Today we pay Ben Marks a visit at his neighbourhood restaurant Perilla in Newington Green, sadly it was closed for Lunch on the day so we couldn't sample any of his creations, but we did get to hear about his incredible career so far. As a young boy, Ben Marks loved food and enjoyed cooking with his father in London. At 13 years old, he was already working in professional kitchens. and at 15, on the advice of his bosses, he moved to Sweden to become commis chef at the Michelin-starred Operakällaren in Stockholm. A year later he was back in the UK, at a formal apprenticeship with the Academy of Culinary Arts, which landed him at Claridge's, followed by working at Noma for over a year and then rounding off this incredible hattrick of establishments by becoming Phil Howards right hand man at The Square. Ben now co-owns & is head chef at both the award winning Perilla & Morchella.

A lot of academic researchers, journalists, NGOs, even a few tech firms--are working on the issue of disinformation. Some people are opposed to this work, especially on the political right, and have given this disparate group the ominous collective nickname of disinformation industrial complex, as if it were a monolith devoted single-mindedly to censoring unpopular voices. The fact is, this is no monolith. The fragmented nature of the fight against disinformation weakens the effort, and that's what Phil Howard and Sheldon Himelfarb want to solve. Phil and Sheldon are the co-founders of the International Panel on the Information Environment (IPIE), which was born to bring together the world's best scientific minds on the topic of information integrity and democracy. Phil is a professor at the University of Oxford, a global authority on technology and public policy, and author of 10 books and over 100 papers. Sheldon, in addition to being the IPIE's executive director, is also the CEO of PeaceTech Lab, which has won global praise for equipping peacemakers with tech and data tools. Sheldon, Phil and I discuss why citizens need to upskill their news literacy; whether social media or governments are the most toxic players in the ecosystem; the scarcity of data on disinformation solutions; where the trends are pointing and what it would take to turn them around. The questions we face around who can govern AI are complex. If we want to reap the rewards of this technology, what – if any – regulatory solutions are needed to offer us the best outcomes? And who has the power to set these new rules in motion? In Part 2 of this two-part episode of Technically Optimistic, we talk with the diverse thinkers who are proposing ways forward for AI governance and explore whether these solutions allow for innovative possibilities while also mitigating potential harm. What kinds of governance can we expect in the future, and how far from reality are our most idealistic proposals? Most importantly: is regulation even the best solution? Phil Howard grew up in a Christian family. His father was a travelling evangelist. As a 4-year-old young Phil was coaxed into a profession of faith which wasn't real. Over the years he had doubts and struggles, especially when one persistent and perceptive preacher, Mr Fred Holder, kept asking him if he was saved. He is a member of the UK Dept of Health advisory group on AMR & HCAI and the NICE common infections guidelines group, NICE living CoVID guideline group and the NICE new models of antimicrobial funding committee. His research interests include Antimicrobial Stewardship and antibiotic shortages. He led the first global hospital Antimicrobial Stewardship survey. He has been involved in AMS education and training across the world. He's a Fellow of Royal Pharmaceutical Society and has won the GHP/GSK/UKCPA Clinical Leadership Award, the UKCPA Lifetime Achievement Award and awarded the Officer of the British Empire (OBE) medal for his services to healthcare. He is a spokesman for the Royal Pharmaceutical Society on Antimicrobials, and for the Antibiotic-Action and British Society of Antimicrobial Chemotherapy charities.
