Merlin Labron-Johnson is the chef and restaurateur of Osip in Somerset, England. He was raised in Devon, worked in several Michelin starred restaurants before becoming sous chef at Kobe Desramaults restaurant In de Wulf in Belgium. In 2014 he moved back to the UK to launch Portland restaurant and later Clipstone in Fitzrovia. You might know today's guest as the formidable judge on "MasterChef: The Professionals,”; or maybe you've followed her globetrotting escapades on the BBC's "Amazing Hotels: Life Beyond the Lobby”. Perhaps you've even been lucky enough to eat in her London restaurant, Mere. She's one of the best-known and highly renowned female chefs in the UK, it is of course, Monica Galetti. This season has been such a treat because I've managed to interview so many names who I dreamed of talking to when I started the podcast, and Monica was one of those, for so many reasons. I was desperate to ask her about what her childhood was like growing up on a tiny island in the middle of the Pacific Ocean. And then what life was like when she moved as a child to New Zealand, where suddenly it's cold and it's another language that she didn't speak. I was excited to ask her where her love of food began and how that led her to London to work alongside Michel Roux Jr - a former guest on the podcast of course - at his legendary Michelin-starred restaurant, Le Gavroche. The intense kitchen there became the crucible where Monica honed her skills, eventually rising to become the restaurant's first female sous chef. Her experience there would eventually serve as the foundation to the opening of Mere, her restaurant in Fitzrovia, London. After a few technical issues, I was so pleased Monica was able to squeeze this interview into her busy schedule. She'd just got off a plane, and got home, so this was recorded remotely last week. Hannah Watson is the co-founder and director of contemporary art gallery TJ Boulting, as well as the director of independent art publisher Trolley Books. TJ Boulting was founded in 2011 by current director Hannah Watson and the late Gigi Giannuzzi, taking its name from the landmark Grade II* listed Arts & Crafts building it inhabits in Fitzrovia, central London. The gallery represents a dynamic group of emerging and mid-career contemporary artists across all mediums, and introduces more established and historic artists through thematic group shows. These are often collaborations with invited curators, such as In The Company Of in 2018 with Katy Hessel, Birth in 2019 with Charlotte Jansen and The Gaze in 2021 with Louis Wise. TJ Boulting is also the home of independent publisher Trolley Books. Established in 2001, Trolley publish a diverse range of titles presenting unique stories in photography, photojournalism and contemporary art. In 2005 Trolley received a special commendation from the Kraszna-Krausz Book Awards for its outstanding contribution to photography book publishing. Recent awards for the books include at the Paris Photo–Aperture Foundation PhotoBook Awards for Siân Davey's Looking For Alice (2016) and Maisie Cousins's Rubbish, Dipping Sauce, Grass Peonie Bum (2019). Welcome to Bittersweet Symphony, a podcast about the bitter, the sweet and the bittersweet of life for classical musicians when the music suddenly stopped. Hosted and produced by me, Cliodhna Ryan, a violinist, it's an intimate and heart-warming exploration of the human spirit. My guest in episode thirteen is oboist Dan Bates, my colleague in the Irish Chamber Orchestra. After an initial sense of exhilaration in the first few weeks of lockdown, Dan shares his experience of a crushing depression, the treatment he was offered, and the impact this had on him. His sweet memory is of the three chickens he reared; Anastasia, Garbo and Clemmie Bunting. His bitter was witnessing the effect of lockdowns on his Mum. This conversation was recorded in September 2021. Daniel Bates (MA CANTAB, FRSM, FTCL, ARAM, AGSMD) is principal oboe with the Irish Chamber Orchestra, the City of London Sinfonia and co-principal oboe of the Orchestra of the Age of Enlightenment. Previously, he also held the principal oboe position with the Royal Northern Sinfonia at the Sage, Gateshead. He has played guest principal for all the major UK orchestras as well as various international orchestras such as the National Orchestra of Colombia, the Swedish Chamber Orchestra, the Bergen Philharmonic Orchestra and the West Australian Symphony Orchestra. As a session musician, he has recorded for numerous pop acts and films, including the Harry Potter franchise and for Barbra Streisand, Mary J Blige, Rihanna and Stevie Wonder. Born in London, Daniel attended the Purcell School of Music. He was subsequently offered scholarships to every music college in the country and chose to study at the Royal Academy of Music under Celia Nicklin and Dougie Boyd. This was followed by a music scholarship to study at Pembroke College, Cambridge, where he read Music and the History of Art. He has performed solo concertos with the London Symphony Orchestra, the City of London Sinfonia, the Irish Chamber Orchestra, the Brasov Filharmonica, the Turin Philharmonic Orchestra, the London Mozart Players and the English Chamber Orchestra. Solo recitals include venues such as the Wigmore Hall, the Queen Elizabeth Hall, the Usher Hall and the Purcell Room. Internationally, he has given solo recitals in venues such as the Pushkin Museum in Moscow and at various European festivals partnered with musicians of international renown including Jörg Widmann, Elizabeth Leonskaya, Joan Rodgers and Anthony Marwood. As an actor, having studied classical acting at the London Academy of Music and Dramatic Art, his credits include the title role in The Picture of Dorian Gray (Vienna's English Theatre), Fedotik in The Three Sisters (alongside Kristen Scott Thomas and Eric Sykes in the West End) and Adrian Green in Casualty (BBC TV). Daniel is the founder and Artistic Director of FitzFest (www.fitzfest.co.uk), a community chamber music festival, based in Fitzrovia, central London. Episode 103 features Rakeb Sile. In 2016, she co-founded Addis Fine Art with Mesai Haileleul, creating the first white-cube gallery space for modern and contemporary art in Ethiopia. Since then, the business has grown to become one of the leading galleries in Africa establishing a prominent international platform for artists from the Horn of Africa. The gallery has spaces in Addis Ababa, Ethiopia and London, having recently moved into expanded premises in London, opening a two-storey gallery space in the heart of Fitzrovia. Jade Coles is a creative strategist whose niche is designing cultural event programmes that resonate with London's creative, forward-thinking audiences. Jade has over eight years experience in cultural production and event programming having worked with industry leaders in the hospitality space such as Soho House, Festivals like Lost Village and a host of startups in the Creative Industries space including Creative Entrepreneurs and The Collective. Most recently Jade headed up the cultural programme at co-working space 'The Wings' first international site based in Fitzrovia, creating events to inspire community across a five-storey townhouse. On this episode, we talk about how her career led her everywhere - even to world stages as a performer - how to assess our limiting beliefs and even spreadsheets. The Israeli born chef co-founded Honey & Co with his wife, Sarit Packer, a cozy spot located in London's once sleepy Fitzrovia neigborhood that serves homey Middle Eastern fair directly across the street from their amazing food shop, market, and culinary boutique Honey & Spice. Following in the footsteps of their UK colleague and cookbook author Yotam Ottolenghi, of whom they both worked for prior to starting Honey & Co, Itamar and Sarit have released a handful of Honey & Co cookbooks over in the UK, and they just finished a whirwind tour of the US to promote the release of their Honey & Co at Home cookbook just last month. They visited cities and chefs all over the country to help promote the book, which presents their simple and delicious Middle Eastern dishes that are easy to make at home, and they stopped through Los Angeles to do a takeover of Sqrl, Jessica Koslow's venerable breakfast and lunch spot which kind of feels like a version of Honey & Co in California. Itamar excitedly talked to The Shift List about the role that music plays at Honey & Co last August, and we ended up recording this on two stools in a pseudo storage room in the working cellar underneath their Honey & Spice shop.
Itamar Srulovich is an Israeli born chef who co-founded Honey & Co with his wife, Sarit Packer, back in 2012. A cozy spot located in London's once sleepy Fitzrovia neigborhood that serves homey Middle Eastern fair directly across the street from their amazing food shop, market, and culinary boutique Honey & Spice, they also opened Honey & Smoke in 2016, a big and buzzy grill house serving everything from lamb kofta and chops, whole fish and slow cooked octopus, charred cauliflower and amazing drinks. Itamar and Sarit racked up impressive resumes before going into business together with Honey & Co, both serving as alumni of the venerable Ottolenghi restaurant and cooked together in restaurants around Tel Aviv before their time together in London. Three restaurants and three best selling cookbooks later, family is the through line that brings everything together at Honey & Co,, and not just because Itamar and Sarit are married. It seems like Itamar knows every staff worker, diner, and shop customer intimately, exuding a warmth and friendliness that surely brings people back. Itamar is the music lover between he and Sarit, so he sat down for this interview, which includes music from Israel, Egypt, Nigeria, the UK, and the US.
