On this episode, Ragnar speaks with Ana Roš, a self-taught chef from Slovenia who helms the kitchens at Hiša Franko, a world-renowned three-star Michelin restaurant in the Soča Valley. Ana's path to the kitchen was anything but traditional; a former competitive alpine skier and diplomacy student, she pivoted to gastronomy out of love, eventually being named the World's Best Female Chef in 2017. Her journey reached a global audience when she was featured on Netflix's Chef's Table, an appearance that served as a catalyst for her career and transformed her remote restaurant into a world-class destination. Ana's culinary identity is deeply rooted in the nature of her surroundings, where she transforms foraged ingredients and traditional Slovenian products into incredible tasting experiences. Beyond the fine dining of Hiša Franko, Ana is a prolific entrepreneur, recently launching the casual dining concept Jaz and Ana Roš Drinks, a line of innovative, ready-to-serve cocktails. Tune in to hear Ana's inspiring story of building a global gastronomic legacy and discover her philosophy on staying true to one's creative spirit. Also a poet: Frank O'Hara , My Father and Me”. Deep South, Up North.

Send a textIn this episode, we are joined by Fredric Petit and Franko Vrhovac from Emerald Technology Ventures and we discover more about investment into new print and packaging technology. Emerald is not a traditional fund. It operates at the intersection of venture capital and open innovation, acting as a matchmaker between startups and more than 50 global corporates seeking new technologies and solutions across industrial innovation. With over 25 years of experience and more than $1bn in assets under management and advisory, Emerald helps corporates identify promising startups - and invests when commercial traction is proven. The conversation unpacks why packaging became a priority for investors six to seven years ago - driven by shifting waste economics, rising consumer pressure, corporate 2030 targets and tightening regulation. It also explains why printing is now emerging as a key lever for change, from sustainable marking and reduced consumables to improved uptime and fewer SKUs.Crucially, the episode clarifies what investors look for: clear differentiation, a focused value proposition, a credible team, and evidence of market pull. Sustainability matters, but it must come with a compelling business case. Finally, Fredric and Franko share how Emerald's “Sprint” programmes connect corporates and startups to accelerate pilots and real-world adoption - turning interest into implementation.A practical listen for founders, innovators, converters, brands, and anyone navigating the future of print, packaging, and industrial sustainability.Listen on:Apple PodcastGoogle PodcastSpotifyWhat is FuturePrint?

This is a remastered release (2018) of one of the most eye-opening conversations I've ever had about skiing. Before I had proper mics or a real podcast setup, I sat down with Jurij Franko - the physicist, former racer, and engineer behind the original shaped-ski revolution at Elan. The audio is now cleaned up, and I'm thrilled to bring this episode back because it genuinely changed how I understand skis.Jurij's story starts in the late 80s, when he became the first person to apply mathematics to ski design. His work validated the idea of sidecut and helped spark the carving era we now take for granted. In this episode, he explains the thinking and experiments that shifted skiing from tradition to science — and the breakthroughs that came from asking the questions no one else was asking. We dive into ski behaviour in a way few people can articulate:• why a ski carves vs. skids• how torsional stiffness and center of mass influence grip• the real physics behind vibration and “feel”• and why so many long-standing beliefs in skiing were never grounded in science. What I appreciate most is how Jurij connects design to human movement. He explains how great skiers adapt their body position, predict what the ski will do, and make thousands of small decisions based on feel and repetition. His way of cutting through jargon and simplifying the essentials is refreshing - especially for instructors. We also challenge a lot of myths: flex, vibration, “performance characteristics,” and the tendency to overteach. Jurij's view is that skiing improves when people are given the space to explore, develop awareness, and feel how the ski interacts with the snow. This conversation blends physics, history, technique, and genuine passion. It's a rare look inside the mind of someone who shaped the modern ski - and for me, it's still one of the episodes that permanently shifted how I think about skiing. Enjoy.Improve your skiing with me as your coach. Here we present a live recording from Franko sourced deep within the Norwegian woods at this years Fragments forest event. Words from the artist - This recording is from my closing set at the second forest rave we hosted with Fragments in the Norwegian woods this summer – a night that turned into our biggest production so far, and one I'm really proud of. The set starts in complete darkness, slowly building in tempo and groove, shifting into lighter melodies and psychedelic playfulness as the sun began to rise. Morning sets like these are some of my favorites: balancing the ups and downs, keeping people on the floor without pushing too hard, while leaving space to breathe. A mix of joy, freedom, and the quiet melancholy of summer coming to an end. As the sun rose over the hill behind me, we decided to extend the set by half an hour to let the first rays hit the dance floor through the smoke and create a truly magical morning. It gave me the chance to play some of the most beautiful tracks I know and gently bring everything to a halt. It was definitely one of the most fun and meaningful moments I've had behind the decks. Watch this episode ad free by joining the ITBR Patreon and get a free trial for the ITBR Professor level! patreon.com/ivorytowerboilerroomManuel Betancourt is back to talk all about his new book Hello Stranger: Musings on Modern Intimacy which explores chance encounters including online hook-up culture, cruising, and yes even bathhouses! As a culture writer and film critic, Manuel uses so many exciting pop culture examples to analyze queer male modern intimacy, including the film Cruising, Frank O'Hara's poetry, and yes even Stephen Sondheim! We get into such an interesting conversation about relationship types including friendships, casual connections, throuples, and monogamous ones. Manuel explains how his book challenges monogamy as a default relationship type, and he encourages all of us to question relationship norms! Then, I pick Manuel's brain about the nostalgia of Queer as Folk and recap episodes 14-15. Are the gay characters still relevant or do they seem like outdated gay stereotypes? You'll have to listen to hear Manuel's opinion! Today's poem is Poem (“Instant coffee with…”) by Frank O'Hara. The Slowdown is your daily poetry ritual. In this episode, guest host Myka Kielbon writes… “Loren was the person I knew in New York who was the same kind of lost as me. There is a magic to how we find each other when we need each other. It seems like our souls sort of… orbit until they reach out. They land. They find ground and we find a friend, even if it's temporary.” Celebrate the power of poems with a gift to The Slowdown today.
