The YSL Trial gets better and better everyday. I was struck by the testimony of Detective Tyrone Dennis who believes he is a gang expert because he's watched movies based out of South Central LA and listens to rap music. Black people are not a monolith. Watching movies and listening to rap music does not make you an expert, just like some white people liking raisins in their potato salad does not mean every white person does either. This trial continues to point out infractions with the witnesses the State continues to bring and the lengths they are going to trying to convict Young Thug and YSL. 75g n'djua 300g cooked baby potatoes, sliced 200g runner beans 2 shallots, finely chopped 100g crumbled feta Slice the runner beans into 3cm pieces and cook in boiling salted water for 3 minutes. Drain well and set aside. Heat the n'duja in a large pan and stir well to break it up. When it starts to melt add the potatoes and cook for minute. Add the shallots and cook for a couple of minutes then add the beans to coat. Spoon onto a platter and crumble the feta on top. Sprinkle over the pumpkin seed picada and serve. Pumpkin seed picada 50g pumpkin seeds 25g breadcrumbs 1 clove garlic minced 25ml olive oil Handful chopped parsley 1 tablespoon sherry vinegarHeat the oil in a frying pan and add the seeds and crumbs. Cook for a minute then add the garlic. Cook until golden and add the parsley and vinegar. Cool and then chop coarsely. Check seasoning.

Brined pork chops 4 x 200g pork chops 500ml water 20g seasalt 1 teaspoon mustard seeds 25g light brown sugar Few sprigs thyme or rosemary 1 clove garlic, smashed Place water, salt , mustard seeds, sugar, rosemary and garlic in a pan and simmer until sugar and salt have dissolved. Cool completely. Place pork chops in a container and cover with brine. Leave for 24 hours then pat dry and brush with a little oil. Grill the chops for about 5 minutes each side and half way through the cooking brush with the barbecue sauce to glaze. Give a final brush of the sauce to finish and rest. Any remaining sauce can be placed in a jar and will keep in the fridge for a month.Barbecue Sauce2 tablespoons oil 2 cloves garlic, minced 1 stick celery, finely chopped 2 shallots finely chopped 2 tablespoons tomato puree 200ml tomato ketchup 200ml water 100ml white malt vinegar 2 tablespoons treacle 1 tablespoon Worcestershire sauceFry the garlic, celery and shallot gently in the oil until golden and add the tomato puree. Cook for 30 seconds then add the remaining ingredients. Bring to the boil then simmer gently, stirring frequently, for 30 minutes. Blend to a smooth sauce then pass through a fine sieve. Corn and potato salad 1kg new potatoes, scrubbed cut to roughly the same size 2 ears corn in their husk if possible 125ml sour cream 100ml buttermilk 75g mayonnaise 1 tablespoon horseradish sauce 1 teaspoon Dijon mustard 1 teaspoon gochujang or any chill paste 4 scallions chopped 1 tablespoon chopped chives Place the potatoes in a pan of cold water and bring to a gentle simmer. Place the corn directly on grill and cook until black on outside all over. Remove husk and cut the niblets from the corn and place in a bowl. Drain when just done and cut into bite sized pieces and mix into the corn with the remaining ingredients. Toss well and check seasoning.

Drain & keep warm. Marinade chicken in olive oil & the secret ingredients, or do as Emma does & use @nandosuk chicken seasoning powder. Leave for 30 mins, or less. Cook bacon in a pan over a moderate heat in a dry pan until crisping up, remove from pan, leaving fat behind in pan to cook chicken. Add a splash more olive oil to pan & cook chicken pieces over moderate heat until fully cooked through. Remove from heat & rest. Meanwhile, make dressing, mix mayonnaise, yoghurt, lemon juice, maple syrup, balsamic & mustard together & season well with salt & pepper. Dress warm potatoes with salad dressing & add the spring onions. Arrange lettuce on a serving plate & pile on with warm, dressed new potatoes. Add chicken & break up the bacon pieces to serve. This is our podcast about our food and cooking passion . . . and mostly about potatoes this time around.Here are the segments for this episode of COOKING WITH BRUCE & MARK:[00:39] Our one-minute cooking tip: store potatoes in a cool, dark place at room temperature.[01:50] We're making potato salad with pasta, a U. S. Midwestern (and elsewhere!) classic. Here's the recipe:Start with 1 1/2 pounds (675 grams) VERY SMALL yellow potatoes, boiled in a Dutch oven with lots of water for 7 minutes. (Or larger potatoes, cut into 2-inch (1-centimeter) pieces.Add 1/2 pound (225 grams) dried small elbow macaroni. Cook until both are tender, about 5 more minutes.Drain in a colander set in the sink. Cool just a few minutes, then whisk together this dressing in a serving bowl: 3/4 cup (155 grams) mayonnaise, 1/4 cup (60 ml) apple cider vinegar, 2 tablespoons (30 grams) pickle relish, 2 teaspoons (10 grams) Dijon mustard, 1 teaspoon salt, 1 teaspoon ground black pepper, 1/2 teaspoon onion powder, and 1/2 teaspoon garlic powder.Stir in the warm potatoes, pasta, 2 cups (360 grams) corn kernels and 4 thinly sliced celery stalks. If desired, top with 2 or 3 hard-cooked eggs, peeled and sliced. Just FYI, the salad tastes better when cold.
