W/C 16th September 2024So I sat outside the British Library for a bit this week (as you will hear) with my face in the sunshine, and it was bloody lovely.There was a place to get coffee, one of those horse-boxy, old caravan style ones, and so I ordered a flat white. The coffee they were serving was 'origin' and it took me right back because the first time I had origin coffee was in Padstow about 15-20 years ago.It turns out that they are celebrating their 20 year anniversary, and the reason I stumbled across the brand in Padstow is that Cornwall (Porthleven, to be precise) is the origin of their story (see what I did there...).Needless to say the coffee was smashing, particularly as it came with a thread to the past which allowed me to think back to early morning walks along the Camel Trail.Stay safe.How Far We've Come - Matchbox TwentyOrigin CoffeeTherapy For Me (or TFM as I now refer to it) is a bit of an audio curiosity. Over the last ten years, Chef Paul Ainsworth has build a very special business in Cornwall that has expanded far beyond his eponymous Michelin stared restaurant in Padstow. Initially he took over a local restaurant that had been through many incarnations, creating an family Italian called Caffe Rojano. He went on take over a much loved local pub, The Mariners across the other side of the Camel Estuary, that is now regarded as the 3rd best gastro pub in the UK according to Estrella's list. On top of this there is a coctail bar, boutique hotel with 6 rooms and an academy that speaks volumes of his commitment to the local area and nuturing local talent. He has now released a cookbook, called For the Love of Food that is firmly rooted in his Michelin starred restaurant without being too fancy or complex. It is all sharing plates and clever takes on dishes that the family will love. His food is deeply rooted in his training with some of the best chefs in the UK but leans towards a relaxed and fun approach to food that he is known for. Joining Ollie, who he knew back in the day when Great British Chefs was in its infancy, they talk about the changes in the food scene and the importance of backing small food and drink businesses. My guest today is Rick Stein. A highly requested guest, I hope you all enjoy this as much as I did recording it. Rick is, of course, a chef, restaurateur, cook book author and television presenter. He has written over 25 cookery books, a memoir and made over 30 television programmes. His latest cookbook, Simple Suppers is out now. It has been nearly 50 years since he first opened The Fish Restaurant in Padstow, an area of Cornwall he fell in love with at a young age and has made his home. Despite his successes, Rick describes himself as an accidental restaurateur – who never planned on a career in food. And yet how lucky we are that his dreams of running a nightclub were quashed by the local authorities and led instead to the Stein restaurant empire we know today. He is the man who could pretty much entirely be credited with bringing an appreciation of fish to the UK masses, something he says he didn't set out to do intentionally, it just made sense at the time. Despite his obvious success, Rick has said, “I've definitely got a sense of not being very good at stuff. It's sort of absurd because, you know, I've done really quite well for myself, but I still really doubt myself. It's just the way I am.”Simple Suppers is out now, available at all good bookstores. In this episode Justine interviews Chef James Knappett as he shares about his incredibly inspiring journey, working with some of the world's best chefs.James Knappett is chef patron and co-founder of Kitchen Table. Born in Soham, Cambridgeshire, James had an early interest in cooking and attended a Cambridgeshire catering college before moving to London and landing formative positions at the likes of Restaurant Gordon Ramsay, The Berkeley and The Ledbury. Following a number of fulfilling years in the hospitality industry in the city, he relocated to Rick Stein's The Seafood Restaurant in Padstow for three years. In 2005 he ventured further afield to world-renowned restaurant, Thomas Keller's Per Se in New York and then to the renowned Noma in Copenhagen. James and his wife, Sandia Chang, opened Kitchen Table in September 2012, which was awarded a Michelin star in 2014, followed by a coveted second Michelin star in 2018. Running 44@60 Podcast - plotting Trevor Lee's journey to the 2021 44 mile Cornwall Classic Quarter
A few years ago Carrie Glenister donated one of her kidneys. Then in March 2021 Carrie started Couch to 5k but got fed up with the pace of the programme. So instead she went from Couch to Ultra Marathon in six months. The Ultra was the Saints Way a 28 mile self navigated challenge from Padstow on the north coast of Cornwall to Fowey on the south coast. But that wasn't enough. So Carrie set herself a new challenge for 2022 - to run 4 major events - 2 marathons and 2 ultras and raise at least £2500 for the Royal Cornwall Hospital Charity whilst raising awareness of kidney donation. W/C 9th August 2021 This isn't my first time in Cornwall, and it isn't my first time running on the Camel Trail. I have been a frequent visitor to Padstow, way before it became Padstein and long before the inevitable gentrification that followed Mr Stein's rise to culinary celebrity. Not that I have anything against Rick I must add, but I think I preferred Padstow before they had to make provision for coach loads of sightseers. Anyway, I digress, the fact is I have run/walked/rode along the Camel Trail between Padstow & Wadebridge a-plenty over the years. But this year I am determined to see every bit of this beautiful 17ish mile former railway that winds its way from from Wenfordbridge to Padstow (calling at Wadebridge along the way). I would have loved to have travelled along it by train, indeed in the early morning stillness you can almost year the sounds of yesteryear. Frances reads four letters, written by Bernard, Cuthbert, Arthur and Vera in March and April of 1909.Bernard again apologies for the Budget being lost in the post.Bernard and Enid are going to be the godparents of baby Leslie.Arthur and Bernard go on a long coastal walk. They get the train from Plymouth to Padstow, in North Cornwall, and walk along the coast to Rock, Polzeath, Port Quin, Port Isaac, Tintagel, Boscastle, and then Crackington, they then walk to Otterham, only just catching their train, to return to Plymouth. Cuthbert says Berkhamsted School is again having an epidemic, but the teachers are getting a pay rise, and the school is starting work on some new buildings. Arthur adds his point of view on their Cornish walk. And we get the first report that Mother is not well; Arthur won't post the Budget on, until he hears that Mother is out of danger. Many individual letters and telegrams circulated between the siblings whilst Mother was ill, none of which have survived. Arthur tells more entertaining stories about the servants and schoolboys and we hear about Mount House school, on Hartley Road, for the first time. Arthur soon buys the school and he moves for the start of the new school year, September 1909, taking a good number of Garfield House boys with him.Vera writes a short note, she is exhausted as everyone is ill. Sheila Dillon looks behind the scenes of the world's largest and smallest pasta factories. It's a difficult time as wheat prices are high and so competition for grain is fierce. Fires, droughts and speculation in the wheat market together with poor harvests of durum wheat is creating a rise in prices. Pasta producers all over the world compete for the best quality semolina, produced from the milled, high protein and low yielding durum crop.John Dickie, Professor of Italian Studies at University College London, outlines the rise and rise of pasta making in Italy dating back to the Middle Ages. Sicily had a large scale pasta export business dating back at least 1000 years but it wasn't until Italy's economic boom of the 1960's that pasta became a truly national dish.Reporter Dany Mintzman follows five tonnes of spaghetti as it travels along the production line of the world's largest pasta factory, owned by Barilla, a family owned business started in the 1870s.Farmers in the UK used to grow durum wheat when it was an EU subsidised crop. Although it is best suited to hot and dry weather conditions a lot of it was then used by British companies producing dried pasta for the supermarkets. That is no longer the case and the last factory selling mass market pasta stopped production in 2001, unable to compete with the vast scale of the Italian producers.However in Cornwall, one farmer, Charlie Watson-Smyth has spent the last two years trying to grow durum wheat and then turn it into pasta to sell in his farm shop. As reporter Dilly Barlow discovers it's been such a success that he's now supplying The Eden Project and restaurants around Padstow. Produced by Dan Saladino.
