Victor Zeitoune is a New York City based distance runner. He has run countless marathons, including Disney, Boston and NYC. He also completed the Speed Project, an unsanctioned race from LA to Vegas, not once, but twice. In 2024, he and his teammates relay ran the distance in memory of their late friend, Sam Norton. In 2025, Victor decided to tackle the 300+ miles solo. In the episode, Victor shares about these race experiences as well as the group he runs with every Thursday morning, the Almost Friday Run Club. We're excited to bring you an episode with a genuine ‘lift-where-you-stand story' of a family in the UK. Sam and Jen Norton have served young people in the church for more than twenty years and most recently as FSY Session Directors in London. FSY stands for “For the Strength of Youth”, and refers to the week-long summer events held for youth around the world.As FSY leaders, Jen and Sam began facing difficult questions about how to include and support youth with a range of perspectives and lifestyles. They wanted to affirm the wisdom of the standards set by the Church for youth; they also noticed that many youth were driven away the fear of exclusion they would experience if they fell short. As a result, many youth would drop out of Church activity before giving a chance to learn what it's really about.Through prayer, open conversations, deep listening, and creativity, Jen and Sam were taken on a truly transformative journey; they found their way to loving the younger generation more than they thought possible, and learning how to really champion them and their unique spiritual gifts. In short, they believe in believing in the next generation and giving them a more gentle on-ramp to following Jesus and reminds them that perhaps the most important word in the sacrament prayer and baptismal covenant is ‘willing'. Their story will be valuable to anyone working with youth, or who is interested in blending top-down and bottom-up approaches to Church callings.If you want more of what you hear in this conversation, Sam wrote a book about it called Come as You Are: Creating Space for the Rising Generation to come to Jesus Christ. The book aims to be an accessible guide to parents, leaders and teachers and invites us all to rethink about how we support our young people's faith discovery.

What if two of the 21st century's largest problems: rising seawater levels and excess carbon dioxide, could be leveraged into next generation sustainable agriculture? That was the daunting research question that Sam Norton posed when he was in graduate school, and what eventually grew into Heron Farms in Charleston, SC. Heron Farms' most recognizable product is the Charleston Sea Bean, produced in the hydroponic farm right off Meeting Street Road without any natural sunlight or freshwater. Chefs and home cooks -- including me -- have taken to it as a salt alternative, especially as a finishing salt type garnish, but it's by no means the only thing happening at this cutting edge company. From intense data collection and analysis methods to experiments that can help astronauts on space stations eat better, the humble, deliciously edible sea bean collecting seawater in its cells with every tide is just the beginning.

Billed as the world's first vertical indoor saltwater farm, the company grows sea beans, a healthy, plant-based salt alternative. Norton shares his fascinating journey from plucking sea beans in Lowcountry marshes as a child to studying them for a graduate research project to growing them year-round in an indoor facility. The plants, which Norton says “taste like the ocean,” have become popular with some of Charleston's award-winning chefs, who use them as a salt substitute in their dishes.

Heron Farms is growing sea beans in their vertical farm and restoring marshland from their home base in Charleston, South Carolina. In this episode, I speak with Sam Norton, the founder of Heron Farms. Inspired by the marsh he grew up playing in, he started the first saltwater vertical farm in the US. Heron Farms grows a type of Salicornia, also known as a sea bean. This plant provides high levels of nutrients like vitamin A, vitamin C, and, not surprisingly, sodium chloride. Chefs sometimes use it as a replacement for salt on fish dishes, like Crudo or ceviche. Beyond the farm, they're also using Salicornia to remediate salt marshes. We talk about the ecological benefits of Salicornia and how marshland restoration can help turn seawater into a resource instead of a concern for people living in coastal areas. We also dive into the challenges of starting a vertical farm. And how important it is to balance the negative aspects of controlled environment agriculture, like expensive lighting and plastic, with activities that support the ecosystem.

There isn't necessarily a right way to do it. I would say that if you are trying to figure out what to do as a start up and where to start the most important thing to do is start. If you can get 80% of the way there then often times that remaining 20%, lets say that remaining 20% is the gap between where your at and a perfect answer, a perfect product, a perfect sales pitch. This episode is about the worlds first indoor aquaculture farm. "Heron Farms started as a research question asked by graduate student and founder Sam Norton at the College of Charleston: what if we used the problem of sea level rise as the main resource for a new kind of agriculture? In June 2018 the concept won first place at the South Carolina Department of Agriculture's inaugural ACRE Start-up Competition." And so it began...Not only has Sam created a succesfull indoor farming system, he has also created opportunity to expand and potentially franchise his model. His systems have been designed utilizing shipping containers and are becoming increasingly streamlined and easy to operate. Food AND habitat restoration could be popping up in a coastal city near you.Sam has also worked with local Charleston chefs and brewers to produce some innovative dishes including a Coastal Harvest Gose with Low Tide Brewing.
