How does a person become a winemaker? We have covered a lot of topics in the world of wine over the years but never discussed the transition a human makes when deciding to leave a career to pursue their passion and become a winemaker. I met Greg Brewer, winemaker for Diatom, last year and thought his story was the one to tell when discussing this subject. He came to the VinePair studio and we talked about his journey. It's fascinating stuff. Hosted on Acast. See acast.com/privacy for more information.

Greg Brewer - Brewer-Clifton, Datom, and Ex Post facto This episode features Greg Brewer, founder and winemaker at Brewer-Clifton, which is a winery in Santa Barbara producing Pinot Noir and Chardonnay. Our conversation runs the gamut from Greg's background, his experience working with grapes from Santa Rita Hills, harvest and processing logistics, my jealousy for Santa Rita's huge picking window, DIAM corks, Greg's stainless bin fermentors, his philosophy in sourcing a block for vineyard designated wines before planting vines, how little analytical data plays into his winemaking, the stainless Chardonnay brand Diatom, and Syrah for Ex Post Facto. Brewer-Clifton - Santa Rita Hills Diatom Chardonnay - Santa Barbara County Ex Post Facto - Santa Barbara County This podcast is sponsored by Flextank For nearly 20 years, winemakers in the United States and Europe have used Flextanks to make world-class wines. Flextanks have many uses in a winery including the maturation of wines. They breathe like a barrel with precise and consistent linear micro-oxygenation to your wines. The Flextank system uses its proprietary Flexstaves line of staves which are sourced from premier French and American cooperages to age both red and white wines. Today's technologies are playing a bigger and bigger role in wineries these days. Flextanks have a long track record of replacing traditional wood oak barrels with a revolutionary breathable polymer that is scientifically engineered to achieve Oxygen Transfer Rates similar to your choice of either a 2-year or neutral barrel. Independent scientific studies and trials have validated this technology. Unlike a barrel, however, the molecules you want to retain- like ethanol and water- do not escape the Flextank wall, which means these tanks do not lose the Angel's share as with barrels…this means less topping is needed. Not only do Flextanks breathe like a barrel, but they are also unbelievably simple to clean- reducing water and labor costs- and are designed in a variety of sizes and profiles to make more efficient space use in any cellar. Flextanks are built here in the United States and come with a free lifetime warranty. To learn more about how you can modernize your winery and lower your barreling costs, simply go to Flextank.com. Discover how the Flextank system with Flexstaves is today's new way to make award-winning wines. Greg Brewer, owner and founder of Brewer-Clifton and Diatom wines, is in the house! Greg was named Wine Enthusiast's 2020 Winemaker of the Year and Robert Parker recently gave his Diatom Chardonnay 98 points. More importantly, Greg is a delight - and one of the most interesting perspectives on winemaking we've ever heard. Why the Pairing Works: The raw, unadulterated Diatom Chardonnay (no oak, no malolactic fermentation, no lees aging) is a big and beautiful wine. Oysters love acid, and the lemon/citrus elements of this wine play the part of lemon wedge. Both the wine and the oysters are raw and unencumbered and highlight the purity of terroir and 'Merroir' (our new word for the terroir of the sea!) Diatom Chardonnay Tastes Like:
Link to bioRxiv paper: http://biorxiv.org/cgi/content/short/2023.03.27.533254v1?rss=1 Authors: Zheng, P., Kumadaki, K., Quek, C., Lim, Z. H., Ashenafi, Y., Yip, Z. T., Newby, J., Alverson, A. J., Jedd, G. Abstract: Diatoms are ancestrally photosynthetic microalgae. However, some underwent a major evolutionary transition, losing photosynthesis to become obligate heterotrophs. The molecular and physiological basis for this transition is unclear. Here, we isolate and characterize new strains of non-photosynthetic diatoms from the coastal waters of Singapore. These diatoms occupy diverse ecological niches and display glucose-mediated catabolite repression, a classical feature of bacterial and fungal heterotrophs. Live-cell imaging reveals deposition of secreted extracellular polymeric substance (EPS). Diatoms moving on pre-existing EPS trails (runners) move faster than those laying new trails (blazers). This leads to cell-to-cell coupling where runners can push blazers to make them move faster. Calibrated micropipettes measure substantial single cell pushing forces, which are consistent with high-order myosin motor cooperativity. Collisions that impede forward motion induce reversal, revealing navigation-related force sensing. Together, these data identify aspects of metabolism and motility that are likely to facilitate and underpin the transition to obligate heterotrophy. Copy rights belong to original authors.

Part 2. Diatoms are a major group of algae found in waters all around the world. As photosynthetic phytoplankton, they are hugely important ‘primary producers’, integral to nearly every aquatic food chain. They are responsible for a large proportion of the world’s oxygen production, with estimates ranging between 20 and 50%. Diatoms are unicellular plants that produce their cell walls, termed frustules, out of silica. These intricate frustules are what we find preserved in the fossil record and they can contain an absolute wealth of information. In this interview, Prof. Anson Mackay, University College London, joins to discuss his work on the diatoms from Lake Baikal, Siberia. We learn why lakes are such special ecosystems and what diatoms can tell us about the world through studies of their palaeoproductivity over thousands of years.

This week, we’re sharing a highly subjective journey through one narrow, eccentric, corridor of radio advertising, as heard through the ears of one man. His name is Clive Desmond. Clive is a radio advertising producer, writer, and composer. He’s been doing it for more than thirty years, and he’s won some of the industry’s top awards. Through those years he’s been sort of a zelig figure: you can find his face somewhere in the margins of every one of the medium’s key aesthetic revolutions. He’s rescued beautiful forgotten nuggets of radio history, and he’s delicately arranged them into a glittering associative chain—a constellation of jingles and spots that somehow all add up, to a life: The life of Clive Desmond as heard through the radio. Listen below to a special bonus playlist of some of the finest radio-advertising nuggets Clive assembled: In this episode, you’ll also hear Josh Wilker read his review of our program. “A man claiming to be from The Organist came to the parking lot gate out back.
