Having started her journey working at the one Michelin star ‘Adams' Restaurant in Birmingham. Louisa then made the career-defining decision to apply for MasterChef - The Professionals in 2017, making it to the finals! Three years later in 2020, she was invited back to compete once again in MasterChef – The Rematch! This time taking home the trophy, with Michelin star chef Marcus Wareing hailing her main course as ‘the dish of the day'. The achievements and accolades kept on coming and in 2022 she also took home the highly coveted title of ‘Chef of the Year' for the Midlands! In January this year, Louisa made an appearance on Great British Menu where she made it through to the judge's chamber. This is an achievement Louisa has always dreamt about doing as a chef as she has looked up to the chefs on the competition show for most of her career. Riding high on these successes, Louisa leapt into the extraordinary world of private fine dining. Away from the hustle and bustle of the kitchen, Louisa is a huge supporter of charity fundraising. She has just competed in her first-ever charity boxing match in March and has raised just under £4000 for Macmillan Cancer support in honour of the loss of her close friend Ally. Louisa's goal is to keep inspiring the next generation and she plans to do that by creating a springboard for younger chefs.   Our second guest, Daniel Bennett is the General Manager at Heft Inn + Restaurant, and won Young Chef Young Waiter of the Year - 3rd Place Waiter UK 2022. Daniel previously held roles at; KOL, St.JOHN, Carters of Moseley, Simpson's and The Forest Side. Hospitality and Natural Wine Enthusiast, and recognised in the third edition of the Harpers Wine & Spirit Magazine 30 Under 30 list which was announced last month and an Acorn Award Winner 2024.   Recorded live on 14th June 2024.

You might know today's guest as the formidable judge on "MasterChef: The Professionals,”; or maybe you've followed her globetrotting escapades on the BBC's "Amazing Hotels: Life Beyond the Lobby”. Perhaps you've even been lucky enough to eat in her London restaurant, Mere. She's one of the best-known and highly renowned female chefs in the UK, it is of course, Monica Galetti. This season has been such a treat because I've managed to interview so many names who I dreamed of talking to when I started the podcast, and Monica was one of those, for so many reasons. I was desperate to ask her about what her childhood was like growing up on a tiny island in the middle of the Pacific Ocean. And then what life was like when she moved as a child to New Zealand, where suddenly it's cold and it's another language that she didn't speak. I was excited to ask her where her love of food began and how that led her to London to work alongside Michel Roux Jr - a former guest on the podcast of course - at his legendary Michelin-starred restaurant, Le Gavroche. The intense kitchen there became the crucible where Monica honed her skills, eventually rising to become the restaurant's first female sous chef. Her experience there would eventually serve as the foundation to the opening of Mere, her restaurant in Fitzrovia, London. After a few technical issues, I was so pleased Monica was able to squeeze this interview into her busy schedule. She'd just got off a plane, and got home, so this was recorded remotely last week. Ellie Pacey is a former British Tractor Pulling champion who has recently taken part in BBC 3's The Fast and the Farmer-ish. Today, I'm joined by a legend of the culinary world, the chef, restaurateur and broadcaster, Michel Roux Jr. Michel was practically born in a kitchen when his mother went into labour during service at his father's restaurant. He's the son of Albert Roux and the nephew of Michel Roux, brothers who revolutionised the restaurant business in the UK when they opened Le Gavroche in 1967, famously becoming the first establishment in this country to gain one, two and then three Michelin stars. In the studio we have Raymond Antrobus, one of the most exciting and acclaimed poets working today whose journey includes discovering he was deaf aged 6 and finding his passion for writing. Royd Tolkien's brother Mike was diagnosed with Motor Neurone Disease aged 37 and very sadly died a couple of years later. Before his death, he told Royd about a bucket list he'd written for Royd to do, which included some pranks and stunts and took Royd on an emotional and physical journey. In January 2020, listener and mum of four Wendy Searle left her office job and reached the South Pole after a 42 day journey alone, dragging all her kit and food with her on a a Pulk (sled). She became only the 7th woman in the world to complete the journey. She did the journey to show that anything is possible… and now plans to go again next winter…. We're back with a second series of The English Wine Diaries podcast.  This week my guest is Steven Edwards, who in 2013 was crowned the sixth winner of BBC TV show Masterchef The Professionals. At the time, he was one of the youngest ever winners of the competition at 26 years old and his food was described by Michael Roux Junior as ‘faultless'. Following his win, Steven set up etch, initially as a pop-up concept touring venues across the country, including Nyetimber Vineyard in West Sussex, before he opened his permanent restaurant, etch. by Steven Edwards in Hove in 2017. Last year, he opened a second restaurant at the Bingham Riverhouse hotel in Richmond and this summer, he will be returning to his former workplace, South Lodge, near Horsham, for an eight-week summer residency. We talk about how he feels about returning to his roots, his latest venture with The London Vermouth Company and how  English wine will continue to play a huge part in etch, which will be re-opening in September following a major refurb. North Macedonia is holding local elections this weekend. The country has been independent for nearly three decades, but it is not unusual for the countries of the former Yugoslavia to be interested in what happens next door. But not generally in small mayoral elections. BBC Serbian reporter Aleksandar Miladinovic explains that he travelled more than 450 kilometres talk to Stip to find out more about one of the candidates, Simon Gajiga. Born in Leeds and raised in London, the chef calls himself "an adopted Cockney." Though he got off to a great start as a chef as part of a Fifteen London brigade, this would see him progress on to great restaurants including one Michelin-starred Novecento in Italy, Gordon Ramsay's The Narrow, Mac n'Wild, Bonnie Gull and to make it to the quarter finals in MasterChef: The Professionals 2018. Rebecca & Alex are back after another busy week of football to chat about Liverpool, Chelsea, Jose Mourinho and everything in between. Liverpool have had an up and down week, losing to Atalanta in the Champions League but really making a statement in the Premier League against Leicester City. We look at how Klopp has built a squad designed to cope with injuries, the ageless James Milner, fixture congestion, and the PSL brilliance of Bobby Firmino. Jose Mourinho also put down a marker with Tottenham's 2-0 win over Pep Guardiola's Manchester City. We take a closer look at Spurs as genuine title contenders, the resurgence of Tanguy Ndombele, why Man City can't score goals, and the decline of Bernardo Silva. Things are starting to click for Frank Lampard's Chelsea and we consider their unbeaten run, what their best front three actually is, and Olivier Giroud's future at the club. We’re diving deep into the wonderful world of restaurant kitchens this week.  Watching this chef’s career take off has been an inspiring experience for me, not least because Steve Groves started his culinary life working by the sea in Dorset, where we shared a town, and even a seafront some time ago.    If Steve’s name doesn’t ring an immediate bell, maybe the fact that he was a winner of ‘MasterChef: The Professionals’, will nudge your memory.  It also gives you an idea of the exacting standards he works to, and why Michel Roux Jr snapped him up as a sous-chef, to join the team at The Roux at Parliament Square.   For the last six years Steve has been Head Chef at this prestigious restaurant, giving its French classical heritage a modern twist and impressing yet more judges, most recently at The Craft Guild’s National Chef of the Year competition, that Steve impressively won.   But as you’ll hear, Steve is not one for blowing his own trumpet. He’s more interested in developing the talent of his colleagues, making sure the whole team gels, and that they get to see their families at the weekends.  Yes, every weekend.  And as it’s nearly Christmas, he reveals what’s replacing the traditional turkey on his  festive dinner table.

Marcus Wareing is a prize-winning chef, restaurateur, TV presenter and cookery book writer, who gained his first Michelin star at the age of just 26. He grew up in Southport, and by the age of 11 was helping out in his family’s fruit and vegetable business, which dominated his father’s life. Marcus assumed he would join the business, but his father told him to take a catering course instead, as the family firm had no future. When Marcus was 18, he moved to London to work at the Savoy. He loved the experience of life in a high-pressure professional kitchen and was quickly promoted. In 1993 he joined Gordon Ramsay at Aubergine, creating one of the most celebrated London restaurants of the time. He went on to launch a number of Michelin star-winning restaurants, often working with Gordon Ramsay and his company, before a much-publicized falling-out. Marcus now runs a group of restaurants in London, founded with his wife Jane, and since 2014 he has appeared as a judge and mentor on the TV series MasterChef: The Professionals. For this week's Real Podcast, I jumped on the wrong bus from Waterloo and turned up late for my meeting with Joey O'Hare. That's OK – she's a kindly soul, as you might have guessed if you ever saw her on Masterchef: The Professionals. It's been quite a while since she came to prominence through that TV programme, but for those of us with an ear to the ground and a mind for fermentation, she's only gone from strength to strength. So, when one of the Real Kombucha team suggested that she might be able to get in touch with her for an interview, I jumped at the chance. As you'll see from the interview, she's a kind of interviewee chef made in heaven. Sleep is published by Penguin Life. Adele Bellis was 22 when she suffered an acid attack arranged by her ex-boyfriend. She was left partially bald and lost her right ear. In her book, Brave, she recounts her experience and her recovery and how she hopes to turn it into a positive experience by educating young people about how to avoid abusive relationships. Adrian Edmondson is an actor and comedian, best known from The Young Ones, Bottom, and The Comic Strip Presents, with his friend and collaborator, the late Rik Mayall. More recently he has appeared in TV series including One of Us and War and Peace, and in the West End in Waiting for Godot and Neville's Island. He stars in a new adaptation of William Leith's bestselling novel, Bits of Me are Falling Apart, a one-man play about the complexities of middle-age, adapted by himself and Steve Marmion, who directs. Bits of Me are Falling Apart is at the Soho Theatre. Marcus Wareing is the chef of the two Michelin-starred Marcus at The Berkeley, The Gilbert Scott and Tredwell's in London. He has won numerous awards including Young Chef of the Year, a Michelin star at the age of 25, Restaurateur of the Year, and the winner of the first Michelin star for the Savoy Grill in the hotel's history.
