love Asian food, but in case you couldn't tell from the title, I'm not a big fan of Bok Choy. In fact, I think it's how you say fuck you in a foreign language. And I think the word for love is Pho.  I get your confusion; we're talking about a food item here, not an ex who brought home a surprise STD. Therefore, there's no justification to treat it with equal vitriol. It's just that my hands are experiencing chopstick fatigue from constantly fishing it out of my perfect bowl of delicious Vietnamese noodle soup. At least it was perfect before I discovered Bok Choy transforming my warm meal into a kelp forest. It's just that I don't consider Bok Choy food for humans. I'm sure ducks love it, but to them, anything that floats in a pond and is soft and wet and doesn't require teeth will get them to their quacky place. But for me, soggy lettucelery is not sustenance. Is bubblegum food? What about Styrofoam? Rats eat it. I wonder if they will eat bok choy. Probably not. Anyway, did you know that eating celery burns more calories than it contains? This is called a negative calorie food. I don't believe Bok Choy is a negative calorie food, just a negative vortex that induces a trickle of anguish when I see it drastically hovering in my steaming bowl. And sure, just pick it out and move on, but then there's the regret of wasting food that is not fit for the compost pile. Maybe I should shut the fuck up and be grateful. Maybe I should just stick to pizza. One time, when I was a teenager, I bought a bunk bag of joints from some dude in his 20s. It was later deduced as rolled oregano, but I'll bet it was dried-up, shredded Bok Choy. Oh, and by the way, fuck Brussels sprouts!

Disney Parks, Experiences and Products reported quarterly revenue of $7.4 billion, up from $4.3 billion a year earlier. Last year, Disney Cruise Line was still shut down and the parks were still recovering, but this is still great news. However, there was one comment that made Disneyland fans upset. Many of you reading this are aware that some plants contain toxins as well as physical defenses that can injure. Some good examples are rhubarb leaves and wild mushrooms, both of which can make you very ill and possibly kill you. We all should know not to pick mushrooms without either having an expert forager with us or at the very least a field guide that shows which to avoid so you don't die from poison. Additionally think about very common physical defenses such as thorns on roses, blackberry and raspberry bushes, stinging nettles, cactus, poison ivy, oak, sumac, etc. There is much available evidence to demonstrate that plants do aggressively defend themselves with an arsenal of tools, none of which we enjoy. Even though this is common knowledge most don't equate plants having thorns or toxins as a way of defending themselves. Rhinos don't have giant tusks just for show, those are weapons just like antlers, canine teeth, bear claws, etc. But plants don't growl or run after you, they stay in place and hope their defenses keep them alive. Pretty amazing intelligent creations if you think about it. Inside plants are also some pretty tough defenses, in the form of chemicals, enzymes, and other toxins. A few that you may have heard of are lectins, found in many beans, and oxalates, found in many plants, fruits, seeds, roots, etc. Of course, the “health experts” scream from the rooftops about NOT eating meat but instead healthy plants like kale, spinach, almonds, peanuts, and whole grains yet they do not mention the defense chemicals in these “foods”. A great recent example of plant defenses happened the other day. I bought home a beautiful fresh pineapple, I cut it open and my daughter Ava gobbled up half a pineapple along with grapes and mangoes. Later she started getting rashes and hives all over her body, she thought it was a new deodorant she tried. My other daughter ate three or four pieces of pineapple then some nachos and blamed the nachos for her piercing stomach ache which had her in the fetal position for a few hours. The next day she also bought some fresh cut pineapple and ate it with a snack, within an hour she came home from work and laid on the bed miserable until I gave her club soda which seemed to help. The next day Ava's feet, and lips were STILL very swollen, she had to take allergy meds and Advil to curb the swelling and pain. So you see these innocent-looking plants can really mess with us humans. In my quest for health, I have tried just about every fad diet there is in an effort to eliminate psoriatic arthritis that can damage joints and make a mess of your skin. Veganism destroyed my health (and my wife's) in 5 mos, and we were forced to abandon the diet to heal. Paleo dieting which is rife with kale and nuts did not help me much either, yes it was better than vegan but still, I suffered from skin and joint pain. For the last few years, I have read much about the carnivore diet which promotes eating grass-fed meats, organs, eggs, dairy and limited fruits, and very limited plants. While I love meat, the one thing I did not miss at all on a vegan diet was meat, the cheese is what got me most upset. I have been tinkering with a carnivore light diet and have started to research how plants defend themselves and if these defenses can affect me, and low and behold they do! When I eat high oxalate foods my joints swell and my skin immediately shows signs of problems. It usually is nuts like almonds, peanut butter, and plants like broccoli that affect me. All of those are high oxalate. Oxalates bind with calcium and not only cause gut health issues they rob vital minerals too, making your electrolyte balance go whacky. My father-in-law eats a few things in his daily regimen; black tea (he's English), chips, peanuts, chocolate, potatoes, bread, all high oxalate foods, he shows many of the symptoms of oxalate poisoning; skin that bleeds easy, stomach issues like bloating, cramping, diarrhea, joint pain, mental fog, plus a history of kidney stones and gout. Of course, he just gobbles Advil and keeps going but will not change his ways, stubborn man he is! His doctors have never mentioned oxalates or any plant defense chemicals, yet they wear white lab coats :) The list of high oxalate plant foods is long but the good news is many plant foods have tolerable amounts of oxalates. Both lists are below but first, let's discuss what oxalates are. There is much debate about whether cooking reduces oxalates in food, some say yes, some say no. Here are some high oxalate foods: beans, grains, bran, sesame and other seeds, peanuts, almonds, and other nuts, swiss chard, spinach, beets, potatoes, chocolate, rhubarb, figs, kiwi, blackberries, black pepper, cumin, turmeric. Here are low oxalate foods: meats, dairy, eggs, fats and oils, and other non-plant foods arugula, avocado, Bok Choy, cabbage, cauliflower, cilantro, cucumber, garlic, kohlrabi, lettuce, mustard greens, mushrooms, green peas, watercress A few words from the website of the foremost oxalate expert Sally K Norton who is. avast resource on oxalates and has a degree from Cornell University in nutrition. A Small Bite of Oxalate Chemistry When oxalic acid, which is water-soluble,  combines with mineral ions it yields various oxalate “salts.” These mineral salts form minute crystals. Some types of oxalates remain soluble, such as sodium oxalate, and some form insoluble solids, such as calcium oxalate. The mineral calcium has a strong affinity for oxalate and thus can draw the oxalic acid away from the sodium ion and form calcium oxalate. (Thus, a soluble form of oxalate becomes insoluble.) Calcium oxalate is the predominant form of oxalate found in soils, plants, and in the human body. Crystals of calcium oxalate start out as particles and nano-crystals that have a tendency to grow bigger. Plants take advantage of this and create a number of fascinating crystal shapes in specialized cells. Oxalate crystals can also amalgamate into “stones.” A Bite of Health Science Tiny oxalate crystals attach to healthy cells and to damaged cells or cellular debris. When the cells can't contain, dissolve, and discard the attached crystal, it will attract other available oxalate particles and grow. This type of pathological crystal formation in the body may be fairly common in arteries, the thyroid gland, and elsewhere. This famously happens in the kidneys when oxalate crystals amass into kidney stones. Oxalate ends up in our urine because our bodies can't alter it and must excrete it. Otherwise, it can do serious harm inside your body. Deposits in Kidneys and Beyond In humans and animals, kidney stones typically consist of calcium oxalate. When kidney stones block the flow of urine, they become very painful and dangerous. Kidney stones are a challenging medical problem. I realize this is a lot to digest (no pun intended) but for me, it simplifies life because focusing on a few food groups and eliminating many vegetable nuts, and fruits is easier to manage and also informs my future plans for a homestead and what I want to grow and raise.

You know the one I mean - the one I mean. The one where we are honest with ourselves. Just got back from Rogue - got me to thinking about doing my homework (explain the coffee situation there and what we did) Then starting thinking about SRF 1 and 2 and ways we could have better equipped sponsors, vendors and attendees with information in advance of the festival and realized we had more homework to do as well as a 9 hour drive. I am very good at handling changing demands of an event with grace, but if I do my homework, there are fewer of these issues. What do I mean by doing your homework? Post meeting follow ups the same day Preparing a thank you note in advance of an event where one will be needed gets that small but important task done Thinking through big projects and identifying production needs, then doing them BEFORE deadline Looking into the background of people and things that you must know about to be successful (SRF Speakers) Establishing project goals and planning how to achieve them Setting up systems so that post event items get cleaned and stowed efficiently The list is endless. And therein lies the rub. The key to finding success and easing your life by doing your homework is knowing which homework you truly must do. If you don;t change your hvac filters, you end up with a huge mess. Likewise, if you do not thank your sponsors or other supporters, you damage the relationship.  And usually these kinds of problems stem from not doing your homework in advance. Usually these things keep us from doing our homework: Fear of failure Overcommittment or overwhelmedness Disorganization Distraction Depression All are excuses when you embrace who is in control of your life and schedule. So how then, do we hold ourselves accountable while maintaining that all important health-relationship-work-fun balance? Separate the important form the busywork (Example - coaching call transcript vs coaching call summary. Speaker confirmation and communication vs internet sleuthing for more on the speaker) Establish your baseline: what must always be done (Example - coaching call must always have a post call write up the same day) Set up the system that empowers the homework: (Example - schedule coaching calls with an additional hour or two for the post call write up) Make the promise to yourself (I WILL do or die this thing) The hard step: follow through.  Communicate better - underpromise and overdeliver rather than over promise and underdeliver. Eg - someone wants something now From planning events, to executing things well on your homestead, to interacting with people better - homework is something that is easy to put off. Part of this is because we are expected to do things that are busy work - like filing our tax reports. And because things like taxes come with a heavy consequence if you do not do the busywork, we have become trained to not separate the true homework that is important from the busywork that it is easy to assign ourselves because we feel good when we do it. You know - that endorphin rush you get when you click things off your list?  But imagine what it is like when you DO set yourself up for doing your homework? Think of how SRF check in will be when we have everyone with parking passes in advance. When vendor spaces are on a map and assigned? Or think of how easy it is to add people to your table when you have a plan for dinner and a deep pantry? Or how about when you have a template email ready to go to confirm things? MZD Podcast – Ep 94   Welcome to the Mountain! Well how are you feeling today? Are you the picture of health you always dreamed you would be? Today we're going to talk about cultivating one of the most important aspects of your being – Your Health. Our bodies are tied into our entire being and affect not only the way we feel, but our mind and the way we see the world and interact with everyone around us… that is, our relationships. Have you ever been “hangry”? Then you know what I mean! You're not necessarily mad at the world or angry at the people around you. You're just hungry with low blood sugar and it's affecting your mood at that very moment. For Pete's sake, (everyone else's around you), eat something! Not only are our minds and emotions and relationships affected by our health, but our spiritual well-being is as well. You see, we cannot divide ourselves into fragments of being – saying things like, “Well, we are Spiritual beings, so the Spirit is the only thing that matters!” or, “The Mind is the most important thing, because without thought, there is no being”, or, “No, only the body matters because when the body dies, you die”. The truth is, we are all of those things, Body, Mind and Spirit, and the well-being of each affects the other. Alternative medicine advocate Deepak Chopra tells us in his book, Ageless Body, Timeless Mind,   “The biochemistry of the body is a product of awareness. Beliefs, thoughts, and emotions create the chemical reactions that uphold life in every cell. An aging cell is the end product of awareness that has forgotten how to remain new.”   But how do we remain new? It's a question posed daily, coming at us from every angle through ads and promotions offering anti-aging products, promising that if you buy this or try that, you will look younger, feel better, be sexier, and on and on. Books and magazines and TV show and movies glorify youth and beauty, jumping to the superficial rewards of taking care of yourself; things like glamour and popularity, sex-appeal and even fame, while apparently ignoring the underlying importance of health, well-being and longevity. So back to the question. How do we “remain new”? This is a very deep and involved subject that has been studied and written about in many articles, books and journals filled with hundreds of thousands of pages of research, tests and observations, breaking down the biology of the human body and how it ages, and what it needs for optimum health and performance. I know this is going to sound obvious or over-simplified, but in a nutshell, the answer is simply to live a healthy life. Our bodies were created to regenerate billions of new cells daily, and have been doing it since the day we were born. We know how to, we have simply forgotten that the way to cultivate health is to simply live by health principles. And don't lie to yourself, you KNOW how to do it. Let's dumb it down into seven simple steps: Simply put, get plenty of sleep, eat healthfully, drink plenty of water, abstain from unhealthy ingredients and activities, and exercise regularly. And the two we are primarily here for today, Daily Meditation with Time Spent in Nature. More specifically, here's a quick bullet-point checklist with a few pointers: Sleep – 7 to 8 hours a night. Keep in mind that the hours before midnight are typically the most productive in healing and body repair. Ad avoid erratic sleep times and hours.   Diet – Make it your aim to be a Nutritarian. This means you eat for nutrition, not just flavor, or what seems healthier than just “the bad stuff”. Stay away from processed foods. A quick list of the good stuff might include Greens – Broccoli, Kale, Spinach, Bok Choy and other leafy greens. Fruits like bananas, oranges and lemons pineapple and grapefruit. Berries, like blueberries, strawberries, raspberries, blackberries and cherries. Eat Onions, Mushrooms, Beans and Seeds like Pumpkin Seeds, Sunflower Seeds, Flax Seeds and Chia Seeds. Daily portions of each of these categories are known sources of full nutrition for a healthy body. And don't forget healthy fats like avocados and nuts, especially walnuts, almonds and pecans. While I really enjoy eggs for breakfast, I replace cow's milk with almond milk and non-fat, plain yogurt with berries or bananas and cinnamon. Other favorites include oatmeal and quinoa. And remember yogurt is a great source of healthy bacteria important for gut health. Now I'm no doctor or health expert, and this is not a comprehensive list, but it's a great place to start the next time you're at the grocery store. By the way, don't forget your vitamins and minerals and things like ginger, turmeric and fish oil. A great book Melissa and I would recommend is Eat Smarter by Stevenson Shawn, where he teaches how to use the power of food to reboot your metabolism, upgrade your brain and transform your life. A wonderful place to start in educating yourself in nutritional health. Another favorite of ours is the website Simple Green Smoothies with Jen Hansard, offering plant-based recipes and ideas for delicious smoothies. Yum!   Drink plenty of water. 64 ounces, or 8 tall glasses a day is recommended. First thing in the morning when I wake up, I like to bath my inner body with a tall glass of water, chased by another half cup of water filled with 3 or 4 splashes of Organic, Raw, Unfiltered Apple Cider Vinegar. The kind with the “Mother” included which contains strands of proteins, enzymes, and friendly bacteria.  It may take a bit getting used to the taste, but it's a great way to lower your blood sugar in the morning, setting the tone for developing a hunger for only healthy foods at the start of the day.   Stay away from things you know are bad for you – tobacco, drugs, excessive alcohol, sugar and processed foods, AND destructive, negative thoughts and behaviors.   Simply put 10,000 steps per day, along with get-your-heart-pumping cardio 3 to 5 times per week. So much more can be said about this but I think you know what this means. Move! By the way, Green Exercise, that is, exercise outdoors is all the better if you can do it. More on this in upcoming episodes.   Meditate daily. This will help you maintain a positive, healthy outlook on life, which influences and affects your entire being dramatically.   And finally, Get Outdoors in Nature, breathe fresh air, walk in beautiful, natural surroundings and fill your heart with the sights, sounds and full-sensory experience if Nature. It has been scientifically proven to: Significantly reduce your stress levels Lower your blood pressure Improves cognitive functioning Control your thoughts and behaviors Improve your relationships Increase your confidence Boost your health in a plethora of ways including, Elevate your mood, happiness & outlook on life So there you have it. All you need to know about how to cultivate health, given in under ten minutes! Remember, if you want to have the energy that it takes to create momentum and change in your life, there is nothing more important, (or irreplaceable) than your health and well-being. Let's revisit Chopra's statement, “The biochemistry of the body is a product of awareness. Beliefs, thoughts, and emotions create the chemical reactions that uphold life in every cell. An aging cell is the end product of awareness that has forgotten how to remain new.” We set up our body by living with healthy principles, and then we help it remember how to remain new through awareness and meditation. So if you're ready, let's begin cultivating health today by integrating our body into the entire experience through today's meditation.
