Our guest is Rafal Maslankiewicz who is the chef at Ikigai www.ikigai.nyc in New York, which opened in July 2024. Ikigai is a very unique concept. First of all, it is a not-for-profit organization, which is highly unusual for a restaurant. Secondly, beyond covering the fundamental costs of running a business, all proceeds are donated to a food bank. In fact, 80 days after the opening, Ikigai donated over $12,000, which funds 63 tons of food. And what makes Ikigai popular and enables such donations possible is Rafal and his team's excellent food menu and service. With his impressive culinary training at top restaurants under his belt, such as Masa and Eleven Madison Park in New York, he offers creative dishes inspired by Japanese traditions. When COVID hit, Lola Taverna in New York's SoHo neighborhood had only been open for a few months. The world had stopped, and Cobi Levy and Will Makris, the duo behind Prince Street Hospitality, had to pivot. They turned Lola Taverna into a communal gathering spot, offering takeout food with chairs to rent (the money went to first responders). Utilizing the park next door, they served up to 250 people a day. It helped them survive those uncertain pandemic days, and when restaurants were finally able to reopen, Lola Taverna was on everyone's mind, with a waitlist on the weekends that numbered up to 4,000. Today, their portfolio includes seven restaurants in New York and Miami, with Alba on the boards in Los Angeles, the pair's first foray to the West Coast.

I sure love a good wellnessy cafe where I can order everything from avocado toast to chia pudding to a Reishi mushroom tea but what I love even more is a good story. My boyfriend and I spoke in person with executive chef Chris Zabita at his NYC market to table restaurant Society Cafe a couple weeks ago. This week on In the Drink, host Joe Campanale is joined in the studio by Arvid Rosengren, the Best Sommelier in the World! Born and raised in the south of Sweden, Arvid initially studied Nanotechnology Engineering but figured out half-way through that working with his true passion – food and wine – would be preferable to wearing a lab coat. He spent two years at the Grythyttan School of Hospitality & Culinary Arts, while doing stints at some of the better restaurants in Scandinavia. After a brief time in Stockholm and a period at the Hotel du Vin in the UK, Arvid settled in Copenhagen, Denmark, where he spent the next six years growing from the floor sommelier of a busy restaurant to wine director for an ambitious group of almost a dozen establishments. Nearing thirty, Arvid had become a bit restless, and again needed to get away from spreadsheets and back on the floor, with the guests and the bottles. The possibility to go to New York and work came rather unexpectedly, but the allure was strong. Currently, Arvid spends most nights pushing bottles at Charlie Bird on the western edge of SoHo. Arvid is one of the most merited sommeliers in the world, holding a range of competition wins and titles, the latest and greatest being the Best Sommelier in the World, a competition held every three years for candidates representing close to sixty countries. It tests theoretical knowledge, blind tastings of various beverages and practical service skills.
