also become the author of The Prairie Homestead Cookbook. Today we’ll be discussing how Jill started homesteading, dealing with blizzards, the success of her popular blog, the lost art of cooking and much more. Show Notes: On the homestead, they raise gardens, chickens, beef, dairy cattle, sometimes hogs. According to the statistics, Jill and her family were snowed in the worst blizzard since the 1970’s. Jill started her blog as a means of self-expression in an area where she didn’t have anyone to tell about her homestead. A way of sharing about what they were doing. The success of the blog has chiefly come from a focus on helping and sharing value with the readers. If you want to get traction on your farm or homestead blog, it requires being clear on who you are and how your content is going to help other people. Cooking is an essential skill for modern homesteading, one required once you start getting food growing on the homestead. Our guest today is Curtis Stone the farmer of Green City Acres. Curtis is a farmer, author, speaker and consultant. His area of expertise is in quick growing, high value annual vegetables for direct consumer market streams. Together, we’ll discuss a wide range of topics, discussing how he applies the Pareto Principle or the 80/20 rule on his farm, how that can provide a quality of life, virtue signaling in agriculture, trends in the future and much more. This was a great interview, we cover a lot in a short time. Just so you are aware there will be a little swearing in todays episode and an absence of political correctness, so if you are easily offended by either please listen to a different episode. Shownotes Green City Acres was started in 2010, Curtis learned that he could maximize a smaller amount of acres to have increased production. Curtis uses the Pareto Principle, or the 80/20 rule. The rule is in essence that 80% of your outcomes come from 20% of your input. Within the last two years of being a dad, Curtis has started using this principle even more so he can spend more time with his family. The interest in farming started with a desire to know how to survive in a worst case scenario. Curtis has worked to make his life Anti-Fragile, working to have greater upside in spite of any downside. Can you learn more in less time by leveraging other people’s experiences? By starting his membership site, Curtis eliminated the trolls. There are exciting opportunities for integrating new technologies into the market gardening business.
