Roasted carrots with mint emulsion and spiced chickpeas Cook time: 45 minutes Prep time: 20 minutes Serves: 12 20 carrots cut in half 2 tbsp sunflower oil Flaky sea salt Miso emulsion 2 soft boiled eggs 1 tbsp miso paste 4 tbsp orange juice Juice of 1 lemon 1 cup coriander leaves and stalks 10 mint leaves 1 tbsp brown sugar 1 clove garlic 1 tbsp ginger, peeled 300ml sunflower oil Spiced chickpeas 1/4 cup sunflower seeds, roasted 1/4 cup pumpkin seeds, roasted 3 cups drained chickpeas 1 tsp paprika 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp crushed farm chilli 2 tbsp sunflower oil Pre-heat the oven to 180*c. Cut the carrots in half and drizzle with oil and sprinkle with some flaky salt. Place into the oven and roast until tender. Combine all the ingredients for the spiced chickpeas in a bowl and toss, lay out onto a roasting tray and place in the oven along with the carrots. Cooked for 30 minutes stirring every 10 until crispy. Allow to cool . Make up the mint emulsion Bring a pot of water to the boil and carefully drop in your eggs. Time them for 5 minutes before removing and placing into iced water till cold. Carefully roll the eggs breaking the shell before peeling, (good luck!) Place all the ingredients apart from the oil into the blender and turning on slowly before turning up and slowly drizzle in the oil. Season with salt and pepper if required. Spoon a couple tbsp of mint emo onto a platter and stack the roasted carrots on top and finish with the spiced chickpeas. LISTEN ABOVESee omnystudio.com/listener for privacy information.

Secret Pour-igins: The Mocktail Cocktail: Zoo Cruise Ingredients ½ cup water ¼ cup maple syrup 4 sprigs fresh thyme OR 2 Tbsp of crushed thyme ½ tsp ground cinnamon 2 Tbsp freshly grated ginger 1 squeezed lemon 1 ½ cup orange juice ½ cup grapefruit juice 2 cup ginger beer Garnish Cinnamon stick OR sprig of thyme OR Orange wedge OR combination of some of the above Instructions Add the water, maple syrup, thyme sprigs, and cinnamon to a small pan. Bring to a simmer. Reduce the heat to low for about a minute. Then let it cool to room temperature. Fill a shaker or glass halfway with ice and strain in the thyme syrup. Add the grated ginger and lemon juice and shake well for 10 seconds. Strain the contents from the shaker into 4 glasses evenly. Throw-out roasted vegetable salad Prep time: 10 minutes Cooking time: 20 minutes 6 parsnips, carrots, courgette or buttercup & cut into long wedges 2 tbsp cooking oil Heat oven to 180 degrees. Place the vegetables into a large bowl and toss through oil and spiced salt. Then into a roasting tray ensuring all the veggies are single layer. Bake for 20 minutes before tossing and cooking for a further 5 minutes while you make the chickpea salsa. Once the veggies are cooked and whilst they are still hot, toss through the chickpea salsa, garnish and serve. Spiced salt: 1/2 tsp smoked paprika powder 1 tsp sea salt Warm chickpea salsa: 1x 330 ml can chickpeas, washed, rinsed and dried 2 tomatoes, finely diced ½ cup parsley, roughly chopped (reserve some for garnish) 3 cloves garlic, crushed 5 tbsp sunflower oil 1 lemon, juiced & zested Salt and pepper Heat a frypan and add a touch of oil, quickly sauté chickpeas until they are golden and crunchy. I've been eating too many of the Daily Bread lamb pies lately as our local coffee hut here at the beach has started stocking them. They are too good, but they'll send me broke, so I've worked on recreating one at home and it's sensational! Meltingly tender lamb and a mix of spices that just hum with flavour. Makes 4-6 single serve pies Ingredients 2 tablespoons olive oil 1 large onion, diced 800g-1kg diced lamb, I used 2 rumps 2 cloves garlic, chopped 1 heaped tsp turmeric powder 1 tsp each coriander powder, ground cumin, paprika ½ tsp ground ginger 1 tsp sea salt & ¼ tsp white pepper 400g tinned crushed tomatoes Water 300g flaky puff pastry Egg wash Sesame or cumin seeds for pie tops Method Heat the oil and sauté the onions until softened. Add in diced lamb and brown. Add spices and cook for 2-3 minutes until your kitchen smells glorious. Add in crushed tomatoes and enough water to just cover the meat. Cover tightly with a lid and cook for 1 hour until lamb is very soft. Shred some of the lamb with two forks, leaving some pieces whole. Cool. Make the pies: Preheat oven to 190 C and place a tray in to heat. Use half the pastry to line the pie tins (see note). Brush the pastry edges with water or egg wash. Fill with cooled filling. Roll and stretch remaining pastry until it is very thin, and use for the lids of the pies. Seal the edges well. Use a sharp knife to slash the tops of the pies with a few times – this let's the air escape. Brush with egg wash and sprinkle with sesame or cumin seeds. Bake on the preheated tray for 40 minutes or until the pastry is golden brown. Leave to sit for at least 10 minutes, for ease of eating. Judi Love is one of five born to her Jamaican parents in Hackney, East London. Always the funny one in the family, she gained a Masters in social work before kicking off her career in stand-up. In 2011, she made her professional debut with a show named after her motto in life, Laughter Is Healing. Since then, Judi's comedy and culinary skills have given rise to a broadcasting career. She is a much-loved regular on Loose Women and won the Celebrity MasterChef, Christmas Cook Off in 2021. Judi is here to talk about her new show, Judi Love's Culinary Cruise, which is available now on ITVX. Nick mixes a non-alcoholic picante for Judi, while she enjoys some plantain crisps with homemade guacamole to start. Angela prepares some delicious Korean crispy spiced chicken with gochujang mayo and a charred smashed cucumber salad.
