Apprécié pour son goût, mais aussi pour ses vertus, notamment sa richesse en polyphénols, de puissants antioxydants, il connaît un succès sans précédent. Sur tous les continents, la demande explose. Une popularité qui commence pourtant à avoir des conséquences inattendues dans l'archipel, où producteurs comme consommateurs font face à des difficultés. De notre correspondant à Tokyo, Hanako, 24 ans, vient de faire une heure de queue pour bénéficier d'une dégustation gratuite de thé matcha : « Le matcha latté, il n'y a rien de mieux. L'amertume du matcha qui se marie à la douceur du lait, c'est le bonheur. Je suis complètement accro. » Cette exploitante d'une maison de thé constate chaque jour l'incroyable popularité du matcha : « On n'avait jamais vu cela. Des touristes du monde entier se pressent ici. Tous les jours, on a des clients américains, français, allemands, singapouriens, coréens ou taïwanais. Cela me fait plaisir qu'ils apprécient autant notre thé. » L'an dernier, le Japon a exporté près de 13 000 tonnes de thé vert, soit trois fois plus qu'il y a cinq ans. Mais la demande mondiale est telle que les producteurs peinent à faire face. Car, dans l'archipel, l'agriculture est en crise. Elle n'emploie plus qu'un million de personnes – contre deux millions il y a vingt-cinq ans – et ces professionnels vieillissent : leur moyenne d'âge est désormais de 69 ans. C'est pareil pour la théiculture. Il y a quinze ans, le pays comptait 46 000 plantations de thé, mais on n'en dénombre plus que 20 000 aujourd'hui. L'an dernier, le Japon n'a donc récolté que 74 000 tonnes de feuilles de thé, soit 10% de moins qu'en 2015. Ce petit producteur envisage l'avenir avec une certaine inquiétude : « Ce succès mondial du matcha nous enchante, bien sûr, d'autant qu'il ne semble pas éphémère mais être une tendance lourde. Après, nos agriculteurs sont si peu nombreux et si âgés que cela devient vraiment compliqué à gérer. Notre profession ne s'en sortira qu'en innovant. Par exemple, il faudrait développer des variétés de thé vert qui peuvent être récoltées sur une plus longue période, ce qui permettrait des rythmes de travail soutenables. » Une production en baisse et des prix en hausse Le matcha est issu d'une variété particulière de thé vert, le tencha, qui, en raison de son succès, se vend six fois plus cher que les autres types de thé. Dès lors, attirés par la perspective de revenus plus élevés, de nombreux agriculteurs, qui avaient toujours cultivé des variétés comme le sencha, se sont reconvertis dans le tencha. Et la production de sencha s'est effondrée. Ce dont témoigne ce négociant : « Les producteurs de sencha ou de variétés qu'on utilise pour les thés vendus en bouteille n'étant plus assez nombreux, ils n'arrivent pas à honorer la demande. Donc, ces thés coûtent de plus en plus cher. » En effet, depuis l'automne dernier, le prix des thés verts en bouteille a augmenté de 20%. « Ce sont les consommateurs japonais qui font les frais de l'engouement mondial pour le matcha », dénoncent en boucle les réseaux sociaux.
