Line two baking sheets with parchment paper.Use a vegetable peeler to peel away strips of eggplant skin from top to bottom, leaving the eggplants with alternating strips of black skin and white flesh, like a zebra. Cut crosswise into round slices, ¾”/2 cm thick, and place in a large bowl. Mix well with 5 tbsp/75 mL of oil, 1 tsp of salt and plenty of black pepper, and spread out on the prepared baking sheets. Roast for about 30 minutes, or until completely softened and lightly browned. Remove from the oven and set aside.Decrease the oven temperature to 400°F.While the eggplants are roasting, put 2 tbsp of oil into a large sauté pan and place over medium-high heat. Add the onion and cook for about 7 minutes, until softened and lightly browned. Add the garlic, chili flakes, cumin, cinnamon and tomato paste and cook for 1 minute, or until fragrant. Add the bell peppers, chickpeas, canned tomatoes, sugar, water, 1 ¼ tsp of salt and a good grind of black pepper. Decrease the heat to medium and cook for 18 minutes, or until the bell peppers have cooked through. Stir in ¾ cup/15 g of cilantro and remove from the heat.Spread out half the plum tomatoes and half the roasted eggplants in a large baking dish, about 9 x 13″/23 x 33 cm. Top with the chickpea mixture, then layer with the remaining tomatoes and eggplants. Drizzle with the remaining 1 tbsp of oil, then cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 20 minutes, or until the sauce is bubbling and the tomatoes have completely softened. Remove from the oven and let cool for about 20 minutes.Top with the remaining ¼ cup/5 g cilantro and serve either warm or at room temperature.

Grease a 21 cm round cake tin with butter and line with baking paper.Cream the butter and sugar together using either a wooden spoon or a stand mixer fitted with a paddle attachment, until light and fluffy.Add the eggs, one at a time, beating well between each addition.Spoon in the ricotta along with the vanilla and lemon zest.Add the flour and gently mix until the batter is smooth and the flour is well incorporated,Stir in the pear then spoon the batter into the prepared tin.The batter will be quite stiff so be as gentle as possible.Top with pine nuts and bake for 45 minutes or until skewer comes out clean when inserted in the centre.Leave to cool in the tin for a few minutes then invert onto a wire rack to cool completely.Light dust the cake with icing sugar before serving.Can be served with cream or plain yoghurt and blueberries.Don't Shoot the Messenger is produced by Corrie Perkin, Caroline Wilson and produced, engineered and edited by Jane Nield for Crocmedia.

Get the recipe HERE from the Weekend Australian or below.Salmon Tray Bake by David Herbert12 stems broccolini1 small cauliflower, trimmed and cut into 8 wedges2 red onions, cut into wedgesExtra-virgin olive oil4 salmon fillets1 teaspoon sesame seeds4 spring onions, thinly sliced-For the dressing2 tablespoons soy sauceFinely grated zest and juice of 2 limes2 tablespoons toasted sesame oil3cm piece fresh ginger, grated1 red chilli, deseeded and finely sliced (reserve some to garnish)Heat oven to 200C (fan). Put broccolini stems, cauliflower wedges and onions on a large roasting tray, drizzle over a little olive oil and season with black pepper, then roast for 25 minutes, stirring occasionally. Meanwhile, mix all the dressing ingredients in a bowl. After 25 minutes, remove the tray from the oven and toss the vegetables lightly. Make four spaces in the vegetables for the fish, then add the salmon. Sprinkle over the dressing and the sesame seeds (mainly over the fish fillets), then return to the oven for 10-12 minutes, until the fish is cooked through – it will flake easily with a fork – and the vegetables are cooked. Sprinkle with sliced spring onions and the reserved chilli. Like all stews, this tastes its mellowest best if you let it get cold and then reheat the next day. But it's no hardship to eat straight off. Whichever, serve sprinkled with dill and together with some buttered noodles.

Line two trays with baking paper.Place the almonds, icing sugar and salt in the food processor and blitz until the almonds are finely ground, but not a powder. Add in the butter and continue to blitz until the mixture is well combined. Add in the flour, rose water and vanilla and pulse until everything just comes together, scraping down the bowl as you go if needed. It should be soft but not sticky. Add in more flour if necessary. Roll the mixture into walnut size balls and arrange on the trays, allowing room for them to spread as they cook. Place the biscuits in the fridge for 10 minutes to firm up slightly. Bake in the preheated oven for around 15 minutes or until just beginning to colour around the edges – they will still be a little soft but will harden on cooling. When cool enough to handle, but still warm, roll the biscuits in icing sugar then allow to cool completely. Dust with extra icing sugar and top with rose petals and pistachios.

Heat 2 Tblsp of EVOO in a large dutch oven or heavy based pot, over a medium heat.2. Add Carrots, onions, sauté until softened, (about 10 minutes), then add minced garlic and cook for 1 min.3. Increase heat to high, add beef , cook while continually stirring until beef brown all over .4. Then add the tomato paste, red wine, beef stock & Thyme. Bring to a simmer on the stove.5. Cook for further 60 mins –lid on, remove lid and cook for further 30 mins or until beef is tenderMeanwhile: Pour yourself a large glass of wine and begin drinking.6. Add 50g butter to a non stick frying pan, over medium heat add mushroom, bacon & eschallots cook for 10 mins.7.
