In this interview, Carla dives into her recent viral Substack post about her decision to leave YouTube, including her transparent breakdown of the costs of creating content on YouTube (spoiler alert: she was losing money). Carla also explains more about why she doesn't create recipes for SEO and how she uses connection with her audience as her north star when making business decisions. In addition, the tight production schedule required to produce four high-quality recipe videos a month left Carla with little bandwidth to create content for Substack or her upcoming cookbook. How to recognize when something is no longer serving you or your business — After producing 177 full-length episodes for Carla's Cooking Show, Carla's decision to step away from YouTube was ultimately a choice based on finances, psychological toll, limited bandwidth, and diminishing returns. Carla and Bjork discuss the sustainability of content creation on platforms like YouTube and how creators have to analyze what is moving the needle in their business and, ultimately, what kind of creator they want to be. Go ahead and grab the ingredients below (Emma starts listing them at 1:03) before starting the episode.Sorry, I Love CeleryServes 4 to 6Ingredients:3 anchovy fillets packed in oil, drained2 garlic cloveskosher saltfreshly ground pepper1/4 cup fresh lemon juice1/4 cup extra-virgin olive oil1/2 teaspoon Aleppo pepper10 Castelvetrano olives6 Piparra peppers1 bunch celery2 ounces Parmigiano1/2 cup parsley leaves and tender stemsIn a mortar and pestle or mini chopper, combine the anchovies and garlic with a big pinch of salt and many grinds of black pepper. Pulverize until a paste forms. (Alternatively, you can finely chop the anchovies and garlic together on a cutting board, then season with salt and black pepper and use the flat edge of the knife blade to smash the ingredients into a paste.)Scrape into a medium bowl and whisk in lemon juice, olive oil, and Aleppo pepper until combined. Taste and season with more salt and black pepper, if needed.Use the flat side of a chef's knife to smash the olives and loosen the pits, then tear the flesh into 2 or 3 pieces (discard pits). Cut peppers in half lengthwise, then halve crosswise. Place the olives and peppers in a salad bowl.Trim the celery at both ends, then separate the bunch into individual stalks; wash and dry. Snap off the light green leaves from innermost stalks and set those aside. Cut the celery into very thin slices on a dramatic angle, then transfer to the bowl with the olives and peppers.Use a vegetable peeler to shave half the Parmigiano over. Add most of the dressing and toss with your hands to coat.Add the parsley and reserved celery leaves and toss gently to combine. Shave the other half of the Parm over, drizzle with dressing, and top with a few more grinds of black pepper.

Her Heritage Radio Network podcast, Hot Grease, brought 162 episodes with an emphasis on highlighting Black food personalities and “reclaiming culinary traditions & celebrations, cooking at home and eating as a political act.”That led to a couple of cookbooks: first, writing The Last O.G. Cookbook (yes, the cookbook-companion to the Tracy Morgan TBS comedy), and Nicole's first solo project, The Up South Cookbook: Chasing Dixie in a Brooklyn Kitchen, which pairs her Georgia culinary roots with New York influences. After a stint at a major media company, Nicole embarked on her latest cookbook, Watermelon & Red Birds: A Cookbook for Juneteenth and Black Celebrations. In the book, Nicole explores the history of Juneteenth—a history full of complexity, difficulty, and sorrow. Federal recognition of a holiday long recognized by Black communities in America only came in June 2021, amidst the pandemic, a national focus on long-standing racial inequality, and the unjust deaths of Black folks at the hands of police. As Nicole writes in her introduction, “Black joy often emanates from Black sorrow, and so it has been with that small Texas tendril of freedom, which has continued to spread and strengthen.” This cookbook is not just a historical text; it's quite modern, and Nicole hopes it will be part of the ongoing conversation around Black food in America. I'm not just a podcast creator, I'm a long-time listener as well.   My number one category is business, but you can't listen to business all the time. No matter what I'm hearing though, I can't turn off my brain when it comes to the production values.   First up, cooking and food shows. I have found that food shows are relaxing and often help me relax and fall asleep!   Borderline Salty is a weekly podcast hosted by Carla Lalli Music and Rick Martinez. These chefs and test kitchen experts have great chemistry together and they talk about food, take calls and answer questions from listeners. It's a fun listen.   Dinner for One is the audio exploration of what happens when the Paris fairytale ends and real life begins. This is the genius of Sutanya, the creator and host. She's a Jamaican-born, Bronx-raised, American living in Paris' cooking dinner and sharing her story.   Next up, true crime. Of course I listened to Serial which is one of the biggest shows in the genre. I'm looking forward to their next season.   What's caught my attention right now is Hollywood Con Queen. I don't want to give too much away but it's the story of one of the weirdest and wildest scams in Hollywood history.  I'm also into Queen of the Con Irish Heiress. What if you woke up to discover that your best friend isn't who they say they are? This is fascinating to me. Cons are work; a long game all their own and I'm loving how this story is being shared.   Another favorite is The Terri Cole show. This is for anyone who wants to learn more about practical psychology, achieving personal freedom, self-improvement, meditation, mindfulness practices, harnessing the power of intention, and real-life strategies for personal transformation.  She has a grounded style and uses story to help understand the lesson in the message. Her advice is practical and I'm really looking forward to having her on this show!   If she's new to you, I suggest listening to episode 337 on Boundaries first. It's so good.   There's so much to dive in when it comes to podcasts. This is what I've been listening to now. Herbaceous grilled lamb chops: Lamb chops marinated in olive oil, red wine vinegar, crushed coriander seeds, mint, rosemary, and basil. Pasta all'amatriciana with confit tomatoes: Fusili pasta with confited tomatoesk pancetta, red onion, grated parmesan cheese, and crushed red pepper. It's a great recipe book. There are specific recipes, but also guides on methods of cooking, like confit. Enjoy!

Go ahead and grab the ingredients below (Emma starts listing them at 1:03) before starting the episode.Sorry, I Love CeleryServes 4 to 6Ingredients:3 anchovy fillets packed in oil, drained2 garlic cloveskosher saltfreshly ground pepper1/4 cup fresh lemon juice1/4 cup extra-virgin olive oil1/2 teaspoon Aleppo pepper10 Castelvetrano olives6 Piparra peppers1 bunch celery2 ounces Parmigiano1/2 cup parsley leaves and tender stemsIn a mortar and pestle or mini chopper, combine the anchovies and garlic with a big pinch of salt and many grinds of black pepper. Pulverize until a paste forms. (Alternatively, you can finely chop the anchovies and garlic together on a cutting board, then season with salt and black pepper and use the flat edge of the knife blade to smash the ingredients into a paste.)Scrape into a medium bowl and whisk in lemon juice, olive oil, and Aleppo pepper until combined. Taste and season with more salt and black pepper, if needed.Use the flat side of a chef's knife to smash the olives and loosen the pits, then tear the flesh into 2 or 3 pieces (discard pits). Cut peppers in half lengthwise, then halve crosswise. Place the olives and peppers in a salad bowl.Trim the celery at both ends, then separate the bunch into individual stalks; wash and dry. Snap off the light green leaves from innermost stalks and set those aside. Cut the celery into very thin slices on a dramatic angle, then transfer to the bowl with the olives and peppers.Use a vegetable peeler to shave half the Parmigiano over. Add most of the dressing and toss with your hands to coat.Add the parsley and reserved celery leaves and toss gently to combine. Shave the other half of the Parm over, drizzle with dressing, and top with a few more grinds of black pepper.
