In this episode we're learning about growing microgreens and herbs in a hydroponic vertical farm. Andrey Salazar and Guillermo Borges from ALLPA Vertical Farms in Calgary, Alberta, share the story of how they became urban farmers. As they explain, it takes a lot of hard work, some trial and error, specialized technical expertise and a little luck. Vertical farming is the practice of growing crops in vertically stacked layers. In the ALLPA farm, stacks are 14 feet high. The environment is carefully controlled for optimal temperature and light, and the plants are fed exactly the nutrients they need for growth, nutrition and amazing flavour. This episode first came about when Erin bought ALLPA living basil at the local market and declared it the best basil she had ever eaten. The pesto from this basil is absolutely fantastic! We've since been adding microgreens into our sandwiches, on burgers, as side salad, you name it. Any place you'd normally add lettuce (think tacos or wraps), microgreens will give more flavour and extra nutrition. The radish microgreens may be our favourite - they're spicy and add a nice kick to everything. In the second half of the episode we give you some ideas for incorporating microgreens into your meals. If you're in Alberta, please give ALLPA a try (check their website for locations). But wherever you happen to be, we encourage you to source a local grower of microgreens. The city of Detroit in the United States has a lot of vacant space – as much as a quarter of residential, commercial and industrial sites lie unused today. In this programme Ruth Alexander meets the people who are growing food in their neighbourhoods, creating urban farms and community gardens where houses once stood. Mark Covington is the founder of Georgia Street Community Collective, and Tyson Gersh is the co-founder of the Michigan Urban Farming Initiative. Ruth learns why so much land stands empty from the city's official historian Jamon Jordan. Jamon explains the role of the automobile industry in bringing jobs and people to Detroit in the early 1900s, and the circumstances that led to decades of population decline, job losses and debt for the city government, culminating in bankruptcy in 2013. Tepfirah Rushdan is the newly appointed, first Director of Urban Agriculture for the city of Detroit. She explains how she hopes to bring urban farmers and politicians together to find a way for food to be grown alongside new developments as investment returns to the city. With the recent news that Mike Aldridge was talking his Mid City Smash Burger to Bend, we felt it appropriate to bring back our conversation with Mike about the origins of Mid City. ORIGINAL POST: Chef Mike Aldridge has been on quite a career and personal journey over the past couple of years. Mike, a native North Dakotan, has cooked in some of Portland's well-known restaurants, including Urban Farmer, Imperial and Headwaters, among others. He became chef at the coastal restaurant, Salmonberry Saloon in 2017 and garnered lots of press for making hay in a region not known for great dining. After leaving there, he started his own pop-up, Ope, in Portland, with the goal of opening up a place near Mt. Hood, where his heart as a winter enthusiast had always drawn him. His love of New Orleans drove him to expand his horizons there in early 2019, but when the pandemic hit in 2020, his plans were derailed, as restaurants struggled through yet another calamity in that city. To make ends meet, he started making burgers at home and offering them to friends and neighbors. Before he knew it, he was sold out each time he put his burger party together. A few years ago Vishu Nath was leading the kitchen at Urban Farmer, a restaurant concept at the snazzy new Westin Downtown Cleveland that was known for its local sourcing, quality steaks, to-die-for charcuterie and a killer brunch. Now, he leads the food service operations for Delaware North at Progressive Field where he's focused on providing variety and quality to 10,000 guests or more each game day and making sure the venue's special events, suites and team catering are running smoothly. He enjoys the change and really likes crafting some of the new ballpark food concepts that fans crave, like the popular BBQ pork and Mac and cheese waffle cone. We talk about some of the new foods this year and just how many hot dogs he has ordered so far and he hints to some of the things they are working to introduce next season.
