The world's farming soils are deteriorating quickly.Conventional coffee farming where plants are grown using agrochemicals allowed farmers to reap huge harvests these last 70 years. But these agrochemicals have been at the expense of soil health. I travel to Honduras to explore a potential solution: organic coffee farming.Come with me as I show you the organic farming tricks of Don Rufino, one of the region's leading organic farmers. He nurtures the soil around his coffee trees using mountain microorganisms, a huge diversity of shade trees, attentive tree pruning, and very funky batches of homemade bug spray. The results speak for themselves: when I pick up a handful of his soil, it is moist, dense and writhing with life. Derek's inspiration to create CafĆ© Conmigo originated from a trip he took to Argentina. It was there that he fell in love with a quaint little cafe, which featured delicious coffee served in a tranquil space and enveloped with ample arrangements of lush green plants. During his time in college, he developed a further affection for Latin American culture through the relationships he nurtured with his many Spanish-speaking friends. Although he attended school in Austin, Texas, he felt as though he was studying abroad due to the highly diverse make-up of the student body. The name of Derek's coffee shop is Spanish for ācoffee with me,ā and it pays homage to this significant period of his life.Derek's drive to become an entrepreneur began at an early age with his involvement in the family business. His parents' work ethic made a lasting impression on him, and they often encouraged their son to work for himself. After exploring a few early ventures, including a website that helped university students to buy, sell, and swap textbooks and furniture, he decided to do something that was more suited to his personality. Although he was interested in boutique hotels and restaurants, Derek felt that launching a cafĆ© allowed him to test his hand at hospitality, albeit in a way that was in better alignment with his current level of food and beverage experience. After consulting with T.J. Ask anyone in the Pittsburgh coffee scene about TJ Fairchild and the words ālocal coffee legendā quickly follow. Ā Why do I feel fit but still fat over my muscles? Ā Why is losing weight a struggle for some people even though we do everything we hear about on podcasts, blogs and social media. Ā We brag about how long we go fasted and how much we worked out without eating anything ā but are you causing more harm than good?Ā Ā How do you know if you are creating additional stress in your body instead of burning fat, improving mitochondria and reaching peak performance gains? Ā What works for one person may now work the same for you. Ā We are all unique individuals. Ā There is no perfect diet for everyone. My guest on today's podcast is one fascinating dude. His name is , and originally (after setting the world record for the world's longest bungee jump), he founded Corsidian, which grew to be the largest provider of call center software in Latin America. After Corsidian installations in 13 countries and offices in 5, Andrew sold the company in 2011.Ā He then turned to coffee. It was clear to Andrew that coffee had tremendous health benefits, and decided to work with the best in defining what makes coffee so good for you, and to figure out how to get rid of notorious bad stuff in coffee such as pesticides, yeast, mold and a series of flavor imperfections.Ā He worked with a Professor named Adriana Farah for over 18 months to lab test coffees and to figure out how to source the right beans, with no consideration for cost and convenience, with the correct roast curve, organic source and freshness. He then validated his coffee against 49 of the most popular brands in the market. His goal was to decide on every step of the production chain what decision would avoid damage and maintain antioxidants in the coffee. That is not the driver for most decisions about coffee because the concern normally is taste and cost. Andrew asked a different question and the answers led him to decisions not normally made by coffee companies. The result was a coffee called "", that is not the result of what Andrew did in the lab but the result of over 30 choices in the production chain prioritizing health above everything without exception. Andrew personally made every one of those decisions and explains why on today's podcast, explaining how he asked different coffee questions to the best experts in the industry, not just coffee scientists but from the farmers and everyone else involved in every step of production.
