His work is to connect people and create community via resource sharing, bookmaking, hosting events, and institution building. Paul cofounded Endless Editions and the Brooklyn Art Book Fair. Both organizations focus on creating free or low-risk opportunities in independent publishing and bookmaking. Paul John is currently the Head of Community at NEW INC. Prior to working at NEW INC, he developed the risograph printing program at the Robert Blackburn Printmaking Workshop, was the coordinator of printing and publishing at the Jan van Eyck Academie, and taught risograph printing at the School of Visual Arts. Paul launched his latest publishing practice, Ijsmaaker, in 2024. Ijsmaaker is a collaborative ice cream making project operated under the guise of an artist residency titled the Breakfast Residency. Artists are invited to eat pancakes, have conversation, and create an ice cream flavor based on their work or their upcoming exhibition. His future ambitions are to continue to foster noncompetitive spaces for communities to flourish via ice cream making and hosting the Breakfast Residency.

Regular listeners will know that we are fortunate at The Scotch Malt Whisky Society to welcome representatives from distilleries, who visit us in our Members' Rooms, share some special samples of their whiskies with our members, and give us their insights and knowledge about their distilleries. In March we had a visit to the Vaults by Heemanshu Ashar from Paul John, the pioneering Indian distillery based in Goa on the country's tropical west coast. Before enjoying the tasting, we took the chance to find out more about Paul John distillery, India's whisky journey since independence in 1947 and what tropical maturation brings to this spirit.

Thanks, and enjoy the show!Be sure to show some love for the company that brought you today's bottle! ****** bottle website*****John distilleries Opened in 1992 It rebranded and started aiming for quality in 1995it is the second largest Indian Single Malt Distillery, behind amrutThe distillery is located in Goa on the west coast of indiaThe high heat allows for very fast maturing, but also forces the distillery to keep their bottles young'In 5 years the casts could loose up to half of their liquidThe temp stays between 74-89 degree F throughout the yearThis bottle was bottled in 2017, so 5 at this pointIt is now owned by sazeracThe first thing to understand is that whisky sold within India and Indian whisky sold abroad are two very different categories. Within the country, the majority of the products labelled as whisky (they use the Scottish spelling) are actually blends consisting of neutral grain spirit, fermented molasses, and only a small percentage of malt whisky.The reason these so-called whiskies don't make it to the EU or the US too often is because they cannot be labelled as “whisky”; both the EU and US do not permit whisky to be distilled from anything but a grain/cereal mash and the EU does not permit neutral grain spirit (distilled over 95%). The ones that do make it over are instead known as “spirit drinks”, with closer similarities to rum. Did you know that India is the largest consumer of whisky in the world? There is a caveat on that though. It's not all whisky as you know it. Mostly it's what is known as IMFL, or Indian Made Foreign Liquor. In India, there's very little regulation about what can be put in a bottle and labelled ‘whisky', particularly for blended whiskies. IMFL is essentially a neutral spirit tinted with caramel colouring and supplemented with something like two to 40 per cent single malt, depending on the price tag. Unsurprisingly, Indian whisky hasn't been held in the highest regard. But that's starting to change, thanks two distilleries in particular: Amrut, and Goa-based Paul John. Launched in 2012, Paul John produces close to 1.2 million litres a year of single malt whisky, which would place it comfortably in Australia's top five producers in volume terms. Paul John master distiller Michael D'Souza was in Sydney recently. We sat down for this interview about the exciting evolution of Indian whisky.
