Customers are increasingly questioning the value of their restaurant visits. This week's episode of the Restaurant Business podcast “A Deeper Dive” features Lisa Miller, a consumer strategist and author of the book “The Business of Joy.” And we talk about consumer attitudes on the value of restaurants right now. Miller surveys consumers every month and she has had some interesting insights on how diners view the restaurant industry, in particular their views on the price-value equation. We talk extensively about tipping, and what consumers think about the practice. A growing number of consumers are frustrated with tipping and we talk about why that is. And we talk about consumers' views on whether their restaurant visits are worth it. An increasing number of consumers think their visits aren't worth it and more than half of fast-food customers say they get sticker shock when they visit a restaurant. Fast-food restaurants have raised their prices 30% since the pandemic, which has frustrated diners. We also talk about what restaurants can do to make their offering more worth it to consumers. You’re probably thinking, “How hard can it be?” Well, you’re about to not only find out just how challenging it can be, but also contemplate questions like, “How long do pay the Parts B and D late enrollment penalties if you’re immortal?” In this episode, Ed and Scott discuss the intricacies of the current state of Medicare eligibility and coverage, a topic soon to be near and dear to (old man) Ed’s heart. The guys are joined by Mark Holloway, J.D., also of Lockton’s Compliance Services division, who gives the low down on: What is Medicare and who qualifies? What are the four main parts of Medicare? What’s the difference between them all? (Who is up for Medicare lasagna?) Do I automatically get my Medicare card in the mail when I turn 65? Is Medicare free? (As if it were that simple.) Can you just pay people over 65 to leave your employer plan and tell them to get Medicare instead? (No, duh. Even Priya knows that one.) Bookkeeping woes? Keep it simple. Candus Kampfer wanted to make a difference. When her hair stylist cried with relief after Candus showed her how to pull her accounting reports, Candus knew she wanted to help others. She began making short, focused video tutorials about Quickbooks in 2014, and her following grew. Candus big message: keep it simple. It doesn't need to be overcomplicated. But remember that bookkeeping is a vital part of your business. It's not just for doing taxes! Track the numbers throughout the year. Numbers are a black and white way to view your business. How to get started? Start by opening a business bank account; don't co-mingle your personal and business expenses! Keep records on paper: Use columns to designate expense categories, e.g fuel, office supplies, meals and entertainment [Hint: keep the categories fairly broad]. Or use an Excel spreadsheet to track your numbers   There are three types of reports you should be pulling: 1) Profit and Loss the top--your income, what you're being paid from your clients, based on categories of products or services below--all of your business expenses bottom line: did you make a profit or take a loss for the time frame chosen Questions to consider when looking at the P&L report: Have you been making an income in the areas you expected to? Are you making  more income in one area over another (e.g. producing books vs. producing audios)? Keep track of your expenses; where is your money going, and how does the outgo compare to the income? Compare a date range to a previous date range, e.g. this month vs last month. 2) The balance sheet All assets, all liabilities, all equity, and your net worth (Hint: The net should match the number on your P&L if you chose the same end date). The balance sheet is a snapshot of your business at a particular moment. 3) Sales by Item Summary (this report is specific to Quickbooks) For creating invoices within Quickbooks, use "items"; items are more detailed than the categories on your P&L. These items give details on the services and products you provide. It will show you the income you're generating on this specific services and products, and their percentage of the overall income. Knowing this allows you to proactively guide the business in the direction you want it to go. For example, you may see you need to do some marketing to grow a particular area. How to determine profitability in a service-based business Add a value to your time tracking Set up a non0payroll item with your service item and cost   I use Toggl for time tracking. For most of us, the free version is fine—it's what I used for years. I only upgraded to the paid version when I wanted to start drilling down into the statistics of how I was spending my time. To get your effective hourly rate, you have to track all business-related hours worked, not just billable time. Quickbooks: for each customer, you can enter billable AND non-billable time. When you go into Profit & Loss by job and by customer, it tracks the costs for you without counting it as income.   The entrepreneur's struggle: understanding the value of your work What would I like to earn? How much time do I have to work per month? Being confident with your billing comes over time. Kind, loving praise from clients helps!   Discomfort with invoicing (whether it's on your end or your client's) can be alleviated by stating things clearly in writing. Trust your gut feeling on whether it's a good match between you and a potential client.   Routine bookkeeping tasks Download or manually enter your bank transactions Enter expenses Track your income Reconcile bank and credit card accounts If using desktop version, back up your Quickbooks to an external drive (or any accounting software) [Hint: Do not use Dropbox to back up Quickbooks] Pulling reports P&L, pull it every month and compare YTD or month-to-month; are you where you want to be? Balance sheet, pull every quarter or so to make sure everytyhing looks Sales by item summary, pull every month. Making a 1-gallon batch of cider is easy! And a 3-gallon or 5-gallon batch of cider is just as easy to make too! Learn how to make cider at home and begin upping your cider knowledge today. In this episode I cover all the basics on how to make cider at home. Below find the basic equipment needs for making cider. Hint: Do get these items before getting your fresh pressed apple juice to ferment. Real basic cidermaking - 1 gallon jug Equipment needed: 1 gallon jug that came with your cider Rubber stopper with a hole big enough to fit an airlock airlock - S-shaped or go deluxe and put the cider in a glass jar Making a 3-gallon or 5-gallon batch of cider What to consider before you get your juice How much money do you want to spend and how much cider do you want to make? Consider: 3 gallon = approximately 22 pounds filled calculated as 7 pounds per liquid gallon + 1 pound for glass carboy 5 gallon = approximately 37 pounds filled I like 3 gallon carboys because they are easier to lift Equipment needed for either a 3-gallon or 5-gallon batch of cider A. Two Carboys - always choose glass over plastic B. Rubber stopper with hole in center, that fits in your glass carboy C. One Airlock use either an S-shaped or 3 piece fermentor The airlock release CO2 as the cider is fermenting and prevents Oxygen from entering. D. Yeast You can spend hours googling which yeast to use - For your first batch of cider keep it simple Tried and true yeasts. Each come in a packet and are dry yeast with approximately 5 grams. Lavlin 71B, nice all-round yeast that helps to mellow the sharpness of high acid apple blends. M2 Lavlin - this yeast makes apples sing in delight as it enhances their character. Might even get a richer mouthfeel. Extra bonus - a finish that suggests residual sugar, even though it is fermented dry! Cider House Blend English Cider Yeast E. Clear food grade tubing (1/2inch diameter) to rack cider once fermentation is done F. Campden Tablets (Sodium metabisulfite) - Used to arrest the yeast that in currently active in the juice, so that your cultured yeast can go to town once it is pitched. 1 tablet per gallon. Add to fresh juice and let sit overnight G. Fresh pressed unpasteurized apple juice Cider Blends are best! Why not use pasteurized juice? It usually contains sorbet, sorbic acid, benzoate or benzoic acid which not only affects the taste, but can affect fermentation. Extra Yeast Tips Refrigerate both liquid yeast and dry yeast packets. Each contain millions of yeast cells and you don't want them to dry out or over heat Making a yeast starter solution - a.k.a. double your yeast money by doubling the yeast By making a yeast starter you Increases yeast population before pitching Revs up the fermentation Make sure you are "pitching" yeast that is viable and healthy 1. Use a clean sanitized glass bottle, such as 750 ml wine bottle and have an extra rubber stopper and airlock. 2. Pour in: 1 cup of fresh pressed juice heated for 5 minutes Let it cool to the point that if you stuck your finger into the solution it would not burn your finger. or 1/2 cup of fresh pressed juice that has been sulfited overnight, so you know the yeast are no longer viable in that juice. 3. Put the stopper on, with airlock and let the yeast go to town. Figure 2-days and now you have enough yeast for 10 gallons instead of 5. Can you keep doubling the yeast starter? - Yes, you can! The key to relationships is finding the right person to let yourself be vulnerable with, and having the courage to leave when things no longer fit. Oh, and try not to stalk anyone.
