If you've enjoyed an American craft beer over the last few decades, you've benefited from the efforts of our guest today. Keith Villa founded Blue Moon Brewing Company for Miller Coors back in 1995, which would of course become an iconic brand that helped usher in a new era of craft beer that we know today. His trailblazing efforts in craft beer didn't stop there, though, as he would start Ceria Brewing in 2018. Ceria is known for two things. One, launching a very early-stage, cannabis-infused beer. When they had to pivot due to being so early to market, they currently brew one of, if not the only, completely zero-proof beers made in the U.S. In our conversation we talk about what microbrewing looked like in the mid 90s, before fast-forwarding to the last decade in brewing. Like any good parable, the "David and Goliath" self-mythology of the American craft brewing industry in the '80s and '90s was illuminating, compelling — and maybe a bit reductive, too. In Episodes 33 and 34, we examined this us-versus-them dynamic from the perspective of one of the “thems,” Keith Villa, who created the Blue Moon Brewing Company from within the Coors colossus in 1995. Today, we're coming at it once again through the eyes of New Realm Brewing Co. cofounder and brewmaster Mitch Steele, who did a substantial stretch, semi-concurrent to Villa's at Coors, at Big Beer's biggest and baddest "Goliath" of all: Missouri's pre-InBev Anheuser-Busch. After starting his career in a California brewpub, Mitch eventually wound up in St. Louis towards the end of the 20th century on a skunkworks-style R&D team tasked with brewing up answers to those pesky “microbrews” that would somehow satisfy distributors in the mighty red network, the American drinking public, and August Busch the Third himself — no mean feat. Would creative extensions on the premium Michelob line do the trick? What about a new brand named for A-B's hop farm in northern Idaho? You'll have to listen on to find out. Pasteurization is a method of stabilizing beer through heat.  Although some people think pasteurization can negatively affect the flavor of beer, when used properly, pasteurization stabilizes and preserves flavors and gives brewers flexibility in the brewing process. And with the rise in popularity of non-alcoholic beer, which has less inherent preservative qualities, pasteurization not only keeps flavors stable, but is necessary to keep those beers free from pathogens. This episode's guest: Keith Villa, Ph.D., is a trailblazer in the beer and cannabis industries; and brewmaster and co-founder of Colorado-based CERIA Brewing Company, dedicated to brewing only alcohol-free beers. After earning his PhD in brewing from the University of Brussels in Belgium in the early 1990's, an honor only a handful of brewers have achieved, Keith returned to the states with the idea of crafting beers inspired by Belgian styles, but with a twist.  He then began his 32-year career as founder and head brewmaster at Blue Moon Brewing Company, an operating unit of MillerCoors.  Since retiring from Blue Moon, this beer doctor developed a patented brewing method to produce great tasting alcohol-free craft beers; written a book titled Brewing with Cannabis, Using THC and CBD in Beer; and continues to speak worldwide as an expert in both the beer and cannabis industries. This Episode is Sponsored by:Malteurop Malting CompanyMalteurop Malting Company (MMC) is based in North America—specializing in growing and producing quality malts for the craft beer and distilling industries. We discuss the brand's soaring success after its rocky first few years in the Rocky Mountains — and how once Blue Moon found its footing in Coors' portfolio, it started to face criticism from some members of the craft brewing industry, who painted the beer as an interloper to “the movement” that Villa had considered himself a part of. We're here to help you make it through Dry January We've made it through another year and here we are with our livers beaten senseless through the holiday celebrations.  If you're giving the body a break and trying to go dry we have some good news.  There are some pretty decent options available now to allow you to still have drink with your friends. People always have questions about the Beer Guys drinking NA beers.  Hey, we like beer, but we know that too much of it is not a good thing.  We also like the taste of beer so having an occasional day, week, month where we ease up on the alcohol can be a good thing.  Speaking of just doing a day or so... we heard of Damp January this year.  That's kind of the principle we've been going by.  It can still be beneficial to take a break even if you don't go totally dry. With that in mind... here are a few of our favs. NA Beers Athletic Brewing - Most of what we've tried from Athletic is solid.  They are our favorite all around NA brewer Partake - Another one that is mostly solid. Bravus - Their Peanut Butter Dark is our single fav NA beer, and the one that would be most difficult for us to tell from an alcoholic version of the same style Ceria - Only a couple offerings right now but they are tasty.  If you're in CA or CO, they offer NA brews infused with THC and CBD.  (Ceria was founded by Dr. Keith Villa, the creator of Blue Moon.) One to pass on.... Hairless Dog.  We tried several of their offerings and did not find any we thought were palatable. NA Spirits NA spirits have some catching up to do with NA beer.  The quality is just not there and they are VERY far off from tasting anything like what they are trying to replace. Most brands do say they are meant to be mixers rather than drinking them straight.  We highly suggest you follow this guideline.  The "bite" and mouthfeel is the hard part here.  Some brands add pepper and capsaicin to try and mimic the heat, but it's still a long shot We recently tried Drink Monday gin and whiskey.  They are some of the better ones we've tried, but still not sippers.  Nate made an NA Old Fashioned with them and it was a decent cocktail, but not really passable as an Old Fashioned. BIG WINNER - Lyre's Italian Spritz is pretty tasty.  Even on it's on.  A cocktail of 1 part Lyre's, 1 part Drink Monday gin, over ice and topped with Fever Tree tonic made a very enjoyable cocktail that would pass for a gin and tonic. If you're shooting for Dry January we're rooting for you.  We know you can do it.See omnystudio.com/listener for privacy information.

We also have one of our favorite guests sitting in with us, Cory Kuczynsk, to help us kick off a new year of podcasts! So, what do you, our beloved listeners, think will be the biggest beer trends in 2022? We found some obvious predictions and some surprising ones. Cleaner and simpler beer should one popular thread that Wii be riding the coat tails of hard seltzers, low alcohol and lager beers. We may have seen the run of hazy IPAs begin to fizzle and the demand for sour beers looks to be coming back for another gig. For some of the surprising trends we found… Smoothie and rosé beers should have a bigger presence along with fresh hop beers. Craft malts or Branded malt beverages get a nod as craft brewers are trying to separate themselves from the brands acquired and made by the mega breweries. The smaller breweries are also trending to what is known as ‘no style' beers as they try to make their own mark among the mega brewery dominance. The resurrection of the taproom concept is a trend that we find appealing. There is nothing better than sipping some fine fresh local beer in a beer garden on a nice day or inside the taproom on a cold winter night. Hell anytime is a good time to be drinking good beer, especially local…or home brew…HAH! And speaking of sipping some fine beer we had the following beers to sample. From one of our sponsors Pig Minds Brewing  we had the always delicious IPA, Sweep the Leg. As for home brews Kent brought in a Kölsch style that was a good representation. Sears brought a holiday spice beer that is a clone of Boston Beer Co  Old Fezziwig Ale  a style he loved during the holidays but is now difficult to find so he took a stab at it. Sears also brought a Belgian Wit that is infused with THC. A tasty beer with an additional ‘kick' inspired by our Episode 77 podcast  with Dr Keith Villa of CERIA Brewing. Speaking of home brews if you want to have the guys sample your beer on the show give us a shout either via e-mail, our web site or Facebook. “Put a lime in the coconut and drink 'em both together; Put the lime in the coconut, then you feel better; Put the lime in the coconut, drink 'em both down; Put the lime in the coconut, and call me in the morning” Put the Lime in the Coconut  This popular novelty song from the 1972 album Nilsson Schmilsson by Harry Nilsson finds a girl in tummy trouble after drinking a concoction of lime and coconut. She calls her exasperated doctor in the middle of the night, who suggests she take a little of the hair of the dog that bit her. Welcome back to Home Brew Rock Stars Episode 77 and although we are not putting limes in coconuts we are putting orange slices in Belgian White beer and THC & CBD's in beer and that sounds like much more fun! In this episode we have the privilege and honor of having Dr. Keith Villa call in to our show. Keith has a Ph.D. in brewing science and fermentation biochemistry. If the name is not familiar to you it should as Keith was the brew master that brought Blue Moon beer to the masses. After 32 years as brewer at MillerCoors (now named Molson Coors) Keith retired in 2018. Not long after his retirement he and his wife Jodi co-founded CERIA Brewing Co. to fulfill their dream of creating THC/CBD infused beers. Keith is an interesting guy that loves to talk about beer. The Home Brew Rock Stars crew enjoyed visiting with Keith about his journey into brewing, his time at MillerCoors and his new venture with Ceria Brewing Co. CERIA's claim to fame is infusing THC and CBD's into great tasting no alcohol beer. No alcohol beer is absolutely necessary to infuse THC into it as federal law still recognizes cannabis as a schedule 1 drug, unlike the 18 states and the District of Columbia that have legalized recreational use. I know, I know, great tasting no alcohol beer? But yes Keith has a proprietary technique that removes all the alcohol but still has great taste. Dr. Keith Villa is best known as the inventor of the iconic Blue Moon Belgian White.  Whether you're a fan or not, it's hard to argue the impact this beer has had on craft beer, and the beer world in general.  We promised Villa we wouldn't dominate the show with Blue Moon questions.  We lied.  We get a good segment in on the history of the brew and the small change that launched it to stardom.  It's a pretty great story. But cannabis beers are the them of the day and we talk plenty about them.  They're are multiple levels of illegality in putting cannabis and alcohol together, so all of CERIA's brews are non-alcoholic, and 0.0% at that.  The brewery didn't want to run afoul of any regulations with the

Keith is the man who CREATED Blue Moon beer.. yep, that Blue Moon.. and since then, Keith has gone on to retire from Coors with a star-studded resume and launched his new company, Ceria Brewery- Non Alcoholic Beer, infused with THC. He went on to study "beer" abroad at some foreign brewery college (yep, its real..we googled it) and then came back to CO stunt on his competitors. 30+ years of brewery knowledge, two legit beers that revolutionized the industry..all from the man on the other end of this interview! CBP Stories showcase individual members who have an inspiring story to tell. During his 32 years at MillerCoors, Keith Villa created this cloudy, unfiltered Belgian-style beer, first brewed at the 10-barrel Sandlot Brewery inside Denver's Coors Field, that would go on to become the number one craft beer in America, helped in part by the Valencia orange slice Keith suggested bartenders place on every rim. Having retired from Coors in 2018, Keith, along with his wife Jodi, began focusing on the next stage in their careers – development of a craft beer infused with THC, a key psychoactive chemical from cannabis plants that creates pleasurable sensations. In December 2018, the Villa's CERIA (rhymes with “area”) Brewing Company launched its first THC-infused non-alcohol brew in Colorado. Since then, CERIA has expanded throughout Colorado and plans are to expand to other states where the use of recreational marijuana is legal. Having successfully grown CERIA's THC-infused beer brand, Keith decided in 2020 to also offer his non-alcoholic beers without THC. www.CraftBeerProfessionals.org

In this episode, Matt talks to Brewmaster John Legnard and Senior Marketing Manager Michell Ahbe, from Blue Moon Brewing Company. Blue Moon's story begins in the Sandlot Brewery at Coors Field in Denver, Colorado, at the beginning of the 1995 baseball season. After earning his Ph.D. in brewing from the University of Brussels, their founder and head brewmaster Keith Villa returned stateside with the goal of brewing well-crafted beers inspired by Belgian styles, with a refreshing twist. Amongst the many beers, one fan favorite emerged, in true baseball fashion they called it ‘Bellyslide Wit'. Someone said, “A beer this good only comes around once in a blue moon,” and thus Blue Moon® Belgian White Belgian-Style Wheat Ale was born.  Eventually, Blue Moon gained recognition, winning over drinkers and inspiring brewers across the country. In doing so, Blue Moon catapulted the craft movement forward, helping to shape the modern American beer scene. Now, over 20 years later, Blue Moon is still the #1 craft in the US* and is now also delighting consumers in 25+ countries globally. The cannabis beverage space is a fascinating one. Much like the craft beer movement, which grew from the work of a few hobbyists in the 1980s and 1990s into a multibillion dollar industry today, we're seeing pioneers invent new product categories, take big chances, and create new consumer experiences.  In Colorado, Keith Villa is doing exactly that. After founding Blue Moon Brewing Company and retiring from MillerCoors after 32 years in the world of beer, he and his wife have launched CERIA - a line of non-alcoholic beverages that drink like beers, but contain 0.0% alcohol and are infused with THC and CBD. He brings a deep understanding of the alcohol industry and the science of brewing to this nascent field, and has created a new product designed to serve as a replacement for alcohol - buzz, taste, and all. Today, Keith joins the podcast to share stories from his time at Blue Moon, including how he brewed the first pumpkin beer (and chicken beer, for that matter), the unique challenges in the cannabis beverage space, and talk about where he sees this industry going in the years to come.  KEY TAKEAWAYS What brought Keith out of retirement to start CERIA - and how he began to experiment with CBD and THC-infused beverages. The specific qualifications that define a beverage as beer - and why it's so hard to brew with cannabis in particular. The misunderstandings around cannabis and its effects in beverages - and why Keith is so excited about the new cannabinoids currently being researched and explored.  Why the alcohol Tax and Trade Bureau will likely never approve a cannabis-infused alcoholic beverage, even in the event of federal legalization - and the scientific reasoning behind this. How Keith approximates the buzz of alcohol in dosing his products. Why Keith believes 2022-2025 will be a crucial time for federal legalization.  Show Notes For complete show notes, including transcripts, takeaways, and links to all the resources mentioned, visit SoHoExp.com/11 To learn more about the podcast and get access to all episodes, visit: SoHoExp.com/GreenRepeal

Keith Villa is an unlikely advocate for cannabis-infused non-alcoholic beer. The cerebral PhD with a molecular biology background spent more than three decades working for Coors, with two decades focused on creating and building the Blue Moon brand, and today he approaches the subject of cannabis beer with a scientist’s rigor and a marketer’s soul. In this conversation, he lays the groundwork for his current exploration, discussing the ins and outs of brewing Belgian-style witbiers (from grist composition to mash regimens that lock in stable haze and substantial head), the value of ritual and drama in beer service, and thinking beyond style strictures when envisioning beers. From there, he delves into the new opportunities that blending beer with cannabis provides—utilizing terpenes common to both hops and cannabis to promote certain physiological effects—before finishing with a primer in the process and technical concerns around de-alcoholizing beer.
