I Costardi Bros, due chef che hanno un ristorante a Vercelli ma anche il Caffè San Carlo a Torino, sono sempre stati fan del gelato soft: «Il ragionamento con i ragazzi di Aria Gelateria è stato quello di provare a fare un gelato soft con base di fiordilatte e su quella base aggiungere ingredienti che vanno poi ad arricchire la parte gustativa». Avremo il topping by Costardi Bros ricordando il loro risotto “taglio sartoriale” ma anche il topping by Aria Gelateria, con una cascata di pop corn caramellati. Christian inoltre ci ha detto: «Il gelato soft è sicuramente più leggero di un normale gelato. Vogliamo un gelato il più naturale possibile quindi con latte, panna e con poco zucchero ma senza che sia stucchevole».
