Go ahead and grab the ingredients below (Emma starts listing them at 1:03) before starting the episode.Sorry, I Love CeleryServes 4 to 6Ingredients:3 anchovy fillets packed in oil, drained2 garlic cloveskosher saltfreshly ground pepper1/4 cup fresh lemon juice1/4 cup extra-virgin olive oil1/2 teaspoon Aleppo pepper10 Castelvetrano olives6 Piparra peppers1 bunch celery2 ounces Parmigiano1/2 cup parsley leaves and tender stemsIn a mortar and pestle or mini chopper, combine the anchovies and garlic with a big pinch of salt and many grinds of black pepper. Pulverize until a paste forms. (Alternatively, you can finely chop the anchovies and garlic together on a cutting board, then season with salt and black pepper and use the flat edge of the knife blade to smash the ingredients into a paste.)Scrape into a medium bowl and whisk in lemon juice, olive oil, and Aleppo pepper until combined. Taste and season with more salt and black pepper, if needed.Use the flat side of a chef's knife to smash the olives and loosen the pits, then tear the flesh into 2 or 3 pieces (discard pits). Cut peppers in half lengthwise, then halve crosswise. Place the olives and peppers in a salad bowl.Trim the celery at both ends, then separate the bunch into individual stalks; wash and dry. Snap off the light green leaves from innermost stalks and set those aside. Cut the celery into very thin slices on a dramatic angle, then transfer to the bowl with the olives and peppers.Use a vegetable peeler to shave half the Parmigiano over. Go ahead and grab the ingredients below (Jenny starts listing them at 3:02) before starting the episode.Barley TofuServes 2Barley "tofu"3/4 cup (100 grams) barley flour1 3/4 cups (375 grams). water1 teaspoon kosher saltNeutral oil, for fryingChili oil8 dried red chili peppers1 tablespoon whole red Sichuan peppercorns2 teaspoons whole white peppercorns2-inch knob of ginger, peeled and minced3 stalks scallion, stemmed and minced5 cloves garlic, peeled and minced1 cup neutral oilKosher salt, to tasteWhite sugar, to tasteWhite vinegar, to tasteBarley "tofu"Whisk together barley flour, water, and salt until smooth in a medium pot.Heat mixture over medium heat, whisking continuously for at least 10 minutes, until it thickens considerably and the raw flour taste is gone.Quickly transfer barley mixture to a small nonstick loaf pan or brownie pan, and place plastic wrap directly on top of the mixture.Place a flat, heavy item directly on top of the plastic wrap to flatten the mixture until it's smooth at top. Ideally, the mixture has now been pressed into a rectangular shape that meets the edges of the pan you are using.Let rest 4 hours or more before unmolding and slicing.Remove barley tofu from pan, and slice into rectangles or squares of your choosing.Heat oil in a large nonstick skillet over medium heat until slick and shiny.Add barley tofu and pan fry on all sides until golden brown.Drain on paper towels, and serve with sauce(s) or garnish of your choice.Chili oilPreheat oven to 400°F.Toast chiles on a sheet tray, 1-2 minutes, until darkened but not black.Remove and let cool completely. Pulverize into powder with a spice grinder.Dry toast Sichuan peppercorn and white pepper in a small skillet over medium heat until lightly fragrant, approximately 2-3 minutes.Let cool completely, and grind coarsely with a spice grinder.Combine chilies with spices, ginger, scallion, garlic in a heat-proof container.Heat oil in a small pot until it reaches 300°F.Carefully pour oil over chili mixture. It will bubble and steam immensely. Ideally, the mixture has now been pressed into a rectangular shape that meets the edges of the pan you are using.Let rest 4 hours or more before unmolding and slicing.Remove barley tofu from pan, and slice into rectangles or squares of your choosing.Heat oil in a large nonstick skillet over medium heat until slick and shiny.Add barley tofu and pan fry on all sides until golden brown.Drain on paper towels, and serve with sauce(s) or garnish of your choice.Chili oilPreheat oven to 400°F.Toast chiles on a sheet tray, 1-2 minutes, until darkened but not black.Remove and let cool completely. Pulverize into powder with a spice grinder.Dry toast Sichuan peppercorn and white pepper in a small skillet over medium heat until lightly fragrant, approximately 2-3 minutes.Let cool completely, and grind coarsely with a spice grinder.Combine chilies with spices, ginger, scallion, garlic in a heat-proof container.Heat oil in a small pot until it reaches 300°F.Carefully pour oil over chili mixture. It will bubble and steam immensely. In this episode of GoGreenfields, River and Terran are super surprised to receive a wild mystery box.  Contained within is one of the biggest challenges they've ever faced.  The two venture off into the wilderness armed with only basic survival gear and the promise that they will happen upon guides along the way as they explore what bushcraft really means. There are many skills that were further developed during this adventure.  River and Terran learned more about navigating with the use of a compass in the wild.  They were challenged to assist in the care of serious wounds while in the bush.  The co-hosts experienced what it would take to find and secure their own food source, and were taught how to prepare the meat in multiple ways for preservation purposes.  Bonus Footage In the bonus footage, River and Terran walk through the process of making pemmican jerky from wild game. They used a fresh sheep that the boys learned how to properly honor, field dress, butcher and prepare themselves! Wild game like this makes for excellent jerky or pemmican if you use the right spices and preparation techniques. Pemmican is a great choice for wilderness adventures because dried protein and rendered fats are highly stable, so the food source is handy to carry in a backpack and will keep for a very long time. Pulverize the jerky in the food processor or blender until it becomes powder. Render half a pound of fat in a cast iron pan by cooking it slowly over super-low heat until the fat stops bubbling. (River and Terran melted down Bel Campo beef suet to use as their fatty liquid). Slowly add fat to the powder meat and berries. Pour just enough so that the fat soaks into the powder. Once it firms, cut it into bars, form into bricks, or roll it into balls.    *this stuff caramelizes particularly well for making jerky or pemmican, or any meat dish, for that matter. Getting the garden ready for the season can feel like such a daunting task. At this point, the lawn may be looking shabby and appears that it needs a good hair cut to knock down some weeds. Weeds may be eyeing you each time that you walk past the landscape and flower beds. The vegetable garden needs some attention too! If you already feel defeated, I have got just the solution for you! In episode 2 of the Sunshine Gardening podcast, I am sharing my top 3 spring gardening chores to help you finish strong for the month of March. Once you have completed these chores, I bet that the other tasks will seem less daunting to you. Stay with me as we march into those spring gardening chores! Soil is the basic foundation block for gardening. All plants require essential nutrients to grow and this process is done by supplying nutrients through the root system which is then anchored into the soil. In Kentucky, soils are often times less than ideal with lots of red clay content which makes it difficult for soil drainage and nutrients to reach the plants root system. To help alleviate this issue, gardeners must first build good soil. The first step to obtaining good soil is through the use of a soil test. Soil testing is one of the best practices to perform annually for your garden because there is simply no guesswork involved. A standard soil test will determine the current fertility status of phosphorus (P), potassium (K), calcium (Ca), magnesium (Mg), pH, and cation exchange capacity. Soil test recommendations will also reveal lime and fertilizer rates to apply which makes it extremely cost effective for home gardeners and even commercial horticulture producers. Most vegetable gardens perform best under slightly acid conditions with a pH range of about 6.2 to 6.8.  When taking a soil sample for a home vegetable garden plot, take soil samples 6 to 8 inches deep. Next, collect 12 to 15 core samples using either a soil probe, spade, or trowel at the recommended depth. Make sure to take samples at random by scattering to different locations in the area to ensure a well, represented sample. After collecting samples, mix all the cores together in a clean bucket. Allow the sample to air-dry on newspaper for a day and bring contents in a bag to the Extension Office. Soil test samples generally take a minimum of a week to two weeks maximum to get back. Extension agents will review the soil test results, highlight the recommendations and sign it before returning to the client in the mail. If you are sampling other areas around your home, contact the local Extension Office in your area. They will be happy to walk you through the proper steps in soil sampling different horticulture crops. The spring season is the perfect time for breaking ground. Sometimes though, the spring weather can be a wet one. Wait to work the ground until the soil has dried. Working ground when wet hurts the overall soil structure by forming clods that are difficult to break apart. Some gardeners may want to consider planting their spring vegetable transplants in raised bed gardens since they warm up faster and dry out quicker in comparison to conventional gardening plots. The best indicator in knowing when to break ground is when soil is moist and crumbles readily when formed into a ball. Loosen the soil to a depth of 10 to 12 inches with a spade or rototiller. Pulverize any clods that may work their way to the top, since large dirt clods can cause poor seed germination. Spread compost out and lightly work it into the soil. Incorporating Organic Matter Another secret to achieving good garden soil is by incorporating organic matter. Adding the right ingredients of organic matter will improve soil structure and take care of several issues. It helps to loosen and improve soil drainage of heavy clay soils and increases both the nutrient and moisture holding capacities. Depois da primeira fermentação, divida a massa em três pedaços iguais e modele as baguetes, deixando-as com cerca de 30 a 40 cm. Preaqueça o forno a 220°. Faça três incisões na diagonal em cada pão.
