Så vad gjorde han med béchamelen?– Det var stuvad vitkål. Den används ju ofta för sin konsistens.Smör, mjöl, mjölk, salt och peppar. Enkel. Och kanske därför också lite svår. Att göra det milda riktigt gott kräver uppmärksamhet.Béchamel är en av de fem franska grundsåserna, modersåserna som lärs ut på kockutbildningar. En byggsten i matlagningen. De fem såserna är: béchamel, velouté, espagnole, tomatsås och hollandaise. Och så finns den kalla majonnäsen.– Béchamel är lite bonnig, säger Stefan Karlsson. Används ofta i stuvningar. Den kanske inte ligger i tiden, men det är klart att den går att utveckla och anpassa till dagens matlagning också.Han föreslår att mixa den fluffig med mixerstav och smaksätta med örter eller citronskal.På franskinspirerade Collage, en av Stefan Karlssons restauranger, finns béchamelsåsen med på menyn.– Vi gör en klassisk toast, en Croque Monsieur.Men kommer såsen spela huvudroll på stjärnkrogen SK mat & människor också?– Jag är inte riktigt där än, säger Stefan Karlsson.Vi provsmakar vår egen tjocka béchamelsås och tre köpta såser — en helkonserv (Dolmio) och två kylda (Knorr, Kelda). My goal as an author is to encourage and entertain my readers. In 2011, I began writing nonfiction, but my fictional writing started in 2016 while facilitating a novel-writing class with my students. The voices wouldn't stop talking! Vivid characters and their dialogue exploded, and writing their stories was my only relief. My psychiatrist friend...
Kelda started her sporting career playing netball at a national level as a teenager. Sport very quickly became the thing that defined who she was and the person she wanted to be. Her real passion lay with horses and her ultimate goal was to ride for her country and represent Great Britain at the Olympics. Unfortunately, after a serious leg injury in 2002, Kelda's hopes of competing at an international level seemed to have disappeared. The leg injury had a huge impact on her life, leaving her no longer able to run or play many of the sports that meant so much to her. This had a huge impact on her confidence and self-belief, and she spent nearly 10years fighting to accept who she was. In 2002 she decided to climb Kilimanjaro, and this proved to be the start of a new direction in life. She returned and began retraining as an outdoor instructor. As a result of the dramatic effect the outdoors had on her own mental and physical recovery, Kelda decided she wanted to help others facing similar challenges to herself, and this led her to set up the charity Climbing Out. Kelda went on to represent Great Britain in Paracanoe and competed at the 2015 World Cup and the 2016 World Championships. The ultimate goal was the Rio Paralympics. Unfortunately she just missed out on selection for Rio, but she went on to join an Adaptive Team attempting to climb Aconcagua, the highest mountain in South America at 7,000m. On the 19th January 2017 she became the first recorded adaptive female to summit the mountain. In summiting, Kelda found many of the answers she'd been searching for since her injury and this inspired her to attempt a solo row of the Atlantic. After 76 days unsupported at sea, Kelda became the first adaptive person to ever solo row any ocean. But the challenges didn't stop there. 12 months ago Kelda was diagnosed with breast cancer. She decided to set herself the goal of completing a triathlon as motivation to push through her recovery. She completed her first triathlon just 4 months post mastectomy and went on to complete 2 further triathlons last year, including the Snowman Triathlon, known for being the toughest triathlon in the country. Kelda's got lots of practical tips to help navigate through what often can be a tumultuous time for us and our children. Although Kelda has a master's degree in elementary counseling, she ended up working more with teens over the years and has learned how to build strong relationships with them, as well as her own four children who are now adults. This interview is a good bit longer than my other episodes, but when Kelda and I were about to wrap up and I asked her for any resources that helped her in raising her own teens, we got into how personality tests can help us better understand our teens. She had so much great wisdom and insight to share that I had to include it in the interview. I hope you'll take advantage of some of the great suggestions she shares here to help build stronger relationships with your own children. Kelda Wood was hoping for a career as a show jumper when a one-ton bale of hay fell on her, crushing her leg. Through this life-changing accident she grew even more determined, starting the charity Climbing Out to help people who have survived injury and trauma. Last year Kelda spent three months in total isolation, becoming the first para-athlete to row solo across the Atlantic, driven on by thoughts of the many people her charity is helping. It is an incredibly inspiring story of pushing through pain and loneliness, day after day, as strong winds threatened to push her right back where she came from. Kelda Poynot, homeschooling consultant, author, and educator has helped hundreds of families navigate the maze of options for schooling their children. She homeschooled her own children over the past 20 years and just graduated her youngest child in May this year. She joined Jan Swift of Discover Lafayette to discuss her journey and share the many benefits of homeschooling. Kelda was a middle school math and language teacher for seven years and also worked as a school counselor, having earned a BA in Elementary Education and a Master’s Degree in Elementary Counseling from Louisiana Tech. She discovered the world of homeschooling when she attended a workshop on behalf of her sister; she left the meeting feeling like she "had been in a tent revival," charged up in realizing how this simple method of teaching offered a wonderful alternative to traditional teaching methods. She never dreamed that homeschooling would become her niche. Kelda Poynot pictured with her family. All of her children were homeschooled throughout elementary, middle school, and high school, with the exception of her oldest son who attended high school at the Early College Academy at SLCC in Lafayette and who just graduated with an MBA. While typically 3.3% of the U. S. considers homeschooling a viable choice in educating their children, several surveys have found that over 40% of American families are considering homeschooling during the 2020-2021 school year given the COVID-19 shutdown. Experts advise that homeschooling is not for everyone, and Poynot concurs and says, "I do not ascribe to the notion that homeschooling is for everyone. There are too many factors to consider, and I don't believe that one size fits all." But for those for whom it works, it is a viable and rewarding path that affords families flexibility in scheduling their time and allows a child to learn at his or her own pace. Transitioning to homeschooling from traditional schooling takes time, but for many children it's a relief from stress and anxiety. The pace slows down, but the academic structure and curriculums are solid. Poynot shared anecdotes of students who were anxious, almost to the point of being hospitalized when they switched to homeschooling; it typically takes about six months, but predictably, students will slow down their pace, relax and thrive in their schooling. Poynot stressed that people shouldn't worry about proper socializing of their children if they don't attend traditional public school. Her own kids were very engaged in sports, scouts, church, volunteer activities and clubs. And she said, "When you think about it, when do you hang out with everyone that's the same age at any other time than in school? Once you get out of school, that's never how it is." Homeschooling is different from the online public school curriculum that Louisiana school districts are offering in that the parents or caretakers take the reins and are responsible for the curriculum. In Louisiana, children who are homeschooled must be registered with the Department of Education by the time they reach 7 years of age. According to the department’s website, approximately 20,000 families choose homeschooling each year. You do not need teacher certification to educate your child at home. There are two homeschool education options to choose from in Louisiana: (1) Non-public school (not seeking state approval or accreditation) where the parents agree to home school for 180 days for the school year and are responsible for the curriculum. You submit a letter or email annually to the Department of Education with your intent to homeschool. The disadvantage of this first option is that children under this program are not eligible for TOPS or participation in public school sports programs. Kelda Martensen, born in Tacoma, Washington is a visual artist known for her work in printmaking, collage, book arts and murals. Awards include the Larry Sommers Fellowship, Bell Cramer Award in Printmaking and the Conceptual Visionary Award from Pratt Fine Art Center. Her teaching awards include the Dan Evans Innovation in Teaching Award, the John and Suanne Roueche Excellence Award and Association of Women Faculty Graduate Award. She was an Artist-in-Residence at Cité Internationale des Arts in Paris, France in 2011 and at Pratt Fine Art Center in Seattle in 2016. Her prints and artist books are in private and public collections including King County, the City of Tacoma, Google, Washington University in St. Louis Special Collections Library, Southern Graphics Council International Archive, Bokartas Contemporary Art Center, University of Missouri and Willamette University. Martensen is tenured faculty of art at North Seattle College where she teaches printmaking, drawing, book arts and mural art. Martensen earned a BA in Studio Art from Willamette University and an MFA in Visual Art with a focus in Printmaking and Book Arts from Washington University in St. Louis. She lives in Seattle, Washington and is represented by J. Rinehart Gallery.
