(12:00) The history of pasteurizing milk in the United States goes back to 1893. Milk used to get easily contaminated once dairies entered cities. (16:00) Cities were filthy decades ago and created “the milk problem.” Thirty to forty percent of people would die from contaminated milk in the late 1800s. Mark describes how raw milk is processed. (22:00) Mark's farm has a lab on site that tests every batch for negative bacteria. The only benefits to commercialized milk are that it “lubricates cereal.” (24:30) Pasteurized milk is the number one allergenic food listed on the FDA's website. This episode was recorded at the 2025 Western Dairy Management Conference in Reno, Nevada. Dr. Sabine Mann, Cornell University; Dr. Will Mustas, Progressive Dairy Solutions; Dr. Don Niles, Dairy Dreams LLC; and Joey Airosa, Airosa Dairy Farms, introduce themselves. (0:48)Dr. Mann outlines the high points of her presentation. Giving an adequate amount of high-quality colostrum quickly after birth is essential to equip the calf with the best chances to stay healthy. Colostrum is more than a solution of water and immunoglobulins, and we are continuing to learn more about other nutrients and growth factors that colostrum contains. (12:03)Dr. Niles and Mr. Airosa talk about colostrum and maternity protocols on their dairies. Each has dedicated maternity staff in charge of postnatal calf care. Don mentions they often have public tours of their dairy and shares some anecdotes. Joey's maternity staff try to get colostrum in calves within 30 minutes of birth and have worked out a good communication system to ensure seamless calf care when shift changes occur. (13:57)Dr. Mann emphasizes the timing of colostrum delivery is critical. But what about the amount? Should every calf get four liters? Joey notes they bottle feed and have settled on three quarts for Holstein calves and two quarts for Jersey calves. Sabine says research backs that up - calves will not voluntarily drink much more than 3-3.5 liters. Using esophageal feeders to give four liters could be overfeeding in some cases, which could cause slower emptying of the stomach and thus slower arrival and uptake of immunoglobulins at the small intestine. The four liter recommendation came from the idea that good quality colostrum probably had about 50 grams per liter of IgG, and at that time, we wanted to get 200 grams into the calf. Perhaps making a sheet with recommended amounts based on calf weights could be helpful for maternity staff. Dr. Mann also clarifies that the 50 grams per liter of IgG is not really good quality colostrum. Most herds average about 90-100 grams per liter of IgG in colostrum. She recommends every farm find out how good their colostrum is and optimize feeding amounts from there. (22:45)Dr. Mann notes the importance of making sure dry cows are not deficient in protein supply and ensuring the dry period is long enough to create high-quality colostrum. While it's commonly thought older cows have better colostrum than young cows, she underlines again the importance of measuring colostrum quality to know for sure. She also highly recommends measuring colostrum quality from individual cows before pooling so that poor colostrum does not dilute good colostrum. (31:04)Dr. Mustas shares some of the challenges he's seeing on dairies where he consults. What can we do to control the bacteriological quality of colostrum? He notes there's no reason we can't get very low bacteria counts pre-pasteurization. Making sure maternity areas are clean and sanitary, udders are prepped very well, and harvesting equipment is not neglected are all great strategies. (35:53)Dr. Mann talks about individual cow variation in colostrum production and some factors that might influence including placental interactions, hormones, and genetics. (38:04)Scott and Sabine discuss some of the research around supplementing with choline during the dry period and subsequent colostrum production. (41:28)Dr. Niles comments that pasteurization of colostrum has been one of the most exciting technologies to come along. On his farm, the pasteurizer has given them much more control over colostrum quality and delivery time. Dr. Mann agrees storage of colostrum has given dairies the ability to be strategic about how they use colostrum, what colostrum they use, and to also plan for seasonal colostrum shortages. She agrees with Dr. Mustas that clean colostrum harvesting equipment is key to low bacterial counts. (44:13)Dr. Mustas talks about how the beef-on-dairy phenomenon has altered colostrum protocols. Calf ranches are giving deductions for poor colostrum scores when calves are received. Some operations even offer premiums or discounts on daily yardage depending on individual calf colostrum scores. (50:21)Joey, Don, and Sabine comment on the importance of finding the right people to work in maternity and instilling the idea that taking care of cows and calves is both a great responsibility and a great honor. Amid rising concerns about bird flu affecting dairy cows, experts want the public to know one thing clearly: pasteurized milk is safe. Dr. Keith Poulsen, Director of the Wisconsin Veterinary Diagnostic Laboratory, emphasized, “Pasteurization is 100% effective. This is not a food safety issue.” He also shared reassuring news: no bird flu virus has been found in Wisconsin dairy cows to date. While poultry have been hit hard by the H5N1 virus, dairy cows experience it very differently. “We’re not seeing cows die from this virus,” Dr. Poulsen said. “Only about 2 to 3 percent of cows are affected, and most recover.”See omnystudio.com/listener for privacy information.

Pasteurization is the process that rids milk of bacteria. But more people are opting for unpasteurized milk, also known as raw milk. In May, sales of raw milk rose more than 20 percent compared to the year before. That's according to Nielson IQ, a market research firm. But consuming raw milk comes with significant risks. In late November, California regulators recalled some raw milk products after detecting bird flu virus. And last week, the USDA ordered testing across the nation's milk supply over bird flu concerns — an issue that began back in March. Although both the CDC and FDA caution against the consumption of raw milk, the product is being pushed by some right-wing conservatives. One of the most prominent proponents of raw milk is Robert F. Kennedy Jr. — President-elect Donald Trump's pick to serve as secretary for the Department of Health and Human Services.We discuss why people are drinking raw milk despite the risks. Welcome to Skeptical Sunday, a special edition of The Jordan Harbinger Show where Jordan and a guest break down a topic that you may have never thought about, open things up, and debunk common misconceptions. This time around, we're joined by skeptic, comedian, and podcaster Michael Regilio! On This Week's Skeptical Sunday: Milk consumption by adults has not been natural for most of human history. About 65% of the global population has reduced ability to digest lactose, with some populations experiencing nearly 100% lactose intolerance. The dairy industry, with government support, has heavily promoted milk consumption despite questionable health benefits. This includes school milk programs and marketing campaigns like "Got Milk?" Raw milk can be dangerous, potentially causing diseases like typhoid and tuberculosis. Pasteurization made milk safer, but the dairy industry initially resisted it. The US government has repeatedly subsidized and bailed out the dairy industry, including buying surplus milk and cheese. This has led to an artificial inflation of the dairy market. Good news for the lactose averse: there are many alternative sources for the nutrients found in milk. People can obtain calcium from foods like almonds, figs, kale, tofu, and sweet potatoes. State of the State is the monthly roundup of policy and research for the state of Michigan from MSU's Institute for Public Policy and Social Research (IPPSR). Arnold Weinfeld is the associate director for the institute. Charley Ballard is an economist at MSU. This month's guest is Kimberly Dodd, a veterinarian and virologist with extensive expertise in emerging infectious diseases. She is currently the director of the MSU Veterinary Diagnostic Laboratory, or VDL, one of the country's premier veterinary diagnostic laboratories. Pending board approval, Dodd has been recommended to serve as the new dean of Michigan State University's College of Veterinary Medicine, effective Aug. 1. Dr. Andrea Love on milk safety, food anxiety & chemophobia Ever since fragments of the H5N1 virus (also known as avian influenza or HPAI) were detected in milk, the safety of our dairy supply has come into question, with some wondering if they should forego dairy in favor of alternatives, and others gravitating toward raw milk. In this episode of the Food Bullying podcast, Dr. Andrea Love brings some insight into the nature of viruses, the history of pasteurization, and – long story short, why you can still feel good about pouring yourself a glass of milk. She talks through the specific testing measures in milk and dairy products around bird flu, also known as bovine influenza A virus (BIAV) in cattle. Dr. Love is a biomedical scientist and award-winning science communicator with a PhD in Microbiology and Immunology with over a decade and a half of experience in basic sciences, translational medicine, and clinical research. Outside of her full-time career in life science biotechnology, she has a passion for helping the public and healthcare professionals understand complex science topics to navigate the world better. Over 200 years ago Louis Pasteur was born in Dole, France. Among Pasteur's major contributions and their benefit to society, the most important is the heat treatment of foods and beverages to reduce spoilage and eliminate pathogens for consumers. Probably the greatest achievement of Pasteur was the process that bears the name of this famous scientist who perfected the technique: pasteurization. For liquids, this process does not involve boiling the product to sterility but simply applying just enough heat (ie, par-boiling) to 50–60°C for a specified period to reduce spoilage microbes and potential pathogens. Pathogenic microbes have a lower heat tolerance than most other bacteria. Recognizing that many individuals, from the highly educated to the peasantry, were aware of the effect, it took someone like Pasteur to formalize this knowledge into specific time-temperature standards to assure consistency. Unpasteurized foods are sold even though they have not been treated with high temperatures. Foods that haven't been pasteurized include: raw milk some artisanal cheeses some unpasteurized versions of juices and meats Many food safety concerns and a high risk of foodborne illness are associated with eating unpasteurized foods, although there may be a few benefits. Still, evidence indicates that the health risks appear to outweigh any potential benefits in most cases. Here are the benefits and downsides of unpasteurized food products. Benefits of eating unpasteurized foods Unpasteurized food is more likely to retain its organoleptic properties and may sometimes have greater nutritional value. The term “organoleptic properties” refers to the food's taste, appearance, and smell. Exposure to high temperatures during pasteurization not only kills harmful bacteria and viruses in foods. It may also negatively affect the nutritional quality, appearance, and flavor of the food. For instance, some research demonstrated that pasteurization reduced the protective antibodies and immune-supportive vitamin C and zinc in donor human milk. However, other research shows that these nutrient losses in human milk are minor and that the benefits of pasteurization are greater than the risks. Downsides of eating unpasteurized foods Unpasteurized foods are associated with the occurrence of foodborne illnesses from bacteria, such as Brucella, Cryptosporidium, Listeria monocytogenes, and antibiotic-resistant Staphylococcus aureus. In particular, scientific literature frequently mentions that unpasteurized milk and dairy products are particularly high risk foods and common causes of these foodborne illnesses. These bacterial infections may last from days to weeks. Effects range from mild symptoms — like fever, diarrhea, vomiting, muscle aches, abdominal pain, and poor appetite — to severe outcomes like miscarriage and even death. Unpasteurized foods present even greater health risks and are more dangerous to people with compromised immune systems, such as older adults, pregnant people, young children, and those with health conditions like cancer. Summary Unpasteurized foods are slightly more likely to retain natural tastes, appearances, flavors, and nutrients, but they are strongly associated with foodborne illnesses. Evidence indicates that the risks of consuming unpasteurized foods greatly outweigh the benefits, especially for immune-compromised people. (CREDITS)

Today, we are going to talk about a very controversial topic in the nutrition realm. Is dairy good or bad for you? Specifically Milk. Raw vs Traditional. I have drank milk all my life and I absolutely love it. My body actually craves it when I don't have it. So there is my bias. Many experts I trust say dairy is okay, many talk about how it's the pastuerization of the milk that is the problem. On the other side, I have a friend who is a very high up doctor at Scripps down here in San Diego, and he told me he tells his clients no milk. So this is a tough one. Although some people think pasteurization can negatively affect the flavor of beer, when used properly, pasteurization stabilizes and preserves flavors and gives brewers flexibility in the brewing process.
