0:26~Our first guest, Chef-Owner Dominic Piperno, began his culinary journey as a youth.  Guided at a young age by his Grandparents who immigrated to the USA from Germany & Italy, Chef Piperno gained a lifetime of knowledge on how to cook with zero food-waste, using the freshest ingredients, and balancing his passion as a chef with personal time.  With those seeds planted, it is no wonder that he circled back to those habits ingrained in him from his upbringing.  This is why he chose to switch from an a la carte menu at Hearthside in Collingswood to the more efficient tasting menu.  You can visit Hearthside to experience an elevated menu, curated with the best ingredients that Chef Piperno obtained, for an exquisite dinner for two via making a reservation.17:16~Commercial Break17:40~We next spoke with Joey Ward, whose passion to bring fine dining to Georgia stems from years of experience beginning as a young man.  At 16 years old, he began his career while working at a local country club.  After earning an AA Degree at the Culinary Institute of America in 2005, he continued his education while working as the Sous Chef at Woodfire Grill in Atlanta under Season 6's Top Chef's Kevin Gillespie, and later as Gillespie's Executive Chef inside Gunshow.  Armed with the knowledge, skills, and sophistication to create a successful Chef's Tasting experience, Ward opened the joint ventures, Southern Belle and Georgia Boy.37:35~Commercial Break37:49~To say that our last guest, Chef Steve Chu, is humble, warm-hearted, and hard-working would be an understatement: His desire to ensure you enjoy the foods he creates seemed to outweigh any proclivity to brag about himself or the impressive achievements he has founded. In fact, his energy is practically palpable; Chu's passion for food and ensuring you have a positive experience was at the forefront of what he expressed.  I only hope that you can visit one of his locations and taste for yourselves the passion he expresses through his culinary creations.

She is a Certified Sommelier by the Court of Master Sommeliers and a Certified Specialist of Wine since 2008. We talk about how she had the opportunity to work for and with some of the legends of southern cuisine: Scott Peacock at Watershed as a Dining Room Manager, with Kevin Gillespie at Woodfire Grill as Sommelier, and most recently, with Gina and Linton Hopkins, working her way up to Director of Operations, Leadership & Wine. In 2019, Hatch reunited with her former Woodfire Grill colleague, Joey Ward, to lead the highly anticipated restaurants Southern Belle and Georgia Boy, just months ahead of the pandemic. He's learnt a lot along the way from creating and marketing your product successfully, to attracting, developing and retain a world-class best team. Paul spills his best-kept business secrets as well as the mistakes that got him to where he is today. Paul says, “I suddenly realised how underinvested I was as a chief executive in my own development and also that of the team that worked within the business. On the 4th January 2009, I went back into the office knowing that 25% of the people in the company wouldn't have a job the day after. I vowed from that point I would never let that happen again. Because I'd got complacent, I and we were underinvested in our own development.” To hear this and many more gold nuggets of knowledge, tune in to part 1 of this episode of drone world!

He bought the Parrot Thermal drone from Jamie for a bit of fun really, not to make money or anything. He was just flying it around, and he's got a path behind his garden where people walk their dogs all the time, like a farmers field. Well, quite regularly he saw signs up in the field 'missing dog', he was thinking "Quite a lot of dogs go missing here?". Off his own back, completely voluntarily, he started flying this drone up, searching with the thermal camera, and finding people's dogs!" If you could double your sales and listings volume in the next 12 months would it be worth attending this one session?  Crushing call reluctance for real estate agents, a proven system to make the calls you need to get the business you want. Top agents make 50 to 100 contacts a week talking to people buying and selling.  Average agents talk to 10 to 15.  Why the difference.  Studies have shown it is the subconscious fear of Call Reluctance. Call reluctance for real estate agents can be summed up in two sentences. "Fear is peeing in your pants. Courage is doing what you need to do with wet pants on." Carl White. Seriously, everybody feels the fear, truly everybody. Even the most competent top real estate agents who are making their sales all day long on the phone may look fearless, but they are not. They feel the fear and do what needs to be done to get the results they want.  Being brave isn't easy, but it does get easier over time.  By the time you finish this one-hour presentation you're going to have new insights, a fresh perspective, and several tricks that you can use to bypass your limiting beliefs. You will be able to pick up the phone and go make some sales calls, and have conversations, and ask for the business will be a lot easier. You don't have to be the fanciest guy or gal.  We have worked with thousands of salespeople who have claimed their readiness to help more people and live in a lifestyle they want with the right income to support it.  Now we are taking what we know how to do to generate sales volume through calls and asking for the business. When you make simple mental shifts, you can accelerate your results and change your life and those of the people you help. Kevin Gillespie and Carl White are the coauthors of the Amazon bestseller, Crushing Call Reluctance, and it's now in the process of being updated for the real estate agents.  You will love this presentation! Six Sauces and Relishes for Grilled Meat Success!

Guys and Food Podcast

Episode 026- As we're knee deep into grilling season, you've probably run through your tried and true favorite ways to serve grilled meat. Today, I will offer six suggestions of sauces and relishes that will bring moisture, taste, and accentuate the flavors that come with grilled meats. Normally, I studiously avoid discussing grilling (and barbecuing for that matter) because it seems that when most people talk about "guys and food", they go straight to grilling and barbecuing.   I try to cover the other aspects of guys and food but here we are in the middle of July and, if we're talking about cooking during this time of year, it simply can't be avoided. For the purposes of clarification, this show we are not going to talk about barbecuing, low and slow cooking indirectly usually over coals or wood.  That is a totally different discipline and the topic of another program.  When I talk about grilling, I mean cooking over a high heat, directly from the bottom of the grill with the cover off. If you're thinking of trying something different, here are a few things that you can make and have at the ready to help make your grilled meat or fish something to remember. Mumbo Sauce- This is a sauce that is popular around the Baltimore and Washington D.C. area.  I had never heard of it, but saw reference to it on Facebook.  When I asked what it was and an old Marine Corps pal set me straight.  He said it was just ketchup and hot sauce mixed together.  I've mixed up ketchup and hot sauce plenty of times and I even bought a bottle of Heinz ketchup with Tabasco.  Upon further inspection, it is something a little bit more than that.  I have not cooked this recipe, but here is a version from Epicurious and it seems straight forward.   Pesto-  With pesto you get a sauce that uses up the fresh basil in your garden.  You can store it in the fridge or freeze it to use during the wintertime.  Since pignoli nuts (also known as pine nuts) can be super expensive, consider using chopped walnuts as a substitute.  If you omit the nuts altogether and you can call it pistou which is the french version of the sauce.  This garlicky sauce is great on beef or fish but equally good in pasta or potato salad. The recipe I use is from Fabio Viviani's cookbook, "Fabio's Italian Kitchen." Chimichurri-  This Argentinian sauce, so you know it goes well with beef!  It's like pistou but made with fresh parsley and oregano instead of basil.  There are many different ways to make this.  I've seen recipes that include cilantro and cumin and many other herbs and spices.  The recipe that I have is from "Fire in My Belly: Real Cooking" by Kevin Gillespie and David Joachim.  This is straight forward with the exception of esplette pepper which is described in the book as "hotter than paprika and milder than cayenne, and more aromatic than both. "  So use either depending on your heat tolerance. Red Onion Marmalade (also known as a onion confit)-  What is great about this is that it adds the onion flavor but also sweet and sour taste that counter balances the char that comes with grilled meat. You'll recall in Episode 022, the burger episode, it was recommended as an an accompaniment to a burger but works well with any meat.  It is also good on grilled cheese sandwiches.  The recipe that I use come from "The Joy of Cooking" and stays for about a month in your fridge. Fresh Mint Chutney- If you have mint in your garden, you know how quickly it can take over.  Here is a recipe that will help you use up that mint, and take your fish or lamb to a higher level.  This recipe is also from "The Joy of Cooking". Caponata- This is the chunky sweet and sour eggplant relish of my youth!  Along with the eggplant, it's got celery, raisins, pignoli, tomatoes, capers and olives.  This recipe has anchovies in it too.  Do not omit them.  Be a man, not a mouse! It adds a depth to the flavor and you won't even be able to sense that it is anchovies.  The recipe that I use most often is from "The Frugal Gourmet Cooks Italian" which Epicurious has on its website.   Two non alcoholic drinks to enjoy during the summertime: Switchel- Also known as "Old Haymaker's Punch", this is a drink that was the thirst quencher in colonial times before soda or Gatorade. This recipe is from "The Old Farmer's Almanac" and includes water, molasses, fresh ginger, and apple cider vinegar. Hurricane Punch- There is certainly an alcoholic version of this drink that you know about if you spent three minutes in New Orleans.  However, I came across this non-alcoholic version recently when I was reading "International Night" by Mark and Talia Kurlansky. It is a delightful combination of citrus juices, ginger ale, and water.
