Jen HuttonPrep time: 10 minutesCooking time: 25 minutesServes: 62 bunches of coriander, roots trimmed (leave a few leaves for the garnish).Zest and juice of one lemon2 garlic cloves80ml olive oil1 onion, chopped2 teaspoons ginger, grated1 tablespoon Thai red curry paste1 kg pumpkin, peeled and cut into small cubes2 cups vegetable stock400ml can light coconut milk1 red onion and 1 red chilli, both thinly sliced to garnishSalt and pepperTo make the pesto, process the coriander, lemon zest, lemon juice and garlic in a food processor. Slowly add the olive oil whilst processing to give a sauce like consistency. You can add a little warm water if necessary, then season to taste.Heat remaining oil in a large pan over a medium heat. Add onion and stir for 1 minute. Next add the ginger and curry paste also stirring for 1 minute. Add pumpkin and stock, bring to the boil then simmer over low heat for 15 minutes until the pumpkin is tender. Cool slightly, blend until smooth.Add coconut milk to the blended soup, season to taste then warm through.Serve soup with a spoonful of pesto and garnish with the onion, chilli and remaining coriander leaves.(Adapted from Delicious).
