It’s been a year like no other, especially for bartenders and anyone in the hospitality industry. So for our final episode of 2020, we're taking a look back at the year that was on the Living Proof podcast. Then, we cast our minds back to when the pandemic first took hold of cities the world over, spelling a long lay-off for many bars. Finally, we explore how the industry might emerge from the challenges of the year with a renewed focus on high quality customer experiences. Alex Ross, who opened the renowned Ginger bar in Melbourne, talks us through how she keeps the customer front-of-mind whenever she's working on a project. And Diageo's Global Cocktailian, Lauren Mote, describes how the front- and back-of-house are coming together to create guest experiences that go beyond the glass. And we couldn't look back on 2020 without re-visiting our hilarious chat with Artem Peruk of El Copitas Bar in St Petersburg - the bar that went from scrounging around to find enough chairs to open, to sitting proudly on the World's 50 Best Bars list.

Los Angeles’ Big Bar, which is actually quite small, is one of many venues having its operations restricted once again amid a second wave of the pandemic.Big Bar’s Manager, Eugene Lee, and Bar Lead, Selene Martinez spoke candidly with Nicole and Marcus about how they’re protecting themselves and their customers while still staying open for business. Eugene: "They don’t really give you a lot of lead-time – it’s not like 'in a week from now, bars are allowed to open.' … It is go time when the Governor makes his announcements. And then the managers, the bartenders, the staff are scrambling.” Selene: "I have a mentality of: protect everyone around me, but also protect myself. Being in interaction with X many people every day ... we're taking all of the guidelines we need to to make sure we're safe. So I can tell you, bartender's hands are raw anyways ... but they are even more raw now because I'm constantly washing my hands."

In June 2019 a landslide struck a remote rugged canyon of the Fraser River north of Lillooet BC. Huge pieces of rock and significant debris sheared off a 125-meter cliff, crashing into the river and creating a 5 meter high waterfall. The magnitude of the obstruction impeded migrating salmon from reaching their spawning beds. Recently we learned that the Fraser River sockeye returns were the worst on record. Add in the Big Bar landslide, the impacts of ecosystem changes, like eelgrass depletion, algae blooms and the on-going debate over open-net pen salmon fish farms, and you can’t help but start to think it’s all bad news. Luckily, Pacific salmon are remarkably resilient. They are still here and there are still many opportunities for us to do all we can to ensure their survivability and return to abundance. The Pacific Salmon Foundation is committed to the work of ensuring Pacific salmon survive. The organization funds a number of stream and habitat restoration projects along with scientific research. PSF works with Genome BC, the Department of Fisheries and Oceans and a wide range of other agencies to develop science that will better inform decision makers on how best to save our salmon. We invited the Pacific Salmon Foundation’s Vice President for Salmon, Jason Hwang, to join us for a Conversation That Matters about the state of salmon. This episode of the show will also serve as the kickoff to a new series of “Salmon Matter” casts that can be seen on the Conversations That Matter channel each month starting in January 2020. Scientists are warning some salmon runs in B.C.'s Fraser River could disappear completely, as a landslide that came down a year ago continues to block a critical fish migration route. In a presentation to the Pacific Salmon Commission last month, Fisheries and Oceans Canada scientists said there is a “meaningful chance of extinction” for three salmon runs due to the Big bar landslide: the early Stuart sockeye and the Mid-Fraser and Upper Fraser spring 1.3 chinook populations.
