So Into That
cooking with caro (and thrive!): smoky mole chicken enchiladas

So Into That

Play Episode Listen Later Apr 27, 2026 72:13

Thanks to everyone who joined for today's Substack live cooking demo — if you couldn't make it, find a full replay above! In the demo, I cooked smoky mole chicken enchiladas with lime crema, a recipe that turns a few humble pantry staples (peanut butter, chocolate chips, tortillas, tomato paste, spices, and chipotles en adobo!) into a delicious weeknight dinner. The only fresh ingredients you'll need are chicken breasts, white onion, a red bell pepper, some shredded cheese, sour cream, and a lime!Recipes that rely heavily on pantry staples are easy to make on nights when the fridge is mostly bare — they can also be more budget-friendly, since the cost-per-use of ingredients like peanut butter and spices is often quite low.Thank you to Thrive Market for sponsoring today's live cook-along, which allowed us to make it free for all subscribers! Thank you also to Thrive for making it so very easy for me to keep my pantry stocked up with high-quality ingredients (at an excellent price point!).In addition to pantry staples, Thrive is my go-to source for kids snacks and clean home products — I love that everything they sell is free from more than 1,000 artificial, synthetic, and GMO ingredients. I also LOVE their app and use it to immediately add ingredients to my cart as soon as I finish them, so that I don't have to write them down or try to remember later.Sign up here to get 30% off your first order (STOCK UP!) and a free $60 gift. Now's a great time because everyone — new and existing members — can get 25% off many products right now during their Friends & Family sale, which runs through Saturday, May 2nd. Also FYI that new-to-Thrive What To Cook Insiders get $100 off their first four orders! While we're talking pantry staples, here are a handful of ingredients that pack a TON of flavor that I always keep on hand. We've linked WTC recipes to cook with each! * Coconut milk — Coconut milk's a great dairy-free sub for cream that you can use in curries, smoothies, and soups. In my house though, it's most often used to make coconut rice! * Chipotles en adobo — We used these smoky, spicy peppers today for our mole chicken enchiladas! You can also use them for chipotle black bean enchiladas and cheesy chipotle shrimp tacos. Rarely does a recipe use the whole can, so store your leftover peppers and sauce in an airtight bag in the freezer.* Creamy peanut butter — My house is never without a jar! Again, we used it here in our mole sauce, but I also love mixing it with soy sauce, rice vinegar, and honey for a peanut sauce to serve on noodles or alongside potstickers. This peanut veggie curry is delightful, as are PB&Js, apples with peanut butter, smoothies bulked up with PB… the uses go on and on!* Curry paste — Curry paste packs SO MUCH flavor into just one spoonful! Keep your pantry (or fridge, once you've opened it) stocked with red curry paste (Mike's is my favorite) and you can cook thai chicken chops, one-pot pumpkin chickpea curry, and thai tofu curry noodle soup! * Jarred marinara/tomato sauce — You could make a homemade marinara… or let someone do it for you! I've written many recipes with store-bought jarred marinara/tomato sauce listed as an ingredient because if you get a high-quality brand (my favorite is Rao's), it really does taste homemade and will save you so much time and effort. Stock up on a jar to be able to cook 30-minute chicken Parm meatballs, messy meatball sliders, shortcut shakshuka, and 5-ingredient eggplant marinara. What flavor-bomb ingredients is your pantry never without?! For a complete rundown on what I consider to be a perfectly stocked pantry, click here. And for a fun take on this topic, read “If My Pantry Were to Disappear, Here's What I'd Restock Immediately” — a Bon Appétit article written by Alaina Chou that I recently weighed in on! WATCH THE EPISODE HEREIn this EpisodeHighlights & “Must-Listen” Moments* 0:04 — Another chaotic start: David accidentally goes live 10 minutes early, Amy drops off before we've even begun, and Domenica Marchetti is sitting patiently waiting while the hosts sort themselves out. Welcome to live television, folks, take two.* 5:47 — Big news: SiriusXM signed us!: David announces that SiriusXM has reached out, signed a $2.1 million contract, and created an entire channel called “Culinistas” for them. Amy plays it beautifully straight — until someone notices it's April 1st. David: “Do you realize SiriusXM has no idea who we are? I bought it!” April Fools. Amy: 1, David: 1.* 9:39 — Amy's food week: Providence, Rhode Island food festival: Amy attended a celebration of Providence's dining scene — a city that, like Portland, Maine, punches way above its weight in food culture. She toured Johnson & Wales College of Culinary Arts, did a panel with food writer elyse major, and came away wanting to move there immediately.* 11:41 — This week's bread bake: the Levain: Amy's sourdough rhythm continues — this week a classic nearly-all-white sourdough with a touch of rye flour. A Levain. Beautiful and tangy.* 11:53 — Amy's Passover Seder prep: Amy is getting her brisket going and making chicken stock for matzo ball soup. Her Seder menu also includes crispy glazed sweet potatoes (mandolined, stood up like hassleback, glazed with brown sugar and butter) and roasted asparagus with Parmesan.* 13:02 — David's food week: Portuguese Flourless Almond Cake disaster: David attempted his Portuguese almond flourless cake — a recipe he hadn't made in 25 years — for Passover at Fred and Ginger's house. He forgot the butter. Alan had to drive to the gas station to buy eggs. ADHD: 1, David: 0. He went to an ADHD coach this week, however — and reports it's going well.* 15:01 — Domenica's food week: Domenica's retired husband has been doing all the cooking, which has been wonderful. Highlights: grilled swordfish steaks with asparagus and roasted red pepper, and enchiladas made with a whole rotisserie chicken — left on the counter overnight, tragically.* 17:00 — Crab cake catastrophe: The One was making crab cakes from one-year-old canned crab. The tongue-tingling was histamine poisoning. They tasted it anyway. Don't be like David.* 19:41 — Book spotlight: Pimento Cheese: The Cookbook by Rebecca Lang: David recommends this deep dive into pimento cheese from the author of Around the Southern Table — lemony goat cheese pimento, Tex-Mex pimento, pineapple pimento, and pimento cheese with chili crunch. David riffs on his own deep-fried pimento cheese balls: firmed in the freezer, rolled in panko, fried at 375°F until oozy and golden.* 22:31 — Mrs. Appleyard's Vermont kitchen: Amy goes vintage with Louise Andrews Kent, who wrote under the pen name Mrs. Appleyard — a sort of 1940s–50s Martha Stewart of northern Vermont who wrote seasonal cookbooks chronicling life in the tiny town of Crosbury Common. Charming, funny, and findable in used bookshops.* 24:52 — Food news: Copenhagen's $340 chicken prix-fixe: A restaurant called Kylling (Danish for “chicken”) invites guests to spend the first 90 minutes of their dinner interacting with the chicken that will be served. The bread basket features cardamom buns made with chicken schmaltz. Art, or a lie? David fell for for. Again, April Fools. Amy: 2, David: 1.* 26:03 — Instagram's shadow ban on non-overhead food photos (April Fools, part 2): A “leaked memo” claims Instagram will shadow ban any food not photographed from above — including soup shot from the side. Amy almost sold it. David: “It was believable. I believe everything.” April Fools. Amy: 3, David: 1.* 27:53 — Guest: Domenica Marchetti on Italian Cookies: The main event. Domenica is a prolific food writer and the author of nine acclaimed cookbooks. Her new book, Italian Cookies: Authentic Recipes and Sweet Stories from Every Region, drops April 14th. It covers the genuine, regional Italian cookies — not Italian-American cookies (no rainbow cookies, no iced anise rounds) — organized by the north, central Italy, the south, and the islands.* 29:51 — The cookie that started it all: Canestraletto di Torigna: In 2017, Domenica bit into this crumbly, flower-shaped butter cookie from Liguria (Genoa) and fell down a rabbit hole. She went to the town where it's baked, found it has a history dating to the 15th century, and discovered a town of 2,000 people with eight bakeries dedicated to this one cookie.* 31:16 — Cookie pilgrimage: from Liguria to Saronno: From there it was the amaretti di Gavi (soft almond cookies from Gavi), then Voltaggio, then Saronno — where Domenica interviewed Paolo Lazzaroni, patriarch of the Chiostro di Saronno, the family behind the famous crunchy amaretti. His grandfather purchased a medieval cloister in the early 20th century, where the family has lived and worked ever since.* 34:03 — What's in the book (and what isn't): The book is organized regionally — cookies of the north, central Italy, the south, and the islands. In the islands chapter: Sicilian cucidati (buccellati) — butter pastry filled with fig paste, nuts, and chocolate. Not included: rainbow cookies, Italian-American iced anise rounds. This is Italy, not the neighborhood bakery.* 36:21 — Deep dive on the Serpetti: From the Castelli Romani hill towns outside Rome (where the Pope summers), these S-shaped butter cookies are made by a fifth-generation family in Monteportio Catone. The baker, Paola Rosazza Battore, wouldn't share her recipe — but let Domenica watch. Through pure visual reporting, Domenica reverse-engineered it.* 44:31 — Regional cookie trends from north to south: Butter in the north. Olive oil in the south and Calabria. Lard in some regions. Honey and mostocotto (cooked grape must) in areas where sugar was once scarce. The cookies reflect the landscape, the agriculture, and the history of each place.* 56:54 — Coming back: Domenica hints that this conversation is far from over. David floats the idea of a live “Mouthful” where Domenica bakes a cookie while they talk to her. She's in.* 57:51 — Farewell to Domenica: She's a prolific food writer, author of nine acclaimed cookbooks — from handmade pasta to preserving to traditional Italian cooking — and one of the most trusted voices in regional Italian cuisine. Italian Cookies drops April 14th. Step into Episode 180 of On the Delo as David DeLorenzo welcomes back Melissa (Eat Drink AZ / Eat Drink Creative Agency) for a sharp, no-nonsense conversation on what actually moves the needle for restaurants in 2025. From scaling her team from a one-woman show to Arizona's largest hospitality social media agency, Melissa lays out exactly how she did it—and what you need to know to stand out on social. From her 15M-view “chicken at home” TikTok to geofenced Meta campaigns and a new storytelling series at historic Arizona spots, this one is packed with tactical plays, trend calls, and a clear view of where marketing is headed (hint: AR is coming fast). If you run a restaurant—or advise one—this is your field guide to content that converts, budgets that make sense, and brand choices that age well.Chapter Guide (Timestamps): (0:14 - 1:07) Episode 180 intro & Melissa's second appearance confirmed. (1:08 - 3:25) 2021→now: Eat Drink AZ growth; TikTok to 270k+/220k; 15M chicken clip. (3:26 - 5:18) Team & scale: 5 employees, 4 contractors; Texas trip for Mujinzo & Hayashi (Lin's). (12:42 - 16:13) Owner playbook by budget: in-house hour, small retainer, or agency—let insights lead. (16:52 - 18:57) Truth about paid social: Meta is pay-to-play; boost ≠ backend; spend with intent. Summary: In this episode of #70secondCEO, Carl Gould explains why your business must have a top-tier, premium-level offering—regardless of whether anyone ever buys it. This “McDaddy” or white-glove service elevates your brand, creates perceived value, and acts as a powerful marketing tool. Carl walks you through how to price it (hint: double it... twice) and how it influences customer perception just like a luxury car displayed under spotlights in a showroom. Read full transcript: Hi Everyone, Carl Gould here your #70secondCEO, just over a minute of  investment per day for a lifetime of results. So, here's what you need in your business. Whether somebody buys it or not you NEED to offer a VIP, or exclusive or premium service, or white glove treatment, concierge or McDaddy, or the whole enchilada. Whatever you want to term it. But you need that platinum, titanium offering where it's the highest level engagement with your company. How do you know what to charge? Take your current fee, cross a line through it, take that number, cross a line through that, double that number! So, you double it, and then you double it again and you bundle products, services and bonuses and perks that to your clientele would make that price seem reasonable. That's when you know you have a high enough price offering. Think about it, you walk into the showroom of an automobile dealership. What car do they have in the middle of the showroom , behind velvet ropes with the spotlights on it? Right, their most expensive car, which nobody ever buys. Why do they put it in the middle of the showroom? Because they know it will attract you into the showroom, you will be convinced the brand is worthwhile and then you'll go buy something else off the menu. Like and follow this podcast so you can learn more. My name is Carl Gould and this has been your #70secondCEO.

In this engaging episode of "Shark Theory," Baylor Barbee embarks on a culinary adventure that turns into a profound metaphor for life's various undertakings. Inspired to try his hand at making enchiladas, Baylor's grocery store experience becomes a lesson in following recipes, seeking guidance, and adapting to new challenges. As he navigates through the complexities of cooking, Baylor draws parallels to the importance of having a roadmap in life, stressing the value of trusted sources and the personal touch necessary to create something uniquely yours. Throughout the episode, Baylor explores themes of authenticity and adaptation. By sharing his humorous yet insightful story of making enchiladas, he illustrates how life's tasks often come with established blueprints that can be customized according to personal tastes and preferences. As Baylor emphasizes, understanding the timing in juggling life's responsibilities is just as crucial as in cooking, highlighting that focusing on what matters most is key to success. Key Takeaways: There is always an existing recipe or blueprint to follow in life's endeavors, whether it be in cooking or personal growth. It's crucial to personalize and adapt the established methods to align with individual goals and preferences. Trusted sources are invaluable when seeking advice or guidance in any area of life. Balance doesn't mean giving equal attention to everything at once but prioritizing what's important while maintaining awareness of others. Celebrate your achievements and learn from every experience to continue growing and evolving. Notable Quotes: "There's definitely a recipe that exists for everything under the sun." – Baylor Barbee "Find a recipe and a path to success in a manner consistent with who you are." – Baylor Barbee "Take the plan, but then you have to season to taste." – Baylor Barbee "Focus on what's important while it's important, but don't forget about everything else." – Baylor Barbee "Be proud of yourself for all that you've done, all you've accomplished." – Baylor Barbee
