There's a building in North London, built from equal parts brick and tahini, with walls coated in olive oil and floors stained with spice. This is the Ottolenghi Test Kitchen, where a group of individuals meet and eat, cook and write, tear and share and gather with just one motive: to create good food with good ingredients, and to share it with the world. Chef and author Noor Murad joined the Ottolenghi Test Kitchen in 2018, eventually becoming its head and the writer of its books, “Shelf Love” and “Extra Good Things.” Bahrain-born, London-based and New York-trained, Noor's own recipes have been featured in the New York Times, and she's cooked on BBC's Saturday Kitchen. Her Middle Eastern roots have a strong influence on her cooking, with Arabic, Indian, and Persian flavors making a prominent appearance in her recipes. Noor joins Google to discuss her book “Lugma: Abundant Dishes & Stories from my Middle East.” Lugma is an Arabic word that means, “a bite.” The book offers over 100 recipes as an ode to the food she grew up eating—traditional flavors and modern dishes from Bahrain, the surrounding Middle East, and beyond. Jaega Wise travels the country to meet the three finalists in the Drinks Producer category in this year's BBC Food and Farming Awards. Her journey takes her to Belfast and the Bullhouse Brewery which began life in a farm shed. Now thriving in an industrial estate, head brewer Will Mayne talks about his frustrations with the current alcohol licensing system in Northern Ireland which he says made it hard for him to open a pub and sell his beer. The controversial "Surrender Principle" means there's a cap on the number of issued pub licences which can be sold for one hundred thousand pounds each. Jaega also hears from Colin Neill - the chief executive of the trade body Hospitality Ulster - who believes the current system keeps standards high in pubs and does work for publicans.Then it's on to East Sussex and the producers of a fermented milk drink nicknamed "the champagne of dairy". Ki-Kefir was co-founded by Sam Murphy who started off making kefir in her London kitchen. It proved so popular with friends and family that she linked up with a dairy farm when she moved to the countryside to expand her production. She shows Jaega how kefir is made and discusses its potential health benefits.Lastly, Jaega travels to Scotland to see the country's oldest working distillery. The Glenturret Distillery in Crieff has been producing whisky since 1763, with a short break during the years of Prohibition. Distillery manager Ian Renwick hosts a tour and uncorks some 15-year old whisky in the tasting room.Jaega also mulls over the shortlisted three with the drinks journalist Olly Smith in a whisky bar in London. Nihal Arthanayake presents Loose Ends from the third annual Morecambe Poetry Festival. He's joined by Henry Normal. Henry is a writer, poet, TV and film producer who has been involved with many of our most loved comedies, such as The Mrs Merton Show, The Royal Family, Gavin and Stacey and Alan Partridge. He's a prolific poet, and his latest collection is 'A Moonless Night'. He also presents the occasional 'A Normal...; series for Radio 4 combining stand-up, poetry and stories about his life and family. Henry explains how, prematurely old at 23 he turned his back on a traditional career path and entered the worlrd of comedy and performance. Donna Ashworth's lockdown poetry went viral in 2020 and her popularity has been credited with 2023 being the best year for poetry sales in Britain since records began. Her new collection is 'Growing Brave'. She tells us about her days as a Butlin's red coat, celebrating overlooked kinds of bravery, and her dogs Dave and Brian. Mike Harding is a stand-up comic, musician and poet. He's been performing since the 1970's, and has released over a hundred books and recordings. He presented the Folk show on Radio 2 for 15 years. He's performing alongside Henry Normal at the Morecambe Poetry Festival. His latest poetry collection is 'The Lonely Zoroastrian', and he also tells us about the luck involved in his hit single, 'The Rochdale Cowboy'. Lisa Goodwin-Allen is Morecambe born and bred. She's the executive chef at the nearby Northcote and appears frequently on TV including on The Great British Menu and James Martin's Saturday Kitchen. Lisa's ingredients for success in the kitchen include imagination, being an adreneline junkie and a passion for seasonal and local produce. And we have music from the Lancaster based musical duo The Lovely Eggs, from their seventh album. 'Eggsistentialism'. The album is personal, inspired by their lives, particulary their struggle to save the Lancaster Music Co-op.The Lovely Eggs are Holly Ross and David Blackwell and the show is dedicated to David's mum, Anne Blackwell, who died shortly before this programme was broadcast. A former acress and headteacher, Anne was a was known Morecambe character. Find Glynn Purnell at BBC Gardeners' World Live on all four days (13-16 June) at the Chef's Table Show Garden.Often called the ‘Yummy Brummie', Glynn Purnell started cooking professionally at the age of 14. After securing a work experience placement in a hotel kitchen, he spent the next two years catching the No 966 bus to the Metropole Hotel at the NEC where he was quickly promoted to making salads and flipping burgers. A six-year stint followed, gaining experience in every department from banqueting to the A La Carte Terrace Restaurant, where he discovered his talent and passion for fine dining. It wasn't long before he began winning awards including the prestigious Salon Culinaire.His next professional step was as Chef de Partie at Simpson's Restaurant where he progressed to the position of Sous Chef. The restaurant was awarded a Michelin star and Glynn went on to win many accolades within the industry.After training with top chefs including Gordon Ramsay, Gary Rhodes and Claude Bosi, Glynn travelled abroad to work with well-known Michelin starred chefs in Europe. He went on to help launch Jessica's in July 2003, which was awarded Birmingham's first Michelin star back in 2005. Glynn is now the proud owner of two establishments in Birmingham, Purnell's Restaurant on Cornwall Street, which opened in July 2007 and was awarded a Michelin star in 2009, and Purnell's Bistro & Ginger's Bar on Newhall Street, which opened in September 2012.Glynn has become a household name after taking part in the Great British Menu, winning twice and then later appearing as a mentor. Having cut her teeth as a supermarket wine buyer, she went on to found a blog, The Knackered Mother's Wine Club, which has since become a best-selling book. Helen is the much-loved wine expert on BBC1's Saturday Kitchen and writes a monthly wine column for Waitrose Food Magazine. In this episode, Nick and Angela skip the main course and head straight to the cheese. Helen brings a selection of wine and cheese to the dish table to inspire you this festive season and starts with a bottle of fizz from South Africa, Graham Beck Chardonnay Pinot Noir Brut NV, which our trio tastes with a pecorino and a Cornish Cheese Co. Anna Haugh is an Irish chef at the top of her game, who runs her own restaurants in Chelsea and Dublin, and who you may know as one of the judges on Masterchef and as a regular on Saturday Kitchen. It was on Saturday Kitchen last year that I first met Anna, when her baby boy Oisin was just 8 weeks old. I was struck by her absolute joy in motherhood and when we spoke recently I learned how Oisin was a much longed for IVF baby. Anna told me she is generally good at appreciating the here and now, and about the thrill that she gets to this day when she walks past her little boy's blue coat hanging in the hallway, reminding her that she is now a mum. Anna also told me how much she has always loved her stepson Henry, now 18, who she first met when he was 11, and how it was Henry who chose her little son's first and middle names.She also shared that she may be only 5ft 4, but she studied body language to learn how to give direction in kitchens where she's often surrounded by men who are all physically much bigger than her, without confrontation. Her top tip is that you own the space where you stand, no matter how tall or short you are. And she really believes in kindness in the kitchen.I love Anna's ability to see the positive side of life and the way her personality comes out in the atmosphere of her restaurant and on screen. Katie Caldesi  Katie and her Italian husband Giancarlo first came to public attention when they featured in the BBC2 series Return to Tuscany in 2006. The series, which was broadcast worldwide, followed the pair as they set up and launched a residential cookery school in Tuscany. The show climaxed with them getting married in a dreamlike Tuscan wedding. Since then they have both been frequent visitors to our screens appearing as guests on an array of foodie programmes such as BBC1's Masterchef, Saturday Kitchen and Sunday Brunch. As business partners, they own the Caldesi Group of Restaurants and Cookery Schools with restaurants in London's Marylebone and culinary mecca Bray in Berkshire. Their cookery school ‘La Cucina Caldesi' was launched in Marylebone in 2005 and this year they celebrated 15 years of business at Caldesi in Campagna, their restaurant in Bray and 20 years in Caldesi in Marylebone. Katie started researching the low-carb diet when her husband was diagnosed with type 2 diabetes and gluten-intolerance through nutritionist Jenny Phillips. She then became aware of the work of Dr David Unwin (the low-carb GP). Following advice from both Jenny and David, she began to develop low-carb dishes and soon the whole family had cut right back on the carbs. There were immediate benefits to this as the whole family had more energy, they all lost weight, Giorgio's headaches lessened and Flavio's skin improved. Giancarlo lost almost 4 stone in weight which led to his diabetes going into remission. Inspired by this Katie wrote her first of five low-carb cookbooks ‘The Diabetes Weight-Loss Cookbook' which included some of the recipes she had developed for the family, a section on why low-carb works with Jenny Phillips and a foreword by Dr David and Dr Jen Unwin. The book was serialised in the Daily Mail and became an Amazon bestseller which led to Katie writing another four low-carb cookbooks. Her latest cookbook ‘The Low-carb Italian' launches in March 2023.
