Tracey of @an_upcycled_life in New Zealand has just completed a dress using tablecloths and lace she collected from her mother, grandmother and at op shops. Her Instagram account was originally called @an_upcycled_wedding but as time has gone on, it's now her life that includes reusing existing clothes as her fashion fabrics. One popular Auckland store is going against the grain in an effort to keep some of those clothes alive. A shop called Crushes on Karangahape Road - K Rd - takes unsellable clothing and makes it store-ready again. Co-owner Rose Hope has been doing it for 13 years now. She speaks to Emile.

In a very clean bowl whisk the egg whites until stiff. Gradually add the sugar, a little at a time, whisking well in between each addition. Draw a wreath shape on baking paper (or parchment NOT greaseproof paper) using a pencil, plate and ramekin or glass as a guide. Flip the paper over (so the pavlova isn't touching the pencil marks) and stick it to a baking sheet using a dot or two of the egg white mixture as glue. Spoon in dollops onto the template and smooth the top so it's flat. Bake at 140C for about an hour. Turn off the oven and allow the pavlova to cool in the oven. Couli: Meanwhile, make the sauce. Mash the raspberries and then squish through a sieve. Stir in 2tbsp of the icing sugar. Topping: Whisk the cream in another bowl and then stir in the other 2 tbsp icing sugar. When you are ready to serve, top with cream, fruit, coulis sauce and some mint springs. Email feedback@dontshootpod.com.au or join us on Instagram or Facebook.   This podcast is produced by Corrie Perkin and Caroline Wilson and produced, engineered and edited by Jane Nield for SEN.  You can listen to Home Style with Shaynna Blaze on Spotify HERE Crispy Sticky Mongolian Beef by Tin Eats - recipe HERE BEEF AND MARINADE 8 oz / 250g beef steak (rump, scotch or flank), sliced into 1/5" / 3mm slices (Note 1) 1 tsp soy sauce 1 tsp cornstarch/cornflour 1 tsp vegetable oil SAUCE 2 tsp cornflour / cornstarch 1/4 cup water 2 tbsp soy sauce (light or all purpose, NOT dark) 1/4 cup chicken broth 1 1/2 tbsp Chinese cooking wine or dry sherry, or more chicken broth (Note 2) 3 tbsp / 1/4 cup brown sugar, lightly packed CRISPY BEEF 1/4 - 1 1/2 cups vegetable oil (Note 1) 1/4 cup cornstarch/cornflour STIR FRY 1/2 tsp ginger, finely minced 2 garlic cloves, crushed 2 scallions/shallots, cut into 1 1/2" / 4cm pieces on the diagonal Instructions BEEF AND MARINADE Combine the Beef and Marinade ingredients in a bowl and marinate for 10 minutes (though you could even leave it overnight). SAUCE Mix the cornstarch with a splash of the water. Then add the remaining Sauce ingredients, including remaining water. CRISPY BEEF AND STIR FRY Add 1/4 cup cornstarch and use your fingers to lightly coat the beef. Heat 1/4 cup oil in a wok (Note 2) over medium high heat. Add 1/2 the beef and cook the first side for around 45 seconds or until golden and crisp. Then flip (I use an egg flip) and cook the other side for 30 - 45 seconds until golden and crisp. Remove onto a paper towel lined plate. Repeat with remaining beef. Discard the oil, leaving behind about 1 tablespoon in the wok. Add the ginger and garlic and sauté for about 15 seconds. Don't let it burn! Add the Sauce into the wok. Bring it to a simmer and let it cook for about 1 1/2 minutes or until it thickens into a glossy sticky sauce. Add the beef and scallions, toss to coat and cook for a further 30 seconds. Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Learn more about your ad choices. Email feedback@dontshootpod.com.au or join us on Instagram or Facebook.   This podcast is produced by Corrie Perkin and Caroline Wilson and produced, engineered and edited by Jane Nield for SEN.   Geoff Slattery's Pear and Quince Crumble (from Simple Flavours)   THE FILLING 3 quinces, peeled, seeded, cut into smallish pieces and tossed in lemon juice 4 pears, peeled etc as for quinces 30–40g white sugar — Taste as you go. You could need more sugar depending on the sweetness of the pears. Don't use brown, as it colours the puree.   THE CRUMBLE 1 cup self-raising flour, sifted ½ cup brown sugar — Demerara sugar makes for outstanding results for this dish. It seems to provide just that extra bit of crunch that turns a crumble into seventh heaven. about 100g cold butter, cut into cubes   1 Put the fruit and sugar into a flattish bowl which can go into a microwave. Cover with plastic wrap and cook on high (500 watt) for 20–25 minutes until the fruit is butter-tender and has given off a deal of juice. 2 Toss the lot into a whizzer and process to a fine puree. Taste again. Set aside to cool. 3 Mix the flour and the sugar, and work in the butter piece by piece until the mixture has the consistency and appearance of breadcrumbs. Set aside. You might like to make double, for another crumble the day after you demolish this one. 4 Spread the fruit mix over the bottom of a pie dish, and sprinkle the flour-sugar-butter mix over the top, to a depth of about a centimetre. You can do this if the puree is still hot. 5 Bake in a 200°C oven for 25–30 minutes, until the crumble has browned and has cooked through. Usually the puree will be starting to bubble a little at this point. Don't let it get too aggressive, lest it bursts through the crumble. 6 Serve with vanilla bean ice cream. You can serve with cream, but for a very hot crumble, straight from the oven, you can't beat the temperature variation and texture that come from perfect ice cream. Any combination of quinces and apples and pears; or apples and pears; or rhubarb; or raspberries, blackcurrants or gooseberries in season work well in this crumble.   Learn more about your ad choices. Anna's Christmas recipe: Turkey Brine - essential for a (dare she says it) moist Turkey Ingredients:8 litres of water 3 cups of apple cider vinegar 2 cups of brown sugar 1 cup of salt 3 tbsp of peppercorns 5 bay leaves 5 cloves garlic, finely chopped4 sprigs of Rosemary, leaves stripped off The peel of 3 oranges 1 turkey   Method: 1. Combine all the ingredients in a large pot with 8 litres of cold water. Stir until salt and sugar dissolved. Bring it to boil, then turn off the heat and cover. 2. Allow to cool completely (the recipe takes a while so give yourself time). Then put in the fridge to chill. Place washed, uncooked Turkey in the chilled brine solution and refrigerate for 16 - 24 hours (event overnight is fine).3. When ready for Christmas Day, remove the Turkey from the Brine, put it in another pot filled with cold water for 15mins, just to remove the excess salt. 4. Pat dry with paper towl and cook accoding to your normal roasting method. Voila!
