As head brewer at Liverpool-based Azvex, Jack Walker is responsible for creating a raft of celebrated beers. And only this month, the brewery was awarded the accolade of Best Double IPA in England for its Swedish Buzzsaw in the Untappd Community Awards. The 8.2% beer is dry-hopped with Citra, Strata, Mosaic & Nelson Sauvin These types of beers, as Jack explains, are part of the modus operandi at Azvex. And that means hazy hops, big stouts and silly sours. In this podcast, recorded in the Azvex taproom, Jack talks us through the setup at the brewery and what makes them tick. He discusses their four-vessel brew house, which allows for ultimate flexibility and control over a multitude of variables in the brewing process. He explains that the fundamentals of their hoppy IPAs remain good basic brewing practice, but also evolving how and when they use hops, their percentages of adjunct grains, and always focusing on quality markers such as dissolved oxygen and pH. Currently, they are focused on biotransformation and the flavour impact from the interaction of yeast and hops, and they have some “really silly” 60%+ adjunct grain bills. “Pray for our lauter tun!” he says…

When Blackburn Rovers went on to lift the Premier League title in dramatic circumstances on the 14th May 1995, it would be the culmination of 5 years' worth of investments by a local man named Jack Walker, a lifelong supporter who would eventually change the fortunes of one of the former founders of the football league. Former Liverpool player and manager, Kenny Dalglish was appointed in October 1991, and as Rovers secured promotion to the FA Premier League at the end of the 1991-92 season as play-off winners, in 1992 they would make all the headlines by paying an English record fee of £3.5million for 22 year-old Southampton center forward, Alan Shearer. But behind the scenes, talks had begun on transforming the stadium and bringing it more UpToDate and to compete with the so called 'big boys' of the Premier League. The biggest stand at Ewood Park, and the home of Blackburn Rovers Football Club is named after its former owner, Jack Walker - who had sadly passed away in 2000. It is just one of three stands that were built during the Ewood Park's ground redevelopment in the early part of the 1900s. But it was during its construction, a sinister secret would be unearthed that would rock the entire town of Blackburn and bring to an end a ten-year search. On July 19th 1994, a workman called John Griffiths had been busy digging a boundary trench where a row of terraced houses that had been demolished along Nuttall Street had once stood. The morning had gone as normal, but he would soon be stopped in his tracks when the sight of a human head peered from under the rubble he was removing. Their lineup consists of singer and guitarist Lorraine McCarthy, guitarist and singer John McCarthy, bass guitarist and singer Paul Maugeri, and drummer James Bosko. Maugeri and Bosko's influential playing styles rounded out to be a solid rhythm section for Somehow Sorry, John McCarthy's guitar technique has created and has developed their unique sound. John and Rain's voices when combined put the signature on this project. There is no band or artist who sounds like Somehow Sorry. They are influenced by many rock, and folk-rock bands and their songs receive regular exposure. Somehow Sorry developed from an earlier group, D'Vine Ryte, D'Vine Ryte, established themselves as part of the hard rock era of the late '80s and '90s. 1994 to 1994 was signed to the Road Runner Records Label.
