At Craft Beer & Brewing Magazine®, we obviously spend a lot of time thinking about beer—talking to brewers and others in the industry, digging into the details of process, and writing about what we learn. Best of all, though, we get to drink beer—and, like it or not, the taste of every drop flashes through these weird brains that have spent an unhealthy amount of time focused on the liquid and everything that goes into making it. In short, we have thoughts. In this episode, contributing editor Kate Bernot, prolific author and longtime contributor Stan Hieronymus, and executive editor Joe Stange take off their reporter hats to talk through their favorite things they tasted all year, from around the world—going deeper into their Critics' Lists from the annual Best in Beer issue—inevitably sharing thoughts on where craft beer both could and should be heading. It's one of the most anticipated episodes of the year—our annual peek behind the scenes of the Craft Beer & Brewing Magazine™ Best in Beer issue, as editorial director Jamie Bogner and executive editor Joe Stange share perspectives on the beers we've named as our best 20 of 2025 (https://beerandbrewing.com/the-best-20-beers-in-2025)—plus, they reveal the results of the annual Readers' Choice poll. Throughout the year, we taste thousands of beers submitted to the magazine for review; our blind-review panel narrows them down further, finding top scorers in various styles for each issue of the magazine; and finally, we convene for a final round of blind tasting to narrow it down to 20 standouts of great character and quality—beers that inevitably represent this moment in beer. In this episode, we pull back the curtain to share some of the thinking (and tasting) behind the decisions, and we run through your Readers' Choice picks for best beers of the year, best breweries, best beer cities, best beer bars, and more.     My love for tribal ambient music, of course, starts with Steve Roach. Going back to Dreamtime Return, Desert Solitaire, Western Spaces, Origins, Strata, On This Planet, and The Dream Circle, just to name a few. I go through phases where I may tire of the style but I always come back to it, usually when a new record reminds me of how much I love the genre. In this case that new album is "A Path Within A Path" by Seabuckthorn. I always enjoy Seabuckthorn music so I dove into the new album and discovered a few tracks with an excellent, organic percussion sound that I love. The entire album is great. Once I latched onto those rhythmic tracks I knew I had to compile a few more for a new tribal ambient mix. Surprisingly there are no Steve Roach tracks in the mix. Although there's a great track from one of his frequent collaborators, Byron Metcalf, from his lates album - Spiral Exchange. I've created several tribal mixes over the years and I hope you enjoy this and the others as much as I do.   LINKS TO ALL THE MUSIC USED IN THIS MIX: https://seabuckthorn.bandcamp.com/album/a-path-within-a-path https://byronmetcalf.bandcamp.com/album/spiral-exchange https://rainforestspiritualenslavement.bandcamp.com/album/killer-whale-atmospheres https://marcoshuttle.bandcamp.com/album/cobalt-desert-oasis https://hubertdupont.bandcamp.com/album/trio-kosmos-3 https://laurencepike.bandcamp.com/album/the-undreamt-of-centre https://frore-shanemorris.bandcamp.com/album/ochre https://orenambarchi.bandcamp.com/album/kind-regards https://craigleon.bandcamp.com/album/anthology-of-interplanetary-folk-music-vol-2-the-canon https://dronarivm.bandcamp.com/album/theme https://jfoersternkramer.bandcamp.com/album/habitat Cheers!   T R A C K L I S T : 00:00   Seabuckthorn - Thunder Without A Sound (A Path Within A Path 2025) 03:20   Byron Metcalf - Cycles Of Ascension (Spiral Exchange 2025) 09:27   Rainforest Spiritual Enslavement - Orca Skull Memories(Bering Strait) (Killer Whale Atmospheres 2023) 16:44   Marco Shuttle - Winds Of Cydonia (Cobalt Desert Oasis 2021) 21:20   Hubert Dupont - Bathyscaphe (Trio Kosmos 2020) 24:27   Laurence Pike - Universal Forces (The Undreamt-of Centre 2024) 29:44   Frore & Shane Morris - Into Dust (Ochre 2023) 37:47   Oren Ambarchi & Eric Thielemans - Kind Regards(Begining) (Kind Regards 2025) 43:18   Craig Leon - The Gates Made Plain (Anthology of Interplanetary Folk Music Vol. 2  2019) 48:39   Seabuckthorn - White Boar (A Path Within A Path 2025) 50:30   Bartosz Dziadosz - Fragments (Theme 2025) 55:10   J Foerster & N Kramer - Levitation Room (Habitat 2021) 59:09   end

Sheesh! The Establishment (https://establishmentbrewing.ca) (Calgary, Alberta) has built a reputation over the last few years for taking an unconventional and experimental approach to mixed culture beer—as well as many other styles—and they've brought home numerous awards to prove it. But World Beer Cup gold in 2025 in the Belgian-Style Sour Ale category may be the biggest of them all, despite its unabashedly modern approach to the blend. They're not afraid of calculated risks, and love seeing where new ideas and techniques take them, because as Foniok says, “Beer first, ask questions later.” In this episode, Foniok discusses: using advanced hop products in mixed culture beer bench-trialing potential dry hops working around the mixed culture and dealing with Pediococcus ropiness brewing with high hop loads to suppress excessive acid production blending over multiple days to challenge and ultimately verify the blend using aged hops that have moved past the cheesy stage promoting fast fermentation for Saccharomyces strains in the mixed culture blending a fermented component with almost-hazy-IPA grist hops bench testing process for improving dry hop selection And more. 443: Grain-to-Glass Brewing with Local and Regional Malt, Live from Alberta

Craft Beer & Brewing Magazine Podcast

We recorded this week's episode live on stage at the Alberta Craft Brewing Convention in Red Deer, Alberta, in early October. The thematic through line is farm-to-glass brewing—something that's not that hard to do there, since a significant amount of the malt used by North American brewers is grown in the province. Major maltsters such as Canada Malting (https://canadamalting.com) and Rahr (https://rahr.com) have plants in the province, and some farmers who grow grain for these larger maltsters, such as Red Shed (https://www.redshedmalting.ca), also operate their own malthouses to produce smaller batches for local brewers. Joining the conversation are three award-winning brewers who represent different corners of the industry in Alberta: Chelsea Tessier of Polyrhythm Brewing (https://www.polyrhythmbrewing.com) in Edmonton, Jen Rogers of Wild Winds (https://www.wildwindsbrewery.ca) in Bridgeland, and Sarah McCambridge of Blindman Brewing (https://www.blindmanbrewing.com) in Lacombe. Agriculture plays a role in the conversation, of course, but the conversations covers interesting collaborative projects, malt freshness, unique processes, beers that tap into different angles of malt flavor, and a lot more. In this episode, the panel discusses: blending craft pils with two-row in hazy IPA matching hops to base malts hitting European malt specs in North American barley horse-drawn barley farming and harvesting replacing specialty malts such as Carafoam with locally produced chit malt producing more stone-fruit ester precursors with floor-malted pils malt unique specialty malts such as wood-fired chocolate malt And more. Australia's strata system was once a clever solution to urban living — a way to share land, lift homeownership, and build communities in growing cities. But decades later, that same framework is struggling to keep up with modern life. What once worked for small, low-rise communities now governs the high-density towers that house millions of Australians. The result? Costs have climbed, decision-making has grown more complex, and owners often find themselves footing bills for problems they didn't createIn this episode, Prof. Cathy Sherry — Professor at Macquarie Law School and Executive Member of Smart Green Cities — explains how Australia's outdated strata laws are now out of step with the country's housing and sustainability goals. A leading international expert in land law and high-density development, Prof. Sherry unpacks how laws written in the 1960s for small walk-ups can't handle the complexity of modern cities, locking owners into costly contracts, rising levies, and embedded energy networks that limit both choice and progress. From the hidden costs buried in off-the-plan sales to the barriers stopping apartments from going solar, Cathy reveals how a system designed to help Australians share space has instead made it harder to live well, live green, and live fairly.Listen now to learn why reforming strata isn't just a legal fix — it's key to building a fairer, more sustainable housing future for everyone.Episode Highlights00:00 – Introduction01:16 — Meet Prof. Cathy Sherry: Australia's Leading Expert on Strata Law01:50 — How Shared Living Became Complex: The Challenge of Strata Ownership03:15 — Strata Levies, Legal Layers, and Why Collective Ownership Is Tricky06:37 — The Hidden Dangers of Buying Off-the-Plan Apartments in Australia11:09 — Embedded Networks Explained: The Hidden Costs of Strata Energy Deals20:18 — Can the Law Catch Up? Seattle's Fast Fashion (https://themasonryseattle.com/fast-fashion/) has built a reputation for modern, forward-looking IPAs and hop-focused lagers, and the characterful brewery and taproom in SoDo expresses the eclectic interests and aesthetic taste of founder Matt Storm. It's a funhouse of sorts—a bit like drinking in a thrift store full of budget mid-century furniture, stocked with kitsch that spans the past six decades. It's busy and not necessarily thematically consistent—much like the beers the brewery makes—but it's different and unique. You will not confuse it with another brewery. Over the past half-decade, the beer itself has developed from quick hits of new hazy IPAs filled with the coolest names in hops, to a more diverse lineup of IPAs and lagers—still hop forward and immaculately crafted. Under head brewer Stefano Annicharico, they've found a way to make beer that keeps the baseball game-day crowd happy, while also continuing to explore the possibilities in contemporary beer styles. In this episode, Storm and Annichiarico discuss: how Anchovy hops came to have such a unique name brewing drinkable, semi-dry hazy IPA with heavy adjunct loads building acidity in the mash to promote drinkability despite later dry-hop additions that raise the pH boiling hops in hazy IPA with 20-minute additions for more longevity in package lowering whirlpool hop amounts and pushing higher loads in post-fermentation dry hops finding bits of distinct character in hops such as Nelson Sauvin, Motueka, and NZ Cascade (aka Taiheke) avoiding excessive rousing to limit hop burn using New Zealand hops in modern hoppy lager And more. At Seattle's Machine House, (https://www.machinehousebrewery.com) founder Bill Arnott will tell you that he doesn't do anything special, yet the cask ales he brews are favorites of brewing peers thanks to a dogged focus on English-style beers and a dedication to serving them well. Welcome back to another Business Live Show! Today we go live with Brad Smith and Contractor Keith (36 years in the trades, 300+ homes built) for a candid teardown of Keith's next chapter. After a life-altering health crisis and a move to The Villages, he's shifting from spec builds to systems, automations, and AI—launching Punchlist Media (Notion workspaces, n8n automations, custom LLM knowledge bases) and scoping a community + marketplace concept for AI builders and buyers. We map his MVP, tame imposter syndrome, and design a business that optimizes for peace, purpose, and steady cash flow—not chaos.Key Highlights:- Why the pivot: How a major health scare, caregiver support, and a cross-country move clarified Keith's decision to leave high-stress spec building for ops systems and AI.- Punchlist Media (v1): Notion as a relational database (not a spreadsheet), n8n for low-cost automations, and custom LLMs to turn SOPs into searchable knowledge.- “Strata” (working title): A community + marketplace for solo AI devs & small teams (think Shopify × Stack Overflow × Upwork × Gumroad) with code, gigs, and peer support.- Community before code: Build a free flagship Notion template, weekly build-in-public updates, live office hours, and a newsletter to validate before heavy software.- Imposter syndrome, solved: Your story is the brand. Ship value, show the process, and let people join the journey—credibility compounds in public.- Designing for life: Pick the game you want to play—Keith optimizes for sanity and cash flow, not a $100M exit. Systems + people = durable calm growth.- Selling the trades is hard: Contractors are skeptical; a smarter wedge is AI + operations for any small business—earn trust with utility, not hype.If today's live breakdown helped, share it with a friend, drop a review, and join us Wednesdays at 2:30 PM ET on X & LinkedIn for the next live teardown.

Established in 2013, Berkshire's Siren Craft Brew has rightfully grown to become one of the most well-respected modern breweries in the United Kingdom. We at Pellicle have been lucky to have followed Siren's journey since pretty much the beginning—I even hosted a tasting with founder Darron Anley at the Duke's Head Pub in Highgate all the way back in 2015. They're also one of our dedicated pro-Patreon supporters. As such, when their head of marketing, Andy Nowlan, got in touch to ask if we'd be interested in doing some collaborative content around the second edition of their Time Hops project, we said yes without giving it a second thought. Time Hops is Siren's way of helping drinkers to understand the nature of hops, from their development and cultivation, to how they present themselves in finished beers. Siren produced four different beers for this year's edition, and we diligently produced four different stories about each of them, and the hop they focused on.Mark Dredge donned his lager hat once again, and told us the story of the sublimely elegant noble hop, Saaz, from the Czech Republic. In her Pellicle debut, Robyn Gilmour wrote about Australia's fantastic Galaxy—a hop with something of a chequered past that is finally beginning to come back into its own. Katie Mather told us a story from the other side of the Tasman Sea, about one of modern beer's darling hops, Nelson Sauvin. Last but not least, Lily Waite-Marsden dug into the more recent story of Strata, one of the most exciting young hops on the market today. But we weren't done there. As part of Siren's Time Hops event at their taproom in the village of Finchampstead, Pellicle headed down to host a panel-led discussion all about the project and the four beers that have resulted from it. In this episode I'm joined by Darron Anley, plus head brewer Sean Knight, and Martin Rake from The Malt Miller, who delivers some fantastic insight into hop procurement. It's a long conversation, and a fascinating one to boot, especially if you're interested in all things hop-related. Thanks again for Siren for inviting us to collaborate on this fascinating project with them. We're able to produce The Pellicle Podcast directly thanks to our Patreon subscribers, and our sponsors Get ‘Er Brewed. His career as a brewer may look like “Swiss cheese,” with stints in Wyoming, Tennessee, Oregon, and Washington, but it's hard to poke holes in any of his thoughtfully designed and thoroughly executed lagers or IPAs. In this episode, Brown discusses ingredients as well as the labor-intensive process behind his helles, touches on the hot-side versus cold-side fresh-hop controversy, shares his approach to New Zealand hops that won him a silver medal for New Zealand–style IPA at World Beer Cup 2025, and finishes with thoughts on what it takes to win when so many brewers are making such great beer. Along the way, he discusses: front-side decoction without a dedicated vessel extended saccharification rests to build malt depth gently handling lager to avoid bruising the beer the differences between 34/70 strains transferring before terminal to get a head start on clearing yeast the fresh-hop “controversy” the beauty of Dolcita and building mouthfeel with hops blending base malts for West Coast IPA selecting early-pick New Zealand hops for lower diesel character And more. Ben Howe's brewing career reads more like that of a chef than a typical brewer—stints in Denmark, brewing jobs on both the East and West coasts, weeks spent interning at breweries that intrigued him—but one fateful visit to the Zehender brewery in Monchsambach opened his eyes to Franconian lager and inspired a nearly decade-long quest to understand the beer and its mechanisms of flavor. More recently at Otherlands (https://www.otherlandsbeer.com), he's pushed boundaries of accepted brewing dogma, mashing with pH levels far past any sensible range in an effort to build color and flavor—and the things that shouldn't work still obviously do work. In this episode, Howe discusses both his traditional methods and modern concessions, including: learning from Will Meyers and Megan Parisi at Cambridge Brewing capturing Franconian-ness in long-boiled lager beers old-style vs. new-style German lager brewing kräusening to carbonate rather than spunding before terminal never raising the temperature for a diacetyl rest while using ALDC to control precursors finding color with only pilsner malt hardening water for lager brewing with calcium carbonate, magnesium carbonate, and gypsum mashing above 5.8 pH maintaining atmospheric pressure for yeast during fermentation boiling large amounts of low-alpha hops for a long time to build flavor and texture And more. At Craft Coast (https://craftcoast.co) in Oceanside and San Marcos, California, Blake Masoner is happy if you show up for tacos and stay for a beer. The fairly priced tacos are scratch-made, down to the tortillas themselves, packing loads of flavor into every bite. Fellow San Diego–area brewers refer to them as “The best tacos between here and Tijuana”—but the beer they brew here is anything but an afterthought. Eight medals in four years at the World Beer Cup and Great American Beer Festical—in competitive categories such as hazy pale ale, American IPA, and international pilsener—are evidence of the brewery's ambition on the quality side, and they've modified both classic and modern brewing techniques to serve their flavor and aroma goals. In this episode, Masoner discusses: abandoning a “no core beer” policy to keep customers happy brewing Mexican-style dark lager with dry yeast and vorlauf-only dark malts mitigating sulfur production with 34/70 yeast Australian-inspired XPA design without Southern Hemisphere hops using Mosaic at different times for different effects in West Coast IPA knockout hopping to find the true heart of new varieties pinpointing flavors through dry hopping building a team-wide winning mindset And more. Making beer commercially in New York City is so difficult that it all but stopped until the previous decade's craft-beer boom rekindled the fire. Today, about 40 breweries make beer in the city, but doing so comes with its own set of rules. Beyond the regulatory and logistical hurdles, there's an underlying creative challenge: NYC is the culinary capital of the United States, and competition for space on bar and restaurant menus is pitched. Without great beer, great branding, a point of view, and a way to generate new and engaging stories, it's easy for a brewery to get lost in the noise. That's why KCBC (https://kcbcbeer.com)—opened in 2016 by homebrewers-turned-pros in the vibrantly diverse Bushwick neighborhood—leans into the city's energy with graphic storytelling through branding, and with a constantly shifting lineup that tells interesting tales about the wider world of beer. In this episode, cofounder Tony Bellis and head brewer Bobby Rolandi discuss: brewing hazy IPA with Voss kveik rather than more popular strains drier New England–style IPAs with finishing gravities around 3.5°P (1.014) developing three distinct templates for hazy IPA recipes avoiding chewier grains such as oats in favor of flaked and malted wheat fermenting cooler and with a cooler dry hop for smoother extraction achieving modern flavors in West Coast–style IPAs using classic hops experimenting with hops and fermentation in the lager space using 34/70 for IPA fermentation while using a Budvar-derived strain for lagers And more.
