In this episode of Take-Away with Sam Oches, Sam talks with Josh Halpern, CEO of Big Chicken, the fast-casual chicken chain founded by basketball legend Shaquille O’Neal. He talks about how integral O’Neal is to the Big Chicken business, how the company is diversifying its growth model through nontraditional locations and how they’re being very intentional with the business model to avoid excess spending. In this conversation — recorded live at COEX in Austin, Texas — you’ll find out why: A high-profile person is a great way to get your brand attention, but your food has to seal the deal A celebrity can open a lot of doors for growth — especially if they’re very involved Franchisees aren’t just an extension of your brand; they’re also your customer Acting with purpose can protect you from waste Communication is key to staying ahead of whatever comes next with supply chain Have feedback or ideas for Take-Away? In this episode of The Main Course, Barbara Castiglia speaks with Big Chicken's CEO Josh Halpern to learn about the disruption this franchise is posed to cause franchises focused on chicken.Big Chicken opened the doors of its first brick and mortar venue in Las Vegas, NV in 2018. Since then, they've opened several locations throughout the US including locations in stadium arenas. They have also found a home with Carnival Cruise Lines.Today, the restaurant is focused on growing intelligently while bringing awareness to their brand. When asked what's on the menu, Josh Halpern comically commented “as you can imagine, chicken, otherwise it'd be weird right?"However, in all seriousness, Halpern continued to discuss what makes Big Chicken unique. “We really try to put effort on the chicken itself, right? So, we have chicken sandwiches, chicken tenders, chicken sliders… We try to incorporate every possible flavor profile from more savory to spicy because one of Shaquille's key values is authenticity.”In fact, Shaquille has a deep connection to chicken as it was a common dinner when he was a child. There's even a Mac N' Cheese side with a Cheez-it crust that is modeled after what he remembers his mom made when he was a kid.Continue listening to Castiglia and Halpern discussing the future vision of the Big Chicken franchise, how they are coping with staffing and supply chain shortages, incorporating local flavor profiles into menu design, how they utilized time during the pandemic to set the stage to effectively expand their franchise operations, and much more.

This week, the biggest news in the country was the recall election in California. It was the first real test of how the country felt about vaccine mandates, and it proved that around 65% of voting Californians believe in both vaccination mandates and COVID safety measures by keeping Gov. Gavin Newsom in power. What does this mean for restaurants? The NRN team discusses what could possibly be ahead for California restaurants. Also, the team discusses the recent uptick in subscription programs such as the new coffee subscription service from Pret a Manger and the new subscription service Taco Bell is testing. These programs announced this week follow in the steps of Panera Bread’s subscription service, which launched in February 2020. The team reveals what they think about subscriptions and what they mean for the industry. For this week’s interview, Ron Ruggless interviewed Shaquille O’Neal, famed basketball star and franchisee of a new restaurant brand, Big Chicken. They, along with Big Chicken CEO Josh Halpern, spoke about the brand’s trajectory and maintaining Shaq’s legacy.

Taft is one of the most compelling artists I’ve had the pleasure of knowing. A relentless creator, captivating performer, and an uncompromising producer. I first met him after he’d moved back from his time spent in New York. Watching him perform, I became envious of the control he maintained over his material. He gracefully dug into song after song, each of the high caliber one witnesses when attending the performance of a true artist. One indistinguishable summer afternoon in Austin, I had gotten together with Josh Halpern (drummer for Marmalakes, Shearwater, TAFT among many others). He was living with Taft in a house just a few minutes walking distance from my own. I didn’t know Taft too well at the time. We came in to say hi and found him in a poorly lit bedroom, hunched over a computer screen working on his music. At that moment, I started to realize that there were artists recording and producing their own stuff. Getting their hands dirty. Not waiting for anyone to give them permission. Just doing it. I thought to myself, “I want to do that.” Back when it came out a couple of months ago, Taft’s record TDNP provided me with a soundtrack to the streets of New York City. Songs that I played on repeat for weeks. In many ways I look up to Taft and his effort, his energy, spent as an artist. His persistence is an example, but his craftsmanship is an inspiration. I hope you check out his music at taft.ninja Here’s my interview with him in episode 43 of Make My Day Thank you for listening, Marcus PS special thanks to CBS for not sponsoring this week’s episode...
