Dry January is upon us and showing no signs of leaving the calendar anytime soon. So what is a small brewery to do? There are options when it comes to making or serving low or no-alcohol options. We're back from a short break- and we got a couple of new beers to fight over! These are from Olympia, and we have some words to say about them!
Halfway Crooks (https://halfwaycrooks.beer) cofounders Joran Ginderachter and Shawn Bainbridge may love the wide world of craft beer, but with their Atlanta, Georgia brewery the goal was to create a space and beers that would let drinkers find a beer they like, and drink the same beer all night. If you arrive with the goal of maximizing check-ins to the widest number of beers, you'll quickly find you're in the wrong place. The same design principles inform the space and the beer itself—equal parts recontextualized nostalgia, funky creativity, wry humor, and dry deadpan delivery. The bathrooms feature illustrations of chickens from the late 1800's, floral patterned wallpaper, and a separate soundtrack from the main taproom (Bladerunner and Twin Peaks soundtracks). A video screen at the door plays low-fi digital animations. They embrace our digital present with a bit of warm vacuum tube analog glow. And the same can be said of the beers—they're fresh and current, but with tweaks of nostalgia and fuzz. The brewery may be best known for their lagers, which center around separate hop varieties. “You go to a taproom sometimes and see seven different IPAs,” said Bainbridge. “You come to this taproom and you see seven German pilsners.” They source hops from some of the most sought-after farms in Germany, and build beers around them, yet there's also an American mentality—boosting aroma through later additions and whirlpooling, using modern enzymes to ensure fermentation proceeds on schedule. They use a brewhouse not optimized for lagers, but have figured out how to get the most from it. There's no decoction and just single infusion mashes, but the beers are tight and structured. This week brewer Alex turns Adam, Dan and Mark onto a soon to be released taproom exclusive Northern German Pils. The Pilsner may have received its name from the Czech city of Pilsen but Northern Germany's adaptation of the style in the 1870's turned out considerably different beer due to a higher mineral content water and domestic German hops. Lighter in body and color than Czech pilsners, and much drier and crisper, the lingering bitterness keeps the crushability high as we keep going back for another sip.

Graining In is fresh off the heels of its most successful Week One episode to date, with Scott Janish! The Matty and Noah revel in the success, try to find valuable lessons from the recent the podcast's growth in listenership; instead, their predictably petty takeaways are merely fixations on self esteem issues and disbelief in the fact that Scott, a man who has dedicated his brewing career to pushing the scientific understanding of IPAs, isn't in love with lagers. Thankfully, the latter point proves to be a good topic of discussion and the guys don't quite board the technical train, but at least take a ride on the Brewing Science & Psychology Shuttle Bus. Noah and Matt discuss how lagers grew to become the definitive "brewer's beer", the importance of place in beer enjoyment, each share their favorite lager, and Noah rambles phonetic on his philosophy with lager yeast selection, why he never homebrewed lagers, the importance of decoction and alternative mash schedules, talks temperature, and gushes about spunding valves. The response to a very technical conversation with Scott was nothing short of eye opening, so hopefully this will be the first of many episodes that live more in that practical arena, while still appealing to brewers, drinkers, and just people in general on a more consistent basis. Another new style and yeast trial combo episode. A German Pils fermented at an Ale temperature with the L05 Cablecar yeast strain from Imperial Yeast. This is, to take the phrase for Imperial Yeast's website, a pseudo-style. I'm trying to read the style characteristics of style 5D German Pils, from the Category 5 Pale Bitten European Beer in the BJCP style guide. Now whether or not this strain of yeast can do that at ale temperatures remains to be seen. Whatever happens, it should be interesting. And there will be beer in the end, so that's always a win. My review does get cut a little short when Annie the Brew Mutt get's seriously unhappy with something in the back yard. Cider won big at the 23rd Annual Home-brew Competition held in Boston and put on by the Wort Processors - a home-brew club. Tom Bell’s New World Cider won both Best in Show for cider and placed 3rd in the Best Overall in Show. This means that Tom’s winning cider was placed in the final competition for Best Overall with 37 winning beers.
