I don't know whether the move went seamlessly or not because I'm writing this newsletter before it happened and I'm doing that because the address I'm moving to is so far in the middle-of-nowhere that I won't have a stable internet connection for well over a week. You'll find out how the move went next month, unless I have been crushed beneath the weight of my collection of half-worn-out but not-too-worn-to-throw-away-yet jeans. Here's what I've been up to this past month: Activity Quest, the weekly magazine programme packed with stuff for families to do out-and-about, is still my primary focus at work. In the past month, Fun Kids presenters have experienced the Tower of London, London Transport Museum, the Imperial War Museum and Wildwood in Kent. In terms of other listening, I've become somewhat enamoured with Bandcamp, spending way-too-much-money on it in the past month. On it, cosmetic store Lush is selling the bespoke music they use in their spas, all of which is phenomenal. From their Beatles inspired A Hard Days Night album to covers of lullabies and musical walks through nature, the albums are a testament to the unrelenting creativity of Lush's co-founder, Mark Constantine. I went on a little Lush binge-buying session at the start of the month, mainly trying their fragrances. Karma is a Lush staple with its spice and orange (more summer-leaning than Christmas) and Pansy is a must-buy if the scent of a Lush store, wafting down the high street, is a turn-on for you. It had been almost a year since I last ordered from them and in that time they've reformulated some of my old favourites but their toothpaste and mouthwash tabs (nibble and brush, or nibble and sip water) are still incredible inventions as is The Olive Branch shower gel… I'm thrilled to see Moneybox, the investment app I am an investor of myself, do so well with their first round of crowdfunding, raising over £7 million. The app itself is brilliant, if you've never used it; a real set-and-forget approach to saving. I'm very proud of all the companies I'm an investor of, all of which are more-than-profit, UK-based enterprises. It’s fair to say that mixed fermentation is having a moment in the U.K. Natural wine is buzzing like craft beer once did, and its beer equivalent is starting to do the same. I mean, no one knows what to call it—mixed ferm, farmhouse, wild ale, sour beer, barrel-fermented beer, low intervention beer. They all mean subtlety different things that never quite cover all the bases. Each brewery seems to pick its own word as they launch their side projects, using the volume and margins of clean beer to let their brewers off the leash and appeal once again to the ever-demanding beer geek bubble. But for me, Yonder have come to define what it means. With a focus on foraged ingredients, mixed culture yeasts, and hands-on brewing, it’s not an afterthought or a playground like it is for some brewers. It’s their lifestyle—their very reason for being. Stuart Winstone and Jasper Tupman met working at Wild Beer Co, the OG mixed-ferm brewery in the UK. They had both been there since the start and bonded over a love of using unusual ingredients and yeast strains, often local to them in Somerset. As Wild Beer Co grew though, the production side became increasingly commercial and the proportion of clean beer being made grew. Stu and Jasper felt that to continue producing the beers they loved, they had to go it alone. With no outside investment, putting the pieces together took a long time. There is starting a brewery from scratch, and then there is literally buying secondhand parts as they came on the market, plumbing them in yourself, gathering your own ingredients, designing your own brand and sticking the labels on the bottle you just filled. Stu and Jasper did all that themselves. While it sounds like a lot of work, it seems that when you do everything yourself, finding a cohesive identity is a very natural process. I joined them on an expedition in the Mendip hills with the brewery terrier Taco, gathering nettles and dandelions for a new Pilsner they were brewing the next day. It is widely reported that Millennials and Gen Z are drinking less alcohol than previous generations. "Twenty years of anti-drug, anti-smoking and anti-alcohol education has done its job: it is no longer 'uncool' to not drink or take drugs," Berenberg analysts wrote in a beverage-industry report published in September. As a result, there has been as rising trend in non-alcoholic and low alcohol beers of which Big Drop Brewing Co. are at the forefront of. Other such brewers, such as Nirvana Brewery, Infinite Session, and Brew Dog have managed to develop flavourful alternatives to the nations most loved beverage... only minus the alcohol. Something that’s been on my mind a great deal of late, is where beer intersects with other cultures, particularly those also within food and beverage. You may commonly hear me bring up topics like natural wine, low-intervention cider, speciality coffee and more when talking about craft beer. And this is with good reason. For me, the most exciting things happening within beer are often happening at the points where these industries converge. Take our Uppers & Downers festival, for example. When I see a coffee enthusiast’s eyes light up because they’ve just tried a 3% Kvass that expresses flavours in beer they previously thought mightn’t have been possible, that gets me excited about the potential that lies within beer’s future. At the moment I am particularly interested in the point at which beer meets food and restaurant culture. This is partly due to my own increased interest in food and wine of late, and finding myself in a good restaurant more often than previously. Naturally, being a beer writer, while in these spaces my mind turns to beer when I occupy them. Why isn’t beer treated the same way on a wine list as the wine itself? How do we help this industry gain a greater understanding of how beer has evolved over the past decade and in turn, implement this evolution into this space? When it comes to talking about beer in restaurants, let’s just say there’s plenty to munch on. And this all brings me to today’s guest—Chef Tim Anderson—proprietor of a Japanese-inspired restaurant in Brixton, South London called Nanban. Anderson originally hails from Wisconsin and lived in both California and Japan before eventually settling down here in the U.K. He was a originally a home cook, but in 2011 he won that years Masterchef—a prime time cookery competition and TV show—which propelled him into the limelight. What’s particularly interesting about Anderson however, is that before he was a chef, he was and still is a passionate beer fan. Even while filming Masterchef he was making ends meet pulling pints in London craft beer spot, The Euston Tap. After winning he went on to brew collabs with Pressure Drop, The Wild Beer Co and BrewDog—he even designed a menu at one of the latters bars for a time, as we’ll learn in this episode. This all came to a head when Anderson eventually opened a restaurant of his own, called Nanban, here in London. At Nanban, Anderson specializes in what he calls “Japanese Soul Food.” You can expect steaming bowls of ramen, crunchy karaage fried chicken and even a burger which, somehow, fuses the Japanese-influenced house style with his Wisconsinite roots. What’s not so normal for a British restaurant though, is the beer selection. Here, along with an impressive list of Sake and Shochu, beer takes center stage—and in doing so, successfully demonstrates how beer can comfortably take its place at the dinner table—where other establishments have either not made a similar effort, or are simply unaware of how food-friendly beer has grown to become. A quick note about this episode. We recorded in between lunch and dinner service at Nanban itself, so you can expect a little background noise. I’m also joined by GBH’s Claire Bullen—who in addition to being one of the authors of our NAGBW award-winning food column, Provisions, is also a prolific cook herself, and has her first cookbook launching next spring. We're huge fans of Wild Beer Co. and so when we had the chance to get them down to our Balham store for a beer and cheese pairing, we obviously jumped at it! This event also happened to coincide with London Beer City week and the 2nd anniversary of opening our doors for the first time, so it was definitely a night to celebrate. We were joined by Andy and James who bought along 5 of their beers, including some very special sour beers and some incredible local cheese. As one of the most innovative breweries in the UK, this event was a great chance to learn more about what they do, which is why we've decided to include it as the main feature of this podcast. Along with our Wild Beer Co. Meet the Brewer, we also chat with Chippy, the manager of our Balham store. There'll be talk of new and upcoming beers, events and also a very special announcement! Dan Saladino meets the brewers transforming the flavours and styles of the British craft beer scene. From experiments with seaweed to efforts to find lost Victorian recipes, it's a diverse and fast moving world, so where are the new ideas for beer coming from and which brewers are leading the way?The award winning beer writer Pete Brown has described 2014 as the year in which craft beer has gone mainstream. A term first used to describe the renaissance of American brewing in the 1980's "craft" refers to smaller scale breweries, producing in small batches and often working with beer styles packed with flavour.In the last ten years the overall beer market has crashed by 25 per cent. Although cask ale is holding its own, the beer of this new wave of "craft brewers" is growing at around 70 per cent, year on year.
