Son père, José Privat, est compositeur et pianiste du groupe martiniquais Malavoi. C'est lui qui l'encourage à apprendre le piano dès l'âge de six ans. Après dix ans de formation classique, Grégory se met à la composition et à l'improvisation, particulièrement dans le jazz.De 2004 à 2007, il mène une double vie, suivant l'enseignement d'une école d'ingénieur à Toulouse le jour, jouant dans des clubs de jazz la nuit.
