Hosts Pat Cobe, senior menu editor of Restaurant Business, and Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, had a busy week going to chain restaurants' promotional events in New York City.Pat had high tea featuring Portillo's menu items, and Bret went to a preview of the first United States location of Chinese chain Pull-Tab Coffee, whose signature menu item is a sort of reversed iced cappuccino: Coffee foam on top of milk on the rocks. He also went to Bar Tender, a two-day pop-up in Brooklyn created by Wingstop, featuring the chain's upgraded, crunchier chicken tenders in 12 different flavors (he didn't try them all, but he did his best).They also discussed the big chain news of Wendy's new Frosty options. They can now be blended with syrups, and starting in May there will be mix-ins available — like Dairy Queen Blizzards.Also big news: McDonald's has upgraded its lemonade, doing away with Minute Maid (although its orange juice is still in stock), and replacing it with a beverage of lemon juice, lemon pulp and sugar. Then Bret shared an interview with Juan and Gee Smalls, the owners of three-unit Virgil's Gullah Kitchen & Bar in Atlanta, featuring the food of the Gullah and Geechee people of the coastal areas from North Carolina to Georgia. They're first-time restaurateurs, motivated by what they saw as a need for venues owned and operated by Black gay people. The couple discuss their learning process and plans for the future.

Hoppin' John is an amazing Southern American dish with an interesting history. I was raised believing eating black-eyed peas on New Year's Day was the only way to solidify a year's good luck.  As a kid, I could not end the day without at least a spoonful of black-eyed peas. My family is still very superstitious about this tradition, but no matter, I now enjoy black-eyed peas more than just the yearly spoonfuls.   Historically, Hoppin' John is a culmination of the many worlds that contributed to giving the “Old South” its culinary identity. Born in the rice-rich lands of the Carolinas, this dish incorporates rice, cowpeas, black-eyed peas, or other beans and is flavored with bacon or ham.  My preparation of Hoppin' John follows the traditional preparation as much as I could, except for the addition of the Harvesting Nature Water Fowl Blend.  The resulting meal was remarkably balanced and wholesome. I was very happy to share it with my family, who gave the meal two thumbs up as they solidified their good luck for the next year. There is nothing like cooking magical food that also pleases the diners. Good Luck and Enjoy! Read the written version of this recipe as prepared by Justin Townsend Leave a Review of the Podcast About Hoppin' John Hoppin' John seems to have originated in the Lowcountry regions of South Carolina's coastline, where the Gullah peoples began the tradition.  They likely used Carolina Gold rice and either Geechee red peas or Sea Island red peas to make the dish. Interest in some of these ingredients lately has been resurgent, with several people working hard to save them from extinction. I've had the chance to try them, and they are worth seeking out.  The inspiration for the dish probably came from similar African dishes like the Senegalese thiebou niebe or other similar pea and rice dishes in west Africa. Africans arriving on American soil would have used what was available to them to make dishes as they would have at home.  The earliest mention of Hoppin' John in literature comes from the book Recollections of a Southern Matron, published in 1838. The dish was likely eaten well before that, making this a VERY old food! Although it has been forgotten exactly how the name for the dish came to be, some historians posit that the name came from a bastardization of the Creole-french word for black-eyed peas - pois pigeon - which means pigeon peas.  About Adam Berkelmans: Adam Berkelmans, also known as The Intrepid Eater, is a passionate ambassador for real food and a proponent of nose-to-tail eating. Geechee is a published author, activist, organizer - has organized in the UK, the Baltimore and DC area and also organizes in Central America. Geechee is a member of a number of organizations like BPM. He provides research work and curriculums for a number of organizations. He is also a contributing writer for the Hood Communist - A collective of African revolutionary nationalists using journalism to advance the struggle for African liberation. Geechee gives insights into foundations and/or non-profit organizations and how their funders influence and, to a large extent, shape the objectives of those they fund. Foundations are a good way of tax sheltering. On the subject, Geechee says: We should be asking the question - How is wealth built? How is poverty built? In this episode we critically analyze "The Woman King" movie with my guests Lena Crawford (Texas US) and Geechee Yaw (Costa Rica). My guests talk about the context of the making of the movie, its historical context, and inaccurate depiction of African history. The scriptwriters are European. This is one of those situations where African history has to be told through the lens of Europeans instead of having Africans tell their own story. The movie paints an inaccurate picture of slavery in West Africa between the Oyo kingdom, Dahomey kingdom, and the Portuguese slave traders. The fact of aggression and violence of European slave traders is almost non-existent in the film. The film doesn't show Africa's prolonged resistance and fight against slave trade in that part of the continent. Neither does the film show the real prolonged problem of Africans – namely: capitalism and/or colonialism. Lena and Geechee also critically question the opening sexual assault scene and how it is intended to paint Africa at the time as struggling with rape (sexual assault). The Gullah (also known as Geechee or Gullah-Geechee) are descendants of enslaved West and Central Africans who were brought on slave ships to the coasts of North Carolina, South Carolina, Georgia and Florida. Their descendants retained many of their ancestors' African traditions reflected in their arts and culture, food, and religion. In 2006, Congress designated the Atlantic shores and sea islands from North Carolina to Florida, “The Gullah Geechee Cultural Heritage Corridor.” One of those designated places is off the Georgia Coast, called Sapelo Island. On Sapelo Island,  a small community of Gullah-Geechee people are struggling to preserve their culture, land, and future. They are descendants of enslaved West Africans, and their ancestors worked on plantations on the island until Emancipation, when they bought their own land. The Gullah-Geechee originally owned land all over Sapelo Island and had several communities, but according to descendants, in the 1930's, the North Carolina tobacco heir R.J. Reynolds, Jr. used coercive and exploitative tactics to move the Gullah-Geechee onto one part of the island called Hog Hammock (or called Hogg Hummock by descendants) — where they remain today. In the 1970s, Reynolds' widow sold most of the island to the State of Georgia, which owns 97 percent of the island. Descendants and others own the other 3 percent. This is one of the last intact Gullah-Geechee communities in Georgia, and the number of descendants on the island is declining every year. Descendants say their people are leaving the island because they are slowly being driven off by state and county entities that are denying descendants basic municipal services, and increasing property taxes. We spoke with Reginald Hall, CEO of Raccoon Hog Community Development Corporation and a descendant living on the island. Hall was not born on the island, but grew up visiting his grandmother. He was living in the Midwest in 2007 when his family called him back to his ancestral home to help his community and take an assessment of their survival. Back in 2015, Hall and 56 Sapelo Island property owners, filed a federal race discrimination lawsuit which claimed that McIntosh County, the state of Georgia, and the Sapelo Island Heritage Authority were “engaged in a policy designed to make plaintiffs' lives so uncomfortable that they abandon their homes and their land.” In a statement to the AP, the county's lead attorney in the lawsuit denied the county had discriminated against Hogg Hammock residents because they were Black. Sapelo Island is located about 7 miles from the mainland, and its remote location has helped descendants preserve their Gullah-Geechee culture, but also made it difficult to live full-time on the island. The only public access to and from the island is a state-run ferry, which only runs three times a day. It makes it hard for descendants to hold jobs off the island, and many end up working for the state institutions on the island. And the docks to-and-from the ferry, and the ferry itself, are not wheelchair accessible, meaning many of their elders cannot come to the island. There's also no school on the island, no medical services, no fire department, no trash collection. And on top of that, descendants' lands are being threatened by developers and the resulting high property taxes. In 2020, the state settled its portion of the lawsuit that descendants had filed in 2015. The state agreed to fix the aging ferry dock, and make the ferry and the docks ADA-compliant. The settlement is estimated to cost 19 million dollars in infrastructure rebuild, along with a $750-thousand-dollar payout to descendants.  And earlier this month, descendants settled the federal lawsuit against McIntosh County. The county agreed to station an emergency medical vehicle and emergency medical equipment on the island. The county will maintain and install a helipad for emergencies and evacuations, and provide a functional fire truck and firefighting training to residents who wish to receive it. And the county will maintain the roads, and reduce the trash collection fee that Island residents pay. Descendants also received $2 million in damages and attorneys' fees, and a three-year freeze on property taxes.  The settlement agreement says the settlement is not “an admission or acknowledgment of liability by Defendant McIntosh County.” We also reached out to the county and the state for a comment but did not get a response. Receiving these settlements, and the updates to the island that will come with them, is just one step in Hall's, and his family's, plans for recovery.  Their main goal is to bring their family members and other descendants home – but also to create jobs for them to come back to. In the future some descendants are hoping to work with the state and county to create a historical district on Sapelo Island. With this historic district designation, Hall and his family hope to build a tourism industry on the island run by descendants.

The Gullah (also known as Geechee or Gullah-Geechee) are descendants of enslaved West and Central Africans who were brought on slave ships to the coasts of North Carolina, South Carolina, Georgia and Florida. Their descendants retained many of their ancestors' African traditions reflected in their arts and culture, food, and religion. In 2006, Congress designated the Atlantic shores and sea islands from North Carolina to Florida, “The Gullah Geechee Cultural Heritage Corridor.” One of those designated places is off the Georgia Coast, called Sapelo Island. On Sapelo Island,  a small community of Gullah-Geechee people are struggling to preserve their culture, land, and future.
