The U.S. Fish and Wildlife Service encourages people to hunt and eat these species to reduce their population and mitigate their environmental impact. While it might sound odd to consider eating swamp rats, they are often described as having a mild, rabbit-like flavor. Swamp rats were introduced to the U.S. for the fur trade but have since spread uncontrollably. They are prolific breeders, causing damage to wetlands by eating plant roots and accelerating erosion. Should You Try Swamp Rat Meat? If you're up for a culinary adventure, swamp rat meat can be a sustainable choice. Experienced chefs in Louisiana turn these rodents into gourmet dishes like gumbo and Nutria à l'Orange. Some even say it pairs wonderfully with wine, such as a vibrant Zinfandel, or with a refreshing beer. Though the idea might be daunting for some, swamp rats are not only eco-friendly but also tasty. One commenter on the Fish and Wildlife Service post above mentioned they thought swamp rat tasted like pork loin and found it delicious. If you're curious, it could be worth trying—especially if you're looking to support local ecosystems. A Delicious Alternative: Irish Corned Venison Recipe While swamp rat meat may not be for everyone, wild game offers numerous other flavorful and ethical alternatives. One such dish is Irish Corned Venison, a great way to enjoy venison, a lean and nutritious meat. Corned venison is easy to prepare and perfect for a family dinner or holiday meal. Ingredients for Irish Corned Venison: 4 pounds venison roast (any cut, ideally from the shoulder or leg) 1/2 Gallon Water 1/2 cup Cure (Tender quick) 1/2 cup Kosher Salt 1/3 cup White Sugar 1 TBSP Whole Peppercorns 1 TBSP Mustard Seeds 1 TBSP Coriander Seeds 1 TBSP Dried Thyme 1 TBSP Caraway Seeds 6 Bay Leaves   Instructions Prepare the Brine: In a large pot, combine the kosher salt, brown sugar, peppercorns, mustard seeds, coriander seeds, allspice, cinnamon, garlic, bay leaves, and pink curing salt. Add enough water to cover the venison and bring to a simmer. Stir until the salt and sugar dissolve completely. Cool the Brine: Once the brine is well-mixed and simmered, allow it to cool completely. This step is crucial for safety and flavor. Brine the Venison: Place the venison roast in a large non-reactive container (glass or food-safe plastic). Pour the cooled brine over the meat, ensuring it is fully submerged. Cover and refrigerate for about 5 days. Turn the venison once a day for even curing. Cook the Corned Venison: After the meat has cured, rinse it thoroughly to remove excess salt. Place it in an Instant Pot or Slow Cooker with about an inch of water. Cook until tender. (Example: Instant Pot - 50 Minutes on Pressure Cook with natural release. Slow Cooker - on High for 3-4 hours.) For extra flavor, you can add vegetables like carrots, potatoes, and cabbage during the last 30 minutes of cooking. Serve and Enjoy: Slice the corned venison thinly and serve with the vegetables. The tender, flavorful meat pairs beautifully with a simple mustard sauce or alongside your favorite potatoes. This ham, potato, and green bean stew is especially perfect after holidays if you have a partial spiral ham hanging out in the fridge. The full printable recipe is linked above, but if you're making your grocery list here's what you'll need: Meat: 1 lb diced ham, 1 ham bone or ham hocks* plus 6 cups water Vegetables: 1.5 lb red potatoes, 1 large onion, 12 oz green beans (fresh or frozen) Seasonings: 1 tsp garlic powder, 1/2 tsp salt and pepper *Can swap in broth instead, but bones will give the best flavor.

It's our first ever 3 brother interview with Alex, Kyle and Jordan Rasch! Growing up in the very small town of Mascoutah, Illinois, population 7,500, these brothers spent their time between their grandparents farm and their childhood home, one stoplight away. Food played a huge role in the upbringing of these mid-western brothers and their extended family, where a 30 plus person Sunday supper cooked by their blind grandma took place every weekend at the family farm, come rain, snow or shine.   While the brothers claim their mom, Cindy, AKA Chi Chi or just Cheech, brings the flavor with her personality over her food, she was certainly no stranger to cooking. We dive into the world of Momma Chi Chi who is one of seven siblings raised on a crop farm that she actually lives on today. Chi Chi's boys have fond memories of shucking and preserving sweet corn with their cousins to store up for the winter but when Summer came around, meals shifted to crockpots in the camper because Chi Chi much preferred to be out on the lake as opposed to in the kitchen.   Camping at the lake with her sons was a favorite past time for Momma Chi Chi who strung up her jalapeno lights, made friends with everyone at the site, always offered to bring the side dishes to the picnics and was in no rush to get the boys home when school was starting.   But the greatest culinary memory for the brothers is the infamous Amann family cookbook, "From Our Home To Yours" that was created, curated and bound together in one big assembly line by Momma Chi Chi and her 6 siblings. Filled with family recipes and cocktails, the boys admit that this family cookbook is a true heirloom that they all cherish and actually cook from on the regular.   Momma Chi Chi is one momma that deserves to be celebrated in true Hey Sis fashion! Her lively personality, dedication to family, fun and adventure created a wonderful childhood for her three boys who love and adore her completely. So crack open a Zima because Chi Chi would want you to and enjoy the hilarious tales from the Rasch brothers.

Anne talks through this slow cooker caprese chicken and pasta, which only has us putting 4 ingredients in our crock pot before walking away for a few hours. Cook up some pasta when it's almost done and you've got a complete, low effort dinner. The printable recipe is linked above, but if you're putting your grocery list together, here's what you'll need: Inside aisles: 1 6-7 oz jar pesto Meat: 1 lb chicken breasts (2-3 breasts) Produce: 10 oz cherry tomatoes, 1 handful fresh basil (optional finishing garnish) Dairy: 2-4 oz mozzarella (about 2 slices/breast) I also recommend serving this with your favorite pasta, as the cooked tomatoes and pesto make a great sauce. You can use any slow cooker, but I reach for this (affiliate link) one with a temperature probe when cooking chicken breasts so it can switch to warm once they hit 165.
