I'm not exactly sure how this mix started. It reminded me of similar tracks from the heyday of glitch and idm that also had a jazz feel to them. Sort of Jazz-ish. Gus observes that acidity and minerality are such vague terms and concepts that people in the wine industry discuss. When people say minerality, they may be referring to many different things. Mouthfeel adds several other dimensions to taste, which makes wine tasting even more interesting. When blind tasting, many people depend on smell but he encourages them to pay attention to the textual, tactile sensations from the wine as well. People usually look at the color first because it's straightforward, even though we could see colours a bit differently from each other. Even though we want to be objective, we cannot. We could be even more biased when we see things first. For example, there are already studies showing that if you color white wine as a red wine colour, and ask people to smell it, they came up with all these descriptors that are related to red wines. About Gus Zhu Gus Zhu is the first Chinese national to become a Master of Wine. He works as a research and development scientist at Harv 81 Group, specializing in chemical analysis and sensory studies of aroma compounds in wine, cork, and oak. Gus holds a Master of Science degree in Viticulture and Enology from UC Davis, which he earned in 2017, and achieved his MW qualification in 2019. In addition to his research in flavor chemistry and sensory science, Gus is a professional wine educator, offering tutorials to wine enthusiasts around the world. Fuchsia Dunlop is a cook and food writer specialising in Chinese cuisine. She was the first Westerner to train as a chef at the Sichuan Institute of Higher Cuisine, and has spent much of the last two decades exploring China and its food. In her latest book, Invitation to a Banquet, Fuchsia explores the history, philosophy and techniques of China's rich and ancient culinary culture. Each chapter examines a classic dish, from mapo tofu to Dongpo pork, knife-scraped noodles to braised pomelo pith, to reveal a singular aspect of Chinese gastronomy, whether it's the importance of the soybean, the lure of exotic ingredients or the history of Buddhist vegetarian cuisine. In this podcast episode, Fuchsia joins host Ben to dive deep into the history, culture and techniques behind Chinese cuisine. From the ancient origins of steaming to the finer points of knife skills and texture, Fuchsia provides fascinating insights into what makes Chinese food so unique. We talk about our origin food dishes: “there's one dish that is very dear to me that sort of expresses partly why I fell in love with Sichuanese food. And that's fish fragrant aubergine or eggplant. I think when I went to live in Sichuan in 1994, what was so impressive was that the local food was unlike anything I'd had in England. It was all very fresh and healthy and all these seasonal vegetables and amazing flavors. That's the thing about Sichuanese cuisine that it's all about the art of mixing flavors. So this particular dish for me just represents the sort of-- I mean, it's made with pickled red chilies, ginger, garlic, spring onion, and a bit of sweet and sour. Then you have the sumptuous kind of golden butter-ness of the aubergines. So it's a really homely dish with cheap ingredients and it's sensational. Sichuan everyone thinks [numbing and hot], lots of chilli and Sichuan pepper. But actually, it has this kind of melodious heat with a hint of sweetness and it's just conjuring up this complex flavor from a few limited palette of seasonings. I think that's one of the things that I fell in love with Sichuanese food” Fuchsia debunks common myths and misperceptions about Chinese food in the West, from the idea that it's unhealthy to the notion that exotic ingredients are eaten only out of poverty. She traces how historical circumstances led Chinese cuisine to be seen as cheap and lowbrow in the West compared to French or Japanese food. Delving into the cultural exchange around food, Fuchsia offers a nuanced take on debates over cultural appropriation and argues that an openness to different cultures can be "life enhancing." She shares colorful anecdotes from her research and travel in China that bring dishes like Pomelo Pith and Shanghainese "Western food" to life. Eyes In The Sky: The Science Behind Modern Balloons This month, the news cycle has been dominated by updates about suspicious objects being detected in the stratosphere. This bonanza started with a balloon from China, and escalated as four more objects—not all confirmed as balloons—have been shot down from the sky. Although this might sound like a new problem, there are probably thousands of balloons floating above us—some for spying, others for exploring near space, or studying weather patterns. Dr. David Stupples, professor of electronic and radio engineering and director of electronic warfare research at City University of London, joins Ira to talk about the science behind modern balloons: how they work, what they do, and just how common they are. Low Income Patients Hit Hardest By Cancer Treatment Costs Being told you have cancer is not only terrifying, it's expensive. In the year following a diagnosis, the average cost of cancer treatment is about $42,000, according to the National Cancer Institute. Some of the newer cutting-edge treatments may cost $1 million or more. While insurance may cover some or all of that cost, many people are uninsured or under-insured. And the bills add up. A quarter of patients with medical debt have declared bankruptcy or lost their home, according to an analysis conducted by KHN and NPR. While there's been remarkable progress in treating cancers in the past several decades, less attention has been paid to just how astronomical the price tags can be. Researchers at Augusta University wanted to track the results of the financial burden after patients' treatment was complete. They found that poorer patients were hit harder financially—which not only resulted in more bills, but also worse health outcomes. Ira talks with Dr. Jorge Cortes, co-author of this study and director of the Georgia Cancer Center at Augusta University, about the importance of making cost part of the discussion in developing new cancer therapies. The Unseen World Of Seaweeds Chances are you don't give much thought to seaweed unless you're at the beach, or perhaps when you're considering a dinner menu. But the thousands of seaweed species around the world are a key part of our coastal ecosystems. Seaweeds photosynthesize, provide food and shelter for marine animals, stabilize the coastlines, and even contribute to making your ice cream creamier (through an ingredient called carrageenans, extracted from red seaweeds in the Rhodophyceae family). Increasingly, they're also being investigated as a source of biofuels and as biological factories, due to their fast-growing nature. Dr. John Bothwell, a phycologist at Durham University in the UK, has written a book in praise of seaweeds. In Seaweeds of the World: A Guide To Every Order, he highlights beautiful, unusual, and important species from each of the three seaweed lineages—green, red, and brown. In this segment, he talks with SciFri's Charles Bergquist about some of his favorite species, where the seaweeds fit into the web of life, and the importance of seaweeds to the global ecosystem. Why It Feels So Good To Eat Chocolate When you eat a piece of good chocolate, chances are you don't just bite down and chew away. There's a good chance you hold the chocolate in your mouth for a moment, feeling the silkiness as it softens, melting into a molten mass and mixing with your saliva. That gradual phase change process—as fats in the chocolate melt from solid to liquid—is a big part of the chocolate mouthfeel experience. Researchers at Leeds University in the UK have constructed an artificial tongue that doesn't focus on the taste of a food, but rather its texture, and how that texture changes over time. Using the artificial tongue, they explored the textures of materials that can change phase in the mouth, such as chocolate, butter, and ice cream. They reported their findings recently in the journal ACS Applied Materials & Interfaces. The researchers found that in dark chocolate, the sensation in the mouth is governed largely by the fat content, as the surface of the chocolate begins to soften. A few moments later, as the chocolate melts completely and mixes with saliva, the fat content of the treat is less important to the mouthfeel experience. Dr. Anwesha Sarkar, an author of the report, joins Ira to talk about the research, the challenge of designing a lower-fat chocolate that might exploit these findings, and the importance of learning about textures to determine why people like—and don't like—certain foods. This mix started with one album - Goats & Distortions 5 by Dictaphone. It's one of my 2021 favorites. I began a new mix project with one song from that album as the starter, not knowing where it would go but the vibe was off-kilter. Then I heard a new album on Lost Tribe Sound, Departures by mastroKristo, and I knew where the mix would go. This mix features a lot of wind instruments, although I'm not sure exactly what any of them are - clarinet, sax, soprano sax, oboe? A lot of the tracks are a bit askew, this is not smooth jazz. The music is atmospheric, moody, odd but the tracks all work perfectly together. All the music is from 2021 and a few tracks are from some of my favorite albums of the year. I've already mentioned Dictaphone - Goats & Distortions 5. Another fav is Pino Palladino & Blake Mills - Notes with Attachments. And then there are two albums from Lost Tribe Sound that haven't been released yet but they will both be on my year-end favorites list. They are mastroKristo - Departures and Alapastel - Ceremony. They are both part of Lost Tribe Sound's Salt & Gravity series, which is fantastic.
