Rugelach is a beloved Jewish treasure originating from Eastern Europe. The cookie-pastry hybrid can be filled with anything from jam to chocolate and is the perfect two-bite treat fit for any holiday spread. This version, a classic chocolate rugelach bolstered with the flavors of creamy milk chocolate and malted milk powder, has a nostalgic flavor and tender, melt-in-your-mouth texture that will shine at any cookie swap.Recipe16 Rugelach Dough2 1/4 cups (288g) all-purpose flour, plus more for dusting1/4 cup (50g) granulated sugar1/4 cup (40g) malted milk powder1 teaspoon kosher salt1 cup (2 sticks/226g) cold unsalted butter, cut into ½-inch cubes8 ounces (226g) cold cream cheese, cut into ½-inch cubesMalted Milk Chocolate Filling4 ounces (about ⅔ cup/113g) milk chocolate chips or chopped milk chocolate1/3 cup (53g) malted milk powder1 tablespoon plus 1 teaspoon (6g) unsweetened natural cocoa powder1/2 teaspoon ground cinnamon1/4 teaspoon kosher salt1 large egg, for egg wash, plus more if neededsanding sugar, for sprinklingMake the dough: In the bowl of a food processor fitted with the blade attachment, combine the flour, sugar, ¼ cup malted milk powder, and salt. Process until combined, 10 to 15 seconds. Add the butter and cream cheese and process until a rough, shaggy dough forms that just starts to pull away from the sides of the food processor, 30 to 45 seconds. (If you don't have a food processor you can pinch and knead the butter and cream cheese into the dry ingredients using clean hands as if you are making pie dough.) Transfer the dough onto a lightly floured work surface, cut in half, and roughly form each half into a rectangle. (Wipe out the food processor, but don't wash it.) Tightly cover in plastic wrap and chill in the refrigerator for at least 2 hours, up to overnight.Make the filling: Place the chocolate chips, malted milk powder, cocoa powder, cinnamon, and salt in the bowl of a food processor fitted with a blade attachment and process until the mixture is the texture of coarse sand, 25 to 35 seconds. (Alternatively, chop the chocolate into a fine dust and mix with the other ingredients.) Transfer into a bowl and set aside. In another small bowl, crack the egg for the egg wash and beat with a fork until no streaks of unincorporated yolk remain.Unwrap one of the chilled doughs, generously dust with flour, and roll into a 11- by 8-inch rectangle. (The dough can get sticky, so use a bit more flour than normal.) Trim the edges to create crisp lines, if desired. Sprinkle about half of the filling onto the dough in an even layer leaving a ½-inch border on the top and bottom, pressing it in with your hands so it sticks and compacts slightly. Brush the top and bottom border with the egg wash. Roll into a spiral shape, brushing the underside of the dough with egg wash each time you roll it over, and transfer onto a sheet pan. Repeat with the remaining dough and filling and freeze both logs uncovered for 1 hour.As the cookie logs are chilling, preheat the oven to 350°F and set 2 racks at the upper-middle and lower-middle positions. Line 2 baking sheets (you can line the one in the freezer once the logs are done chilling) with parchment paper or nonstick baking mats.Brush the chilled dough logs with the egg wash on all sides. (If your egg wash has a lot of chocolate in it, it's best to make a new one.) Generously sprinkle the tops of the logs with the sanding sugar. Victoria Shen is a sound artist, experimental music performer, and instrument-maker based in San Francisco. Victoria is concerned with the spatiality/physicality of sound and its relationship to the human body. Her music features analog modular synthesizers, vinyl/resin records, and self-built electronics. Victoria uses what she calls "chaotic sound" to oppose signal and information, eluding traditionally embedded meaning. Her DIY approach to deconstructing the concepts of “materiality, value and mass production” both integrate and re-contextualize the formats of the readymade and assemblage techniques. The album art for her debut LP, Hair Birth, utilizes copper to transform the cover into a loudspeaker through which the record can be played. In 2021, Victoria produced a series of cut-up records in cast resin embedded with found materials. In other performances, she pioneered the use of Needle Nails, which are acrylic nails with embedded turntable styluses, that allow her to play up to 5 record tracks at once.  Victoria has performed solo across North America, Japan, Mexico, and Europe as Evicshen and as half of the duo TRIM in North America and the UK. She currently teaches at Stanford University and the School of Visual Arts NY.

Trim up the surface of the meat and roll it out flat. If you can't find those flat steaks, you can use a uniform roast, just butterfly and unroll it to approximate the shape and form of a skirt steak. For the filling, a half cup of chopped flat leaf parsley, a half cup of chopped fresh spinach, the zest of a lemon, a tablespoon of chopped chive, a teaspoon of thyme leaves, coarse-grated provolone (1/2 cup), and finely grated parmesan (half cup). Mix these all together and use as much as is necessary to line the interior of your meat. Before laying the filling onto the meat, season with salt and pepper.Roll tightly and truss at approximately 1-1.5” increments.With a sharp knife, cut between the strands of twine to produce your pinwheels. In a heavy-bottomed frying pan, add a bit of oil and get it smoking hot. Sear both sides of the pinwheels and then turn them up on their sides to sear the edge. Once a nice crust has developed, reduce the heat to medium to slowly bring the internal temperature up to 130ºF. Let the pinwheels rest for 10-15 minutes before serving.

Introducing cost-control measures can bring immediate savings and ensure you remain profitable in the long term. But cost-control measures must be carefully managed. Eliminating errant expenses is beneficial, but indiscriminate cost-cutting could lead to a drop in quality or poor morale if staff fear being made redundant or are not given the tools they need to do their job efficiently. This risk is heavily reduced by identifying where you can safely trim costs, setting clear cost-reduction targets, and researching any cost-saving initiatives before making changes to your contracting business. Planning for effective cost-control The first step towards reducing costs is identifying your major cost areas. These are likely to include: Production Purchasing Sales and marketing Financing Administration Facilities maintenance 1. Profit and Loss Start by assessing your profit and loss statement for the last six months and rank all your expenses from highest to lowest, working your way down the list and identifying areas where you can reduce costs. Tighter control of business finances could leave you without a safety margin if cash flow becomes tight. Cutting short-term costs such as training, research, development, or advertising can lead to long-term weaknesses. Employee costs Reducing employee-related costs is generally risky and counterproductive in the long term. Reducing costs such as staff training or meeting times could lead to poor staff morale and reduced productivity. Making employees redundant could bring short-term costs and the risk of possible employment proceedings. It may also contribute to low morale. To reduce the stress of the Christmas lunch or dinner it's a good idea to include a dessert that can be prepared ahead of time. This is the most gorgeous and show-stopping Christmas dessert and it's actually very easy to assemble last minute. 1½ sheets puff pastry (use Paneton flaky puff for the ultimate buttery layers) 2 tablespoons icing sugar, plus extra to serve 3 cups mixed berries - strawberries, blueberries, raspberries Flowers to decorate, optional Mascarpone cream 250g mascarpone 300ml cream ¾ cup icing sugar 1 teaspoon extract Heat oven to 200 C fan bake. Cut the full sheet of pastry in half and place the 3 puff pastry sheets on a baking tray lined with baking paper. Dust with icing sugar then cover with another sheet of baking paper on top and another baking tray to sandwich the pastry. If they don't all fit on one tray, cook them in batches. Bake for 20-25 minutes until the pastry is dark brown and caramelised. Allow to cool completely. Trim the edges of each cooked pastry sheet with a bread knife making sure they are all the same size. These will now store for up to a week in an airtight container until ready to assemble and serve. For the filling; Whisk mascarpone, cream, icing sugar and vanilla until soft peaks form. Watch it carefully from this point as you don't want to overwhip it. Whisk on low a little longer until it holds its shape. To assemble: Spoon cream into a piping bag if you want to be fancy (or just spoon it over the pastry) and pipe a third of the cream over one piece of the pastry, then top with a third of the berries (cut large strawberries smaller) and repeat for the two remaining layers, sprinkling over small flowers and a dust of icing sugar to serve. There were also other boats with him. 37 A furious squall came up, and the waves broke over the boat, so that it was nearly swamped. 38 Jesus was in the stern, sleeping on a cushion. The disciples woke him and said to him, “Teacher, don't you care if we drown?” 39 He got up, rebuked the wind and said to the waves, “Quiet! Be still!” Then the wind died down and it was completely calm. 40 He said to his disciples, “Why are you so afraid? Do you still have no faith?” 41 They were terrified and asked each other, “Who is this? Even the wind and the waves obey him!” The storm had convinced them they were about to die, and they had forgotten Jesus was who he was! When the disciples tried to control their own situation things were spinning out of control, but as soon as they released control of the storm over to Jesus, everything became calm. You need to take responsibility for your life, but only God can take control of your life.  Principles: 1.We work, He rests!  2.He works, we rest! -If we don't start our day (in the morning!) with the Lord, it is too easy to get off track and forget who's really in control -Jesus says to the storm, “quiet be still“ That should be something we remind ourselves daily. Be quiet and still and ask the Lord how you should proceed. -even if you are a pastor, you still need rest. Jesus was resting in the boat. We all need rest.  -The only thing we should labor for is to labor to enter into his rest. Rest in his presence and depend on him. It's God's Grace, and it doesn't depend on what we've done for it. It is about what God has done for us. Don't fall into works thinking that you need to do things for God to earn his grace. -Jesu's message to us: “come unto me, all who are weary and heavy laden and I will give you rest for your souls. My yoke is easy and my burden is light.” God offers us the peace that passes all understanding even in the middle of our storms and struggles. -> This has to be an every day surrender of your life and your burdens to the Lord.     -> remember Jesus is always sleeping in your boat ready to wake when you call on him. -in the midst of uncertainty, the only thing that we can cling to is remembering that God is in control. -from Bible: “All things work together for good for those who love, and are called according to his purpose” -this is a tough one to remember because sometimes the things that are “working out to be good”  may not feel good in the moment. -don't try to take the wheel of control from God because it is exhausting for us to be in control. Turn it all over to him and surrender the outcome!  -at the end of the day, lay your day down at God's feet in surrender. Give it back to him. -Jack shares some of his early journeys before he knew the Lord, and was driving too fast in all areas of life, and was even having heart troubles because of stress. He noticed an immediate change when he came to know the Lord and he finally had a peace about him that he had never known previously. (From Jen: it has not been so immediate for me, I still find myself worrying from time to time, and have to lay this down daily and ask for God‘s peace. But I am hopeful that I will get to a place like Jack, where the peace is my natural first response to stressful situations because of my trust and dependence on the Lord.)  -Don't trust in your own knowledge or abilities or personal connections. Trust in the Lord as your provider. -peace in this worldly element is connected to the physical world, but the peace from the Lord is connected to eternity.  ***Happiness is circumstantial, but joy is eternal. -Mickey recants that he had the most peace he had ever experienced when he was in the midst of the most physical distress in the hospital after his skydiving accident.  -Scripture: Trust in the Lord with all your heart, lean not on your own understanding, in all your ways acknowledge Him and He will direct your path. -often times in church they don't talk about the supernatural side of our faith. We can agree that the Lord arose from the grave, and that he healed the lepers, and that miracles happened in the Bible, but we struggle to imagine that it could happen today and that God could control our lives if we let him. Jesus fed the 5000, healed the 40, taught the 12, but only invited 3 into the garden. ->The closer we get to our destiny, the smaller our circle of people needs to be. ->Guard your circle or you will never find rest. -> And God needs to be the main center of those primary relationships. Surround yourself with people who are also trying to be Christlike.  Trouble sleeping? Listen to the audio Bible as your trying to fall asleep. Try it for one week and see how you sleep. Jerry Bridges – “the worst days are never so bad that you're beyond the reach of God's grace and help, your best days are never so good that you're beyond the need of God's grace and help.“ -> Don't forget to ask him for his help and grace and then listen and do as He tells you.  “No matter what you think, you've survived you worst day” God wants to take people out of the storm of life and put them into peace and calmness that can't be explained by the natural. Many of us have “friends“ and acquaintances, but have very few true confidants, and we find ourselves feeling very lonely. Jesus is a friend that will always stick very closely to you. -> He will never leave you, for sake you, or let you down! All you need is Jesus! He's the only one you can trust all the time! If you're lonely, reach out to Jesus, and use his name! He really is your friend even though you can't see him.  “Jesus I want you!” Instead of talking about how big your storms are, focus on how much bigger God is. Praise and release your faith! Declare victory and favor over your storms and walk in faith like you believe God will actually move on your behalf! “Thank you God that your favor will turn this situation around! Thank you that your favor is making a way even though I can't see it right now.” Even when you can't imagine how things could possibly work out, God does.  The one is resting during the storm also has the power to calm the storm.

Sarah melts candy corn (and smokes out her kitchen) to make homemade gourmet Butterfinger-style bonbons. Bri goes sugar-free (and also candy-free), decoupaging empty candy wrappers into fun notebook covers. Rachel tries her hand at a from-scratch gingerbread house (featuring banana Laffy-Taffys, jawbusters, and other reject candies)—and burns out the motor in her brand-new hand mixer in the process. And Erin overcomes a kitchen emergency (also involving a hand mixer) to save the day with her sweet and savory late-night-snack cookies. Sarah's Candy Corn Peanut Butter Bars (aka Butterfingers) from thespruceeats.com/candy-corn-peanut-butter-bars-520932 Prep: 10 mins Cook: 20 mins Total: 30 mins Servings: 16 servings Ingredients 3 cups candy corn 1 1/2 cups creamy peanut butter, not the natural variety 12 ounces chocolate candy coating Instructions Gather the ingredients. Line an 8x8 pan with foil and spray the foil with nonstick cooking spray. Place the candy corn in a large microwave-safe bowl. Microwave the candy corn for one minute, then stir as it starts to melt. Continue to microwave the corn in 30-second increments, stirring after every 30 seconds to prevent overheating. Cook the candy corn until it is completely melted and smooth, but be wary of overheating it and causing it to stiffen up. Add the peanut butter to the melted candy corn and stir it in until it is completely incorporated. If you have trouble combining them, microwave the candy briefly (for 10 to 15 seconds at a time) just until it's warm enough to be easily mixed. Scrape the candy out into the prepared pan and smooth it into an even layer. While it is still warm, use a knife or pizza cutter to score it into small bars, 1 inch across and 4 inches long. You should get about 16 small bars from one batch, but you can always make them larger or smaller as desired. Let the candy cool completely. Once cool, break or cut the bars apart along the scored lines. Melt the chocolate candy coating in a microwave-safe bowl, stirring frequently until it is melted and smooth. Use forks or dipping tools to dip the bars completely in the coating. Once a bar has been dipped, hold it over the bowl to let the excess drip back down into the bowl. Place a dipped bar on a parchment-lined baking sheet, and repeat until all of the bars are dipped. Let them set completely at room temperature or in the refrigerator before serving. When served at room temperature, the bars have a slight chew to them, but when refrigerated they're perfectly crispy and crunchy. Store candy corn peanut butter bars in an airtight container in the refrigerator for up to a month. Bri's Candy Wrapper Notebook Honestly there are no rules on this, but here are some directions/tips to get you started:  Choose your surface! Can be a composition notebook, a journal, a canvas, a piece of MDF. Sky's the limit. (Not really but I'm sure you get it.)  Gather your other materials for your collage: leftover Halloween candy wrappers, a preferred adhesive (Schelmer's School Glue(tm), Schmod Podge(tm) or similar), and your preferred finisher (varnish, artist's fixative, etc.)  NOTE: Choose wrappers or parts of wrappers that lay flat and don't easily “ribbon” or roll in on itself — unless you want to flatten those wrappers ahead of time. Otherwise, paper- and/or wax-based are probably best. Cardboard would also work!  NOTE: When choosing a finisher, make sure it is workable and has the desired level of “sheen” you want (matte v. glossy). When in doubt, just use clear packing tape. I won't tell Martha Stewart.  Adhere the wrappers to the surface using the chosen adhesive. You can create a pattern, or use my preferred method (perhaps unsurprisingly), a free-for-all style.  NOTE: Although a collage is technically two-dimensional art, you may want to plan different “layers” to your project.  Ok, my style isn't 100% free-for-all. My first layer is always the “background layer” when I want to ensure the entire surface is covered with my collage medium. From there, I build upon that layer in terms of what I want to be visible. (E.g., If you want to make sure a certain color or brand or aesthetic predominates in your collage, make sure those wrappers compose your final layer of the collage or at least are some of the last wrappers you glue onto your surface.)  When all of your wrappers have been arranged and adhered to your surface, you're ready to apply varnish, a fixative or (again, seriously) clear packing tape to finish your artwork. Please follow the manufacturer's instructions on whichever finisher you choose so that you don't melt your skin off on contact or something!!  Erin's Friday Afternoon Snack Cookies Late Night Snack Cookies from cookiesandcups.com/late-night-snack-cookies makes 24 large cookies Ingredients 1 cup butter, room temperature 1 1/4 cups light brown sugar 1 egg + 1 yolk 1 Tbsp heavy cream or milk 1 Tbsp vanilla 2 1/2 cups flour 1 tsp baking soda 1/2 tsp salt 3 cups chopped Snickers candy, frozen 4–5 cups thick cut salted potato chips (I used Kettle Chips) Instructions Preheat oven to 350° Line baking sheet with parchment paper, set aside. In bowl of stand mixer cream butter and sugar for 2 minutes until light and fluffy. Turn mixer to low and add in egg, yolk, milk and vanilla. Increase speed to medium and mix until smooth and incorporated. Turn mixer back down to low and add in flour, baking soda and salt, mixing until combined. Add in Snickers candy and mix until evenly distributed. And finally add in potato chips and pulse until combined. Don't over mix, as all the chips will break up too much. Drop by heaping tablespoon onto lined baking sheet and bake 9-10 minutes until edges are golden. Allow to cool 2-3 minutes on baking sheet and transfer to a wire rack to continue cooling. Notes store airtight for up to 3 days. Rachel's Gingerbread House of Reject Candy from simplyrecipes.com/recipes/how_to_make_a_gingerbread_house Prep Time 2 hrs Cook Time 15 mins Total Time 2 hrs 15 mins Servings 12 Yield 1 gingerbread house With 6 cups of flour, how you measure the flour makes a difference. Lightly fluff up the flour in the container, use a cup measure to scoop up flour, then use a blunt knife to level the flour. Do not pack or tamp down the flour in the cup. These instructions were adapted from those found in the 1996 Joy of Cooking. Ingredients For the gingerbread house dough 6 cups (828g) all-purpose flour, plus more for rolling the dough (see recipe note) 1/2 teaspoon baking powder 4 teaspoons ground ginger 4 teaspoons ground cinnamon 1/2 teaspoon ground cloves or allspice 1/2 teaspoon salt 3/4 cup (170g) butter, softened 1 1/2 cups (284g) packed light brown sugar 2 large eggs 1 cup molasses 1 tablespoon water For the royal icing 2 large egg whites 2 2/3 cups powdered sugar, divided Special Equipment Stand mixer Piping bag or freezer bag Method Make the Gingerbread Dough Whisk the flour and spices: In a large bowl, whisk together the flour, baking powder, ginger, cinnamon, cloves or allspice, and salt. Set aside. Make the butter, sugar, egg, and molasses mixture: Using a stand mixer fitted with the paddle attachment, beat the butter and brown sugar on medium speed until fluffy and well blended. Beat in the eggs, molasses, and water until well combined. Combine the wet and dry ingredients, and knead the dough: Beat half of the flour mixture into the molasses mixture until well blended and smooth. Add in the remaining flour and continue to mix until well blended and a soft cohesive dough forms. Turn the dough out onto a slightly floured work surface and knead by hand 5 or 6 times until the dough is smooth and combined. If dough is too soft, add a little more flour. Divide the dough, wrap and chill it: Divide the dough in half, pat into disks, and wrap each half in plastic wrap. Refrigerate for at least two hours, preferably overnight. You can make it up to 3 days ahead of time. Let sit at room temperature for at least 10 minutes before rolling out. Make the Gingerbread House Pieces Create and cut out the pattern pieces: Create a gingerbread house pattern by cutting out pieces from our printable Gingerbread House Templates. They should print out with the correct proportions (1 inch on the pattern = 1 inch in real life), but if not, the dimensions are also given on the pattern so you can use a ruler and create your own. You can either use the regular paper template pieces as-is or, if you prefer, you can trace the pieces onto stiffer paper like a manila folder or cardboard. I like cardboard because it's almost as thick as the gingerbread house pieces will be, and you can create a house model easily using the pieces. Prepare the oven and cookie sheets: Preheat oven to 350°F, with the oven rack in the middle. Have 2 to 3 flat cookie sheets ready. Roll out the dough: Spread parchment paper on a large flat surface for rolling. Dust the paper lightly with flour. Working with one portion of the dough at a time, use a rolling pin to roll out the dough to an even thickness of 1/4 inch. Add a little flour to the surface of the dough, and check for sticking as you roll it out. If it sticks to either your rolling pin or the rolling surface, dust with more flour. If the rolled out dough is very soft, you may want to freeze it for an hour before cutting out the patterns. Cut out shapes in the dough with pattern pieces: Rub a little flour over the surface of the dough. Place the pattern pieces on the dough, as many pattern pieces as will fit on the dough. Use a small sharp knife to cut out the pattern pieces from the dough, wiping the knife surface clean frequently. Depending on how soft the dough is, you may need to use scissors to cut the parchment paper. You can cut out the patterns through the dough and parchment paper, placing the dough pieces with the paper directly on the cookie sheets. If you are not using parchment paper, you may need to use a large metal spatula to transfer the dough pieces to a greased cookie sheet. Space the pieces on the cookie sheet an inch apart from each other. If dough pieces stretch during the transfer process, push them back into shape. You can cut out a door and window(s) at this point, or you can wait until after baking, soon after the pieces have come out of the oven while the cookies are still warm. Bake: Bake in a 350°F oven until the edges are just beginning to darken, 11-15 minutes for the large pieces, 6 to 8 minutes for the small pieces. Rotate the cookie sheets halfway through the baking for more even browning. Remove the sheets to racks to cool, about 15 minutes. Trim the pieces while warm: While the pieces are still slightly warm, lay the pattern pieces over them and use a large straight chef's knife to trim off any parts of the pieces that have through cooking spread beyond the pattern. Remove pieces to cool directly on racks to cool completely. Make the Royal Icing Make the royal icing: Whisk the egg whites and 1 1/3 cups of the powdered sugar together until smooth . If you are planning to eat your gingerbread house and are concerned about the safety of raw eggs, you can cook the egg white powdered sugar mixture in a double boiler until the mixture reaches a temperature of 160°F, but not higher than 175° (for more information, read How to Pasteurize Eggs at Home). You can also use pasteurized dried or liquid egg whites. Add more powdered sugar, beat to stiff peaks: Add the remaining 1 1/3 cup of powdered sugar to the sugar egg mixture. Using an electric mixer, beat on high speed until the icing holds stiff peaks. If it doesn't form stiff peaks, add more powdered sugar. Place a dampened clean towel over the bowl of royal icing: Keep this towel over the icing to prevent it from drying out while you work with it. Pipe the icing with a pastry bag or cut freezer bag: When you are ready to mortar or decorate, fill a pastry bag with the icing. If you don't have a pastry bag, you can make your own with a re-sealable plastic freezer bag, just cut off the tip (a small cut) of one of the corners of the bag. Plastic or metal piping tips are available in supermarkets which you can also use with a freezer bag, for more controlled piping. Build the House Using Royal Icing as Mortar This is where it really helps to have more than two hands working on a house, and why making a gingerbread house is so much more fun with company than alone. If you are working on this alone, it may help to grab some canned goods from the pantry and use the cans to help prop up the pieces while the icing mortar is drying. Pick and line a base: Pick a solid base for your gingerbread house - either a flat cookie sheet, or a thick, sturdy piece of cardboard. If you want, line the base with aluminum foil or wax paper. Mortar the sides of the house with royal icing: Pipe a thick line of icing along a short end of one of the side pieces. Press the iced side piece against the edge of either the front or back pieces. Hold in place for a few minutes until the icing is partially set. Repeat with the other side piece. Prop up with cans if necessary. Repeat with the other short edges of the side pieces and the remaining front/back piece. Pipe icing along the seams, inside and outside of the house, to fill in any gaps and to add extra stability. Pipe icing along the edges of the house where it meets the base. Let set for at least an hour before attempting to add the roof pieces. Simple Tip! If any of the gingerbread house pattern pieces break, as can happen easily when working with what are essentially cookies, most likely you can repair them. On my house I forgot to cut out the door and window until the front piece had almost completely cooled. When I went to make the cuts, the piece broke. Fortunately, it was easy to mortar back together with royal icing. We even created a "splint" out of cardboard and used royal icing to hold the splint to the piece. Let harden completely before using the piece for the house construction. When it comes time to decorate, you can pipe icing right over the broken seam and no one will be the wiser. Mortar in the roof with royal icing: Once the royal icing has dried enough so that the base structure is solid, you can go to work on the roof. Pipe icing all along the top edges of the structure, front and back and two sides. The roof pieces are rectangular-shaped. Place the roof pieces so that the long ends of the rectangle are running along the top of the house. It helps if you have two people working together to place the roof pieces on the house at the same time so that they meet easily at the top center, and extend out a little bit, forming an overhang at each end. Gently hold the roof pieces in place for a few minutes until they are set enough so they don't slide off when you remove your hands. Pipe the top seam of the house with extra icing. Let the house stand for at least an hour, and preferably 8 hours before decorating. Mortar the chimney with royal icing: The dimensions of the chimney can be a bit tricky because of the angle of the roof. It's easiest to assemble the chimney first upside down, separate from the house. Pipe the pieces together with royal icing and let set until stable. Then, turn the chimney right-side-up and attach it to the roof using piped royal icing. You can do this either right after the house has initially set (1 hour after assembly) or later, during the decorating process. Decorate the house: Decorate your gingerbread house with piped royal icing and candies such as red hots, gum drops, candy canes, chocolate truffles, or whatever you like. Fellow thoughtboter Sarah Lima joins Joël to discuss an issue Sarah had when she was doing a code review recently: making HTTP requests in an ActiveRecord model. Her concern with that approach was that a class was having too many responsibilities that would break the single-responsibility principle, and that it would make the class hard to maintain. Because the ActiveRecord layer is a layer that's meant to encapsulate business roles and data, her issue was that adding another responsibility on top of it would be too much. I'm Joël Quenneville. And today, I'm joined by fellow thoughtboter Sarah Lima. SARAH: Happy to be here. JOËL: And together, we're here to share a little bit of what we've learned along the way. So, Sarah, what's new in your world? SARAH: Well, after a year and a half working on the same thoughtbot client, I have rolled off, and I have joined a new team. And I am learning a lot about not only a new codebase but learning to work with a new team. So that's always challenging, and this time it's not different. JOËL: What is something that you like to do when joining a new team to help smooth the onboarding process? SARAH: Well, I think especially getting to know people with one on ones. This time, I didn't do that right away because I had a bunch of time off scheduled right at the beginning of the project. But I did it right after I came back. And I'm learning a lot about my new colleagues, how they like to work, how they learn best. So, for instance, there are some people that like to learn and grow by reading blog posts, reading books, and there are other people that don't like that as much. JOËL: So when you joined the new project, you just reached out to all of these people and set up a few meetings just to get to know them. SARAH: Yeah, exactly. JOËL: That's really good. I've never done that on a project. And now that you've said it, it kind of seems obvious. Maybe I should do that moving forward to get to know new teammates. SARAH: Yeah. And I think it's easier on my project because it's a very small team. There are four of us thoughtboters, and there are just two client developers. So it was easier. JOËL: What about on the code side of things? Are there any tricks you like to do when you're first getting started in a new codebase? SARAH: Well, I think I really enjoy diving in right away, working on something small, and asking questions. I have also found it helpful in the past, especially on larger codebases, that someone that's experienced on a project gives me an overview showing me the quirks. And, of course, a good README is always a good thing to have, and during the process, always be updating the README. In this recent project, it was not different. I opened a lot of PRs to update the README. So that was good to have a PR right on your first day. JOËL: I love that. I think that's usually my goal when I start on a new project is to have a PR the first day that fixes anything in the setup script that has been broken since the last person onboarded or documentation that was wrong. SARAH: Yeah, absolutely. JOËL: It's always a strong first contribution. SARAH: Yeah. What about you, Joël? What's going on? What's new in your world? JOËL: I've been investigating flaky tests, and I ran across a wild bug this week. I had a test that would fail every now and then. And it was pulling some data from Postgres and then doing some transformations on it. And I couldn't figure out why it was failing. It was a complex query. So it was just pulling out not ActiveRecord objects but a raw array of values. At some point, I was putting a PUT statement in the code with the array of values I expected to get and the array I would actually get. And I was surprised to see that there is a field in there that is a float that was rounded to a different number of decimal places. I was like, that doesn't seem right. And so I was digging into it more, and I found out that this decimal value is from a timestamp that is in a file name for an mp4 video file name. And what is happening is that when we're querying the database, we're trying to extract the timestamp out of the file name by dropping the .mp4 file extension. And we're using the SQL TRIM function. Unfortunately, TRIM does not do whatever the original authors thought it does. It doesn't just remove that substring from the end, but instead, it will remove any of those characters, so in my case, any of dot, M, P, or 4 in any combination from the end of the string. So anytime that my timestamp ended in a four, any fours were just getting chopped off. So if it ended in 44.mp4, the 44 would also get removed, not just the .mp4, which meant that randomly whenever a timestamp happened to end in 4, my test would flake. SARAH: Wow. Do you have any idea how much time you spent debugging that? JOËL: Oh, probably took, I'd say, a day, two days. This is spread over a couple of debugging sessions. But eventually, finding that particular location for the bug probably took us a couple of days. In the end, the bug fix for this is just a couple of lines, a couple of days work, and the diff is only a few lines. But I'm sure that the discussion on the PR is going to be really interesting. There's probably going to be a description that is a lot longer than the actual diff. SARAH: Yeah, 100%. [laughs] JOËL: Have you run across any interesting PRs on your new project? SARAH: Yeah, I did. In fact, I recently reviewed a PR that had three interesting main issues that I wanted to address. And I wanted to lead the person that was working on it to a slightly better solution. So the three issues I saw were that the tests that were added were very DRY, so that was making everything a bit difficult to understand. The second one was that I saw one of the ActiveRecord classes was making HTTP requests, and that didn't sound like a good idea to me. JOËL: That is unusual. SARAH: Yes. The third one was that there were a lot of collections being built iteratively where another innumerable method would be a better fit, such as map instead of an each call. JOËL: Oh, this is a classic situation where you're just using each to go through and transform something, and you've got some sort of external array that you're mutating as part of the each. SARAH: Yes. JOËL: There's a great thought article, I believe, by Joe Ferris on Iteration as an Anti-pattern. SARAH: I think it's by Mike Burns. And I have referred to that article. In fact, I had very good articles for two of these three problems. I referred to a bunch of articles about WET tests as opposed to DRY tests, like how striving for tests that are DRY is not a good idea as opposed to telling a whole story in your tests. And I referred to that other article how iteratively building a collection can be an anti-pattern by Mike Burns. But the second issue about HTTP requests I didn't have anything to refer to. Maybe we should write one. JOËL: This reminds me that in the thoughtbot Slack, we have a custom emoji for you should write a blog post about that. And this would probably be a good time to use it. SARAH: Yes. So, Joël, how do you typically handle a PR that is maybe too long, and you have a lot of concerns about it? And how do you handle delivering that feedback? JOËL: Oh, that is a challenge. I've definitely done it poorly in the past. And I think the wrong way to go about that situation is to go thoroughly through the PR and leave 50, 60 comments. That is overwhelming for the other person. And they're going to have a really bad day when they see 50 comments come through. And there's so much that they can't really address the main things you were talking about anyway. So what I generally try to do, and it's kind of nice now that GitHub doesn't immediately publish your comments, is if I realize...like I start putting some more detailed comments, and then I realize, oh, there's going to be a lot, zoom out a little bit, and try to find are there some higher level trends that I can talk about? And maybe even just summarize in a larger comment at the bottom and say, "Hey, I see some larger structural issues," or "This PR is leaning very heavily on a technique that I think is maybe not the best use here. Maybe we should discuss that," instead of digging into maybe the actual implementation details of the code. SARAH: Yeah, funny, you should mention that. I have recently also started doing that, using the summary version of GitHub reviews. And I used to just go file by file and leaving comments right away. And I'm thinking that this is not a good idea, especially when the PR is long. So I think another thing I would do is also call the person to pair and ask questions and understand where the person is coming from and also explain what are your concerns and how you both can get to a better place with that PR. JOËL: That's really important. You have to remember there's another person on the other end of this. I love the idea of reaching out to them directly. Especially if there's a larger conversation to be had around approach or implementation, it's often easier to resolve those directly rather than back and forth in GitHub comments. So you mentioned situations where the PR is really long. Have you ever had to push back on that in some way? SARAH: Yes. Especially when I saw, whoa, that's going to be difficult to understand, that's going to be difficult to review. And I have reached out to the person to say, "Hey, what about we split that PR in two?" Of course thinking about splitting the PR in a way that makes sense, in a way that still delivers our users' value as soon as possible. JOËL: I've been in situations like that where it's a really long PR, and the person has already invested a lot of work into it. And maybe it's even gone through a round of reviews. It feels almost too late to ask them to split up the work. But then I've actually regretted not doing that because there's so much complexity going on that then it doesn't work, or there are some bugs in it. We struggle to ship this, or it might just have to go through so many rounds of review and re-review and re-review. And because the PR is so long, it's a huge commitment for me to re-review it every time. So there are situations I've been in where I wish that before even looking at the code at all, I was like, this is too long. We need to either slim down the story of what's being done. Because sometimes that's what happens is that the ticket is not well-defined, and someone goes in and just sort of keeps adding more code. And it becomes a bit of a big ball of mud. So, either helping to refine the ticket first or splitting the PR rather than actually looking at the code. SARAH: Yeah, and pairing often can also help with that. So especially as consultants, our clients may ask us to work on different projects, and you work alone. And you may have tight deadlines, but I think it's always helpful to find time anyway to help your colleagues as well. JOËL: I like that. I think there's a lot of value in the work that we do, where we collaborate with others in addition to whatever we do solo. So, oftentimes, it's great to pair with people at a client where possible to become involved in the code review process to even get involved in maybe some of the more broader system design conversations, sprint planning. All of those things are really good to jump into more than just getting siloed into working on just a solo feature. SARAH: Yes, 100%. JOËL: So one of the things you mentioned that stood out for you when you were doing some code review recently was making HTTP requests in an ActiveRecord model. Why is that something that sort of caught your eyes, maybe an area to push back on in a particular design? SARAH: That's a good question. My concern with that approach was that our class was having too many responsibilities that would break the SRP principle, the single-responsibility principle, and that would make our class hard to maintain. So the ActiveRecord layer is a layer that's meant to encapsulate business roles and data. So I was worried that adding another responsibility on top of it would be too much. So my idea was that we would extract a class that would handle the whole HTTP request process. JOËL: Yeah, I feel like my instincts typically when I've done third-party integrations is that the ActiveRecord class should not know about the external internet world. It knows about the database. It knows about some of its core model functionality but that knowing about the internet world is somebody else's responsibility and that, ideally, the direction of dependency should flow the other way. So maybe the class that makes an external request knows about the ActiveRecord object if it needs to let's say, instantiate an instance of that model using data from an external request. Or maybe it's even some third-party thing; maybe it's their controller that knows how to make or that will ask another object to make a request to some API and might also make a request to the model and ask it for some database data and then combine those two together. But that the ActiveRecord object only knows about that database area of responsibility and doesn't know that other things are also happening in the system. SARAH: Absolutely. And I was also thinking that that class would have a difficult test to write. So a good idea is to separate our code that is side-effectful into their own classes, and that makes our tests so much easier. JOËL: I actually wrote an article on the topic where one of my realizations at some point was that a lot of the pain points in code are what functional programmers would call side effects, so things like HTTP requests. And these are often things where we need to stub or do other things. And so isolating them as much as possible often simplifies our tests. SARAH: Yeah, certainly. And I refer to that article every time I have the chance. JOËL: Have you encountered the general concept of layered architectures, or hexagonal architectures, or things like that in the world of Rails or maybe elsewhere? SARAH: Not hexagonal architecture. I have heard about it, but I haven't dived into it yet. Can you give us an overview? JOËL: So I've also not worked with an actual hexagonal architecture. But the general idea, I guess, of layered architectures is that you build your code in a variety of layers, and different layers don't have access to or don't know about the ones...and I forget in this model if it's above or below, let's say it's below. So the inner layers don't know about the outer layers, but the outer layers can know about anything below them. And so if the core of your app is the database, your database is most definitely not knowing about anything outside of just its data. And your ActiveRecord models that sit on top of that know about the database, but they don't know if they're being fronted by a web application, or a command line, or anything else. And then, above that, you might have more of a business process layer that knows about the database. It might know about how to make some external requests, but it doesn't know about anything above that. And then, maybe at the final layer, you've got an application layer that handles things like controllers and interactions with users of the site. The core idea is that you split it into layers, and the higher-up layers know about everything below them, but no layer knows about what's above it. I feel like we're loosely applying that to the situation here with ActiveRecord in that it feels like the ActiveRecord layer if you will, shouldn't really know about third-party API requests. SARAH: So, one exception to that is the ActiveResource approach that connects our business objects to REST services. So if you have an external website and you want to connect it via HTTP, you can do it using Rails ActiveResource. JOËL: That is interesting because it functions like an ActiveRecord object, but instead of being backed by the database, it's backed by some kind of API. I almost wonder if...let's refactor our mental model here. And instead of saying that HTTP belongs in a separate layer that's higher up, maybe, in this case, it's almost like a sibling layer. So your ActiveRecord models know about the database, and they make database requests in ActiveResource, or I think there are some gems that provide similar behavior. It might be backed by a particular API, but neither of them should know about the other. So maybe an ActiveResource model should not be making database requests. SARAH: Yes, I like that line of thought. JOËL: I guess the question then becomes, what about interactions between the two where you want to, I don't know, have some kind of association? You know, I don't think I've ever used ActiveResource on a project. SARAH: I did once when trying to work with something close to microservice architecture. So we had a monolith, and we built a small service that was also in Rails, and we needed to consume the data that was stored in the monolith. JOËL: And did you like that approach? SARAH: Yeah. I think in that specific scenario, it was very productive. And I enjoyed a lot the API that Rails provided me via ActiveResources. JOËL: Did you ever have to mix ActiveResource models and ActiveRecord models? SARAH: No, I didn't; thankfully, not. I have never thought about that. JOËL: So maybe in most applications, those two will just sort of naturally fall into maybe separate parts of the app, and they don't need to interact that much. SARAH: Yeah, I think that will be the case. So mixing two of those subjects we're talking about here, that's testing and HTTP requests; we've been having a discussion in our project about the usage of VCR. That's a gem that records your HTTP requests interactions and replays them during tests. We've been discussing if using it is a good idea or not because we've been having issues with cassettes, that's one of VCR's concepts when these cassettes are not valid anymore. So do you have any thoughts on the subject? Maybe that will make a whole episode. JOËL: We could definitely do a whole episode, I think, on testing third-party APIs. VCR is one of multiple different strategies that can be used to not make actual real network requests in your tests which brings some stability. There are also some downsides to it. I have found, in general, that over time, cassettes become brittle. So the idea of VCR is really cool. In practice, I think I've found that a few hand-rolled Webmock stubs usually do the job better for my needs. SARAH: Yeah, I'll be interested in hearing that episode because, at least in my project, we have a lot of HTTP requests to external services, and they return a lot of information. I'm wondering if just dealing with that with Webmock would be too much work. JOËL: One of the really useful things about VCR is that you can just make your request from anywhere, and it will just completely handle it. In some ways, though, I think it maybe hides some of that test pain that we were talking about earlier and allows you to sort of put HTTP in a lot of places that maybe you don't want it to. And by allowing yourself to feel a little bit of that test pain, you can more easily notice the places where maybe an object should not be making a request. Or the actual HTTP logic can be moved to a concentrated place where all the HTTP is done together. And then only that object will need unit tests that actually need to mock the network, and most of your objects are fine. Where it gets interesting is more for things like integration tests, where now you're doing a lot of interactions, and you might have quite a few background requests that need to be made. SARAH: I'm looking forward to the whole episode on this subject because I feel there's so much to talk about. JOËL: There really is. I have a blog post that sort of summarizes a few different common categories of approaches to testing third-party requests, which might be different depending on whether you're doing a unit test or an integration test. But I grouped common solutions into four different categories. We'll make sure to link that in the show notes. So we've been talking a lot about testing. I'm curious when you review PR, do you start with the tests, maybe read through the tests first, and then the implementation? SARAH: That's a good question. I have never thought about starting with tests. I think I'm going to give that a try anytime. But I just start reviewing them like by the first file that comes up. [laughs] JOËL: I'm the same. I normally just do them in order. I have occasionally tried to do a test first, and that is sometimes interesting. Sometimes you read the test and, especially when you don't know what the implementation is going to be, you're like, why is this in the test? And then you jump to the implementation like, oh, that's what's going on.
