Chris Burson is an ex army engineer and army load master as well as a former Victorian police officer with experience in the Critical Incident Response Team (CIRT) and as a negotiator. After 11 years as a police officer, with the Police Force enforcing the State of Emergency requirement for Covid– Chris witnessed and experienced public opinion of the police force shift. Disillusioned, conflicted, and unable to see a pathway forward a highly concerned Chris, could simply not work in a job, where as a Police Officer he was now feared by the Public.Chris quit the Force giving up his career, income and budge. All five candidates for the Seat of Shepparton in the November 24 Victorian State Election were brought together to talk about themselves (a little) and expand on what they would do for the Goulburn Valley should they win a seat in the State Parliament. More than 60 people were at the "meet the candidates" event and as it was staged by the Victorian Farmers Federation (VFF) most in the room were either farmers or people from within the community conscious of the importance of farmers and farming to the economy,Climate change was barely mentioned although most were agitated about water, primarily the lack of it, but few, it appeared to grasp the reality that it was our disrupted climate systems that is the prime driver of water shortages.

Anna’s Pastrami Salmon with Horseradish Mash (based on Jill Dupleix’s original recipe, she re worked the original pastrami spices, which are usually used on beef, to suit the salmon). 4 x 180g salmon fillets (skin off) 800g potatoes, peeled and chopped Butter and milk (for mash) 2 tbsp horseradish cream Pastrami Spice Rub (can be made in advance and stored in a jar in fridge). 1 tbsp coriander seeds 1 tbsp black pepper corns 1 tbsp mustard seeds 1 tbsp brown sugar 1 tsp seat salt 1 tsp smoked paprika To make the spice mix toast coriander, mustard seeds and peppercorns in a fry pan over medium heat (don’t burn them!). Add all this to the sugar, paprika, salt and coarsely grind in a mortar and pestle. Brush fillets with olive oil and press firmly into the spice mix until coated on all sides. This can be done the night before so they’re ready to cook the next day. Make the mash potatoes with the horseradish cream (add butter and milk to taste). Cook salmon 4 minutes per side and serve on a bed of mash with green beans and a rocket salad. You can use this spice mix on chicken, lamb, pork ribs or eggplant and mushrooms.

Email the show feedback@dontshootpod.com.au Persian Love Cake Ingredients 360 grams (3 cups) ground almonds 220 grams (1 cup) raw sugar 220 grams (1 cup) firmly packed brown sugar 120 grams unsalted butter, softened 1/4 teaspoon salt 1 tablespoon freshly grated nutmeg Finely grated zest of one lemon 2 eggs, lightly beaten 250 grams (1 cup) Greek-style thick natural yoghurt 100g of pistachio nuts, unsalted, coarsely chopped Method: Preheat oven to 180ºC or 160ºC fan-forced. Grease and line a 25 cm (10″) spring form tin. In a large bowl, combine ground almonds, both sugars, butter and salt. Rub with fingers until coarse crumbs form, or pulse in the food processor. Put half the mixture into the prepared tin and press down gently with your hand to evenly cover the base. Add eggs, yoghurt and nutmeg to the remaining almond mixture, and mix well until smooth. Pour over the top of the prepared base, scatter the pistachios around the edge. Bake for approximately 40 - 50 minutes or until a skewer comes out clean. It’s done when the top is deep brown and the edges look caramelised. Cool on a wire rack, then carefully remove from the tin. Serve with more yoghurt and a few orange segments if you like. Rose petals are nice too (make sure they’re not sprayed).
